CRISPY TURKEY BITES

1/2 cup cranberry sauce
1/4 cup mayonnaise
1/2 teaspoon grated orange zest
Vegetable oil, for frying
1 1/2 cups leftover stuffing
1 cup finely diced cooked turkey
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon chopped rosemary
3 eggs
1/2 cup flour
1 cup panko breadcrumbs
4 ounces smoked mozzarella, diced into 16 (1/2-inch) pieces
Kosher salt

Steps:

  • For the dipping sauce: Puree the cranberry sauce, mayonnaise and orange zest in the bowl of a food processor until evenly combined. Refrigerate until ready to use.
  • For the bites: Heat 3 inches of vegetable oil in a medium saucepan over medium heat to 350 degrees F on a deep-fry thermometer. Put the stuffing, turkey, Parmesan, rosemary and 1 egg in a medium bowl and mix well until the mixture is evenly moistened. Place the flour, remaining 2 eggs and the panko in 3 separate shallow bowls. Beat the eggs to break apart until 1 cohesive color.
  • Shape 1 tablespoon of the turkey mixture into a ball. Press a piece of smoked mozzarella into the middle of the ball and reshape the mixture around the cheese. Bread the ball by rolling it first in the flour to coat, then the egg and lastly the panko. Repeat with the remaining turkey mixture and breading ingredients. Fry 4 to 5 or the balls at a time until deep golden brown and hot all the way through, 2 to 3 minutes. Remove to a paper-towel lined plate and sprinkle with a pinch of salt. Serve hot alongside the dipping sauce.

1 pound sirloin steak (without much gristle) or pre-cut beef tips
Kosher salt and fresh ground black pepper
Kosher salt and fresh ground black pepper

Steps:

  • Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
  • Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
  • Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
  • Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
  • Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

2 cups chopped onions
1 cup strong black coffee
1 cup ketchup
1 cup Worcestershire sauce
½ cup brown sugar
½ cup apple cider vinegar
¼ cup hot chili peppers, minced
3 tablespoons chili powder
6 cloves garlic, minced
2 teaspoons salt

Steps:

  • Mix together the onions, coffee, ketchup, Worcestershire sauce, brown sugar, cider vinegar, hot chilies, chili powder, garlic, and salt in a saucepan until the brown sugar has dissolved. Place over medium heat, bring to a boil, reduce heat, and simmer for 30 minutes.
  • Pour the sauce into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the sauce moving before leaving it on to puree. Puree in batches until smooth. Store in glass container in refrigerator.

1 sheets 2 Tbsp TJ's Golden Roasted Flaxseed 1 cup (about 14) TJ's Fancy Medjool Dates, pitted 1/3 cup TJ's Cashew Butter 1/2 cup TJ's Rolled Oats 1 container TJ's Dark Chocolate Cacao Nibs or 1/3 cup TJ's Semi-sweet Chocolate Chips (optional)

Steps:

  • Combine almonds, flaxseed and pitted dates in a food processor or blender and pulse until ingredients are crumbled in an even consistency. Spoon mixture into a medium sized bowl. Add cashew butter, rolled oats and cacao (or chocolate) then stir until combined. Refrigerate mixture in bowl for 15 minutes to set. Remove from refrigerator, then form mixture into 1 1/2 inch balls. Makes about 12 balls. Enjoy right away and store remaining bites in a resealable bag in the freezer.
