OPEN-FACED TUNA TEA SANDWICHES WITH WHITE BEAN SPREAD

- For the white bean spread: Combine the cannellini beans, mascarpone, salt and lemon zest in a food processor. Process for 30 seconds, until a paste forms. With the machine running, add the olive oil and lemon juice; continue processing until smooth, another 30 seconds. Transfer the spread to a bowl and set aside while you make the tuna salad.
- For the tuna salad: In a medium bowl, stir together the tuna, celery, fennel, fennel fronds, sun-dried tomatoes, capers, parsley, olive oil, lemon juice, salt and pepper.
- To assemble: Spread each English muffin half with 2 tablespoons of the white bean spread. Add 5 or 6 arugula leaves and top with 2 tablespoons of the tuna salad. Finish with a drizzle of olive oil. Serve.

- In a medium sized bowl, combine tuna, cream cheese, lemon, onion, horseradish and salt. Cover and chill for several hours or until firm enough to shape. Meanwhile, mix the pecans and parsley in a small bowl and set aside. Spoon the cream cheese mixture onto a sheet of wax paper and shape into a 16- by 1 1/2-inch log. Sprinkle the pecan mixture over the log, rolling it until completely coated. Wrap the tuna log tightly in plastic wrap; chill. Will keep refrigerated for up to 48 hours. EZ BUT FANCY TUNA MOLD SPREAD APPETIZER
A tasty tuna spread made in a jello mold and perfect as a party appetizer. When I really want to dress it up, I chill spread in a fish mold then unmold and decorate with an olive slice for his eye, thinly-sliced radishes for the gills, and a cute green pepper smile! (I prefer using white albacore tuna in water, but any kind of drained canned tuna will do.)

- In saucepan, bring soup to boil and add cubed cream cheese.
- Remove from heat and stir until smooth,.
- Dilute gelatin with water. Stir into soup mixture.
- Stir in remaining ingrediemts and pour into mold that has been sprayed with Pam.
- Chill until set, about 3 hours.
- Invert mold on serving platter. (If it does not come out right away, run knife around edge of mold to help loosen, or run warm water around bottom of mold a few seconds).
- Serve with crackers and enjoy. (Leftovers keep for quite awhile if refrigerated.).

- Prepare marinade: Whisk orange juice, lime juice, lemon juice, red onion, habanero pepper, vinegar, garlic, and oregano together in a bowl large enough to hold the tuna steaks.
- Prepare salsa: Combine mango, red onion, cilantro, salt, and pepper in a separate bowl. Set aside.
- Prepare tuna: Sprinkle tuna with salt and pepper. Place in the bowl with the marinade and turn to coat. Marinate for about 30 minutes.
- While tuna is marinating, crush potato chips as fine as possible in a blender. Transfer to a bowl.
- Remove tuna from the marinade and press into the crushed chips until both sides are well coated.
- Heat heavy-bottomed nonstick skillet over medium-high heat. Add butter and heat until butter melts and foam subsides. Add tuna and sear for 2 to 3 minutes on each side. Remove from the skillet.
- To serve, top tuna with chile sauce and serve with jasmine rice and mango salsa.
