- Cook pasta according to package directions. Meanwhile, in a large bowl, beat the egg, salt, garlic and pepper. Add beef and mix well. Sprinkle with Parmesan cheese and bread crumbs; mix gently. , Crumble beef mixture into a large skillet. Cook over medium-high heat until meat is no longer pink; drain. Stir in the spaghetti sauce. Reduce heat; cover and simmer for 2-4 minutes or until heated through. , Drain pasta; place in a serving bowl. Add beef mixture; sprinkle with 1/2 cup mozzarella cheese. Toss until pasta is well coated and cheese is melted. Sprinkle with remaining mozzarella.

It's not pretty but, it's a tasty, busy-night, kid-friendly meal. It's not 'gourmet,' but it's hot filling and easy. The prep time is generally limited to how fast your can opener works and how hard it is to unwrap your meat. The big bonus is that it's a complete one-pot meal with no chopping, unless you want to.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
- Stir pasta and cheese mixture from the macaroni and cheese package into the beef. Add tomatoes, milk, peas, and corn to the beef mixture; stir. Bring the mixture to a boil, reduce heat to medium-low, place a cover on the skillet and cook at a simmer until the noodles are tender, about 12 minutes.
- Season the dish with seasoned salt. Stir about half of the Cheddar cheese into dish to melt. Top with remaining cheese.

GRANDMA FLO'S SHIPWRECK
You can't go wrong with meat and potatoes, and this recipe combines them in one dish. The recipe was given to my husband by a friend at work who brought it for lunch often. I usually double it for my family; my husband works in a giant tire factory, and has an appetite to match. The smell makes it hard to wait for it to finish baking.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish.
- Arrange potatoes in the bottom of the casserole dish. Crumble ground beef over potatoes, and sprinkle with 1/2 teaspoon salt and ground black pepper. Spread onions over meat, and then beans. Pour undiluted soup over everything. Sprinkle with remaining 1/2 teaspoon salt. Cover.
- Bake for 30 minutes. Remove cover, and continue baking for 1 hour.

PEANUT BUTTER-BANANA-CHOCOLATE TRAIN WRECK
All my favorites "wrecked" into one yummy dessert! Created for RSC #12! Prepare in individual parfait glasses or glass bowls to show off the layers! Preparation time does not include baking the chocolate cake. (I made mine the day before.) Cooking time is refrigeration time. ** Please note that the directions for this recipe will vary by size of glass or bowl. So, as you're layering this yummy dessert, just have fun with it!!!

- Cut cake into 1 - 1 1/2" squares. Set aside.
- Beat the sugar, cream cheese, and peanut butter together in medium bowl until creamy and smooth.
- Fold in 6 oz of Cool Whip. (Reserve last 2 oz to use as topping.).
- Slice 2 of the bananas in approximately 1/4 inch slices. (Reserve third banana.).
- Please note: Amounts of each ingredient will depend on the type of glass or bowl you choose. I used a parfait glass that was about 3 1/2 inches in diameter (top) and about 4 inches high.
- To assemble your train wrecks, press each layer in firmly to compact.
- Press 3-4 pieces of cake in bottom of parfait glass.
- Top with 3-4 slices of banana.
- Squirt enough chocolate sauce to cover the bananas.
- Add 1/4 c of the peanut butter mixture.
- Repeat layers until the parfait glass is almost full. (I repeated my layers three complete times, so that the peanut butter mixture was on top.).
- Repeat, filling other parfait glasses.
- Cover with plastic wrap and refrigerate for 2 - 3 hours.
- Right before serving, slice reserved banana into approximately 1/4 inch slices.
- Remove train wrecks from fridge and top with a plop of the reserved whipped topping, 2-3 slices of banana and a chunk of chocolate cake.
- For the risk-takers in your life: Top with additional chocolate syrup!

- In a skillet, cook bacon until crisp. Remove to paper towels to drain; crumble and set aside. Drain drippings from skillet. Brown the beef; drain. Add onion and cook until tender, about 5 minutes. Combine ketchup and brown sugar; stir into beef mixture. Stir in pork and beans and all but 2 tablespoons of the bacon. Transfer to an 8-in. square baking dish. Top with the remaining bacon. Bake, uncovered, at 350° for 1 hour.

- The day before you plan to serve it saute onion and beef in oil in a large skillet until brown. Add all the other ingredients, except spaghetti and cheese and simmer covered, stirring occasionally for one hour. Cook spaghetti and drain. Add spaghetti to sauce with 1/2 cup of cheese. Put mixture in a 3 quart casserole and refrigerate. ON the day you plan to serve tha casserole, sprinkle the remaining cheese over the casserole. Bake covered in oven at 325 degrees for 45 minutes. The uncover and bake for another 30 minutes.
