Sponge cake image

Choose your favourite filling for this easy sponge cake - we've opted for lemon curd and whipped cream, but you could have jam. Perfect for afternoon tea.

Categories     Dessert

Time 45m

Number Of Ingredients 9

225g softened butter
225g golden caster sugar
4 large eggs
½ lemon, zested
1 tsp vanilla extract
225g self-raising flour
splash of milk
Optional fillings of lemon curd, jam, lightly whipped cream
icing sugar for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4, butter and line the base of two 20cm spring-form cake tins with baking parchment.
  • Using an electric whisk beat the butter and sugar together until pale and fluffy. Crack the eggs in one at a time and whisk well, scraping down the sides of the bowl after each addition. Add the lemon zest, vanilla, flour, milk and a pinch of salt. Whisk until just combined then divide the mixture between the two tins.
  • Bake in the centre of the oven for 25-30 mins until a skewer inserted into the middle of each cake comes out clean. After 10 mins remove the cakes from their tins and leave to cool completely on a wire rack. Fill how you like. My personal favourite is a good dollop of lemon curd and some fresh cream, then dust the top with icing sugar. Will keep for 3 days.

4-INGREDIENT SPONGE CAKE (VIDEO RECIPE)

4-Ingredient Sponge Cake (Video Recipe) image

Once you master this easy European sponge cake (genoise), you can make hundreds of different cakes using this base!

Provided by Natasha Kravchuk

Categories     Easy

Time 35m

Number Of Ingredients 4

6 large eggs (room temperature)
1 cup granulated sugar (210 grams)
1 cup all-purpose flour (130 grams)
1/2 tsp baking powder

Steps:

  • Preheat Oven to 350˚F. Line bottoms of two 9″ cake pans with parchment paper (do not grease the sides).
  • In the bowl of an electric stand mixer fitted with whisk attachment (this is the one I have), beat 6 large eggs for 1 minute on high speed. With the mixer on, gradually add 1 cup sugar and continue beating 8-10 minutes until thick and fluffy.
  • Whisk together 1 cup flour and 1/2 tsp baking powder then sift this mixture into fluffy egg mixture one third at a time. Fold with a spatula with each addition just until incorporated. Scrape spatula from the bottom to catch any pockets of flour and stop mixing when no streaks of flour remain. Do not over-mix or you will deflate the batter.
  • Divide evenly between prepared cake pans (it helps if you have a kitchen scale to weight the pans). Bake at 350˚F for 23-28 minutes (my oven took 25 min), or until top is golden brown. Remove from pan by sliding a thin spatula (here's the one I love for cakes) around the edges then transfer to a wire rack and remove parchment backing. Cool cakes to room temperature then slice layers equally in half with a serrated knife.

SCHOOL-DAYS SPRINKLE SPONGE

School-days sprinkle sponge image

Fancy a trip down memory lane? This classic school-days sprinkle sponge will do the trick. Serve as an afternoon treat, or for dessert with warm custard

Provided by Cassie Best

Categories     Afternoon tea, Dessert

Time 1h

Yield Serves 12-15

Number Of Ingredients 9

200g butter, softened, plus extra for the tin
200g caster sugar
4 large eggs
200g self-raising flour
50ml milk
2 tsp vanilla extract
200g icing sugar
coloured sprinkles
hot custard, to serve (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 20 x 30cm cake tin and line with baking parchment. Put the butter and sugar in a large bowl and beat with an electric whisk for a few minutes until pale and fluffy. Add the eggs, flour, milk and vanilla and beat again until you have a smooth batter.
  • Scrape the batter into the prepared tin, spread right to the corners and smooth the surface. Bake for 40-45 mins or until a skewer inserted into the centre comes out clean, checking at 5 min intervals if it isn't ready after 45 mins. Leave the sponge to cool on a wire rack.
  • Mix the icing sugar with enough water to make a thick icing. Spread the icing over the cooled cake, then top with lots of sprinkles - the surface should be almost completely covered. Leave for at least 1 hr to set. Cut into squares and serve with hot custard, if you like.

3/4 cup sugar
1 cup all purpose flour

  • Beat 5 eggs (no need to separate them) on low speed and then on high speed for about 5 minutes or until it's three times in volume.

  • Add cake batter to an oiled baking sheet. Springform baking pan works amazing, size 9-12 inches is perfect.
  • Bake at 350F for 30 minutes and check it using a wooden toothpick. If the cake is ready, the dough should not stick to the toothpick.

ITALIAN SPONGE CAKE (PAN DI SPAGNA)

Italian Sponge Cake (Pan di Spagna) image

Learn how to make a traditional Italian sponge cake from scratch with only 3 ingredients: eggs, flour, and sugar!

Provided by Elena Tomasi

Categories     Dessert

Time 1h

Number Of Ingredients 5

½ cup + 1½ tablespoon (120 g) granulated sugar
4 extra-large eggs (at room temperature)
a pinch of salt
1 teaspoon grated lemon zest or vanilla extract (optional)
1 cup + 1 tablespoon (120 g) cake flour, sifted (*you can use all-purpose flour: 120 grams=1 cup)

Steps:

  • Preheat the oven to 338°F (170°C).
  • Butter and flour (or spray with baking spray) an 8 inches (20 cm) pan.
  • In the bowl of a stand mixer fitted with a whisk attachment, beat the eggs, sugar, salt, and lemon zest until very fluffy and pale yellow (about 10/15 minutes on medium/high speed). To test that it has been beaten enough, let a small amount of batter fall into the bowl. If it remains "sitting" on top, it means that it's ready.
  • Sift the flour on top of the egg mixture, a little at a time, and fold it gently with a wooden spoon or a spatula just until incorporated. Do not over-mix or you will deflate the batter.
  • Pour the batter into the prepared pan. Don't smooth the top or bang the pan on the counter, leave it as it is!
  • Bake for 40 minutes or until a toothpick inserted into the center comes out clean. (Remember: do not open the oven for the first 30 minutes!)
  • Turn off the oven but leave the cake inside (keep the door slightly open using a wooden spoon) for 5/10 minutes so it can cool down slowly.
  • Remove the sponge cake from the oven, let it cool for 10 more minutes, then loosen around the edges with a knife, and flip it on a wire rack upside down (without the pan) to cool completely.

  • Preheat oven to 350℉. Line a 9-inch aluminum springform pan or 2 (9-inch) cake pans with parchment paper. Do not grease pan(s). Whisk eggs, sugar and salt together in the bowl of an electric mixer fitted with whisk attachment. Whisk until batter triples in volume and reaches ribbon stage. (When ribbons of batter are drizzled over bowl, they should sit on top for at least 5 seconds before sinking into batter.) Release bowl from mixer. Sift flour into batter in 3 stages, gently folding together with rubber spatula or balloon whisk after each addition. Pour batter into prepared pan and bake for 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven and let cool in pan for 10 minutes. Run knife around edges and invert cake onto wire rack to cool completely.
  • To give the egg a surface to adhere to and maximize volume of cake as it rises, do not grease pan(s). Eggs should be well whipped, since they are the only source of leavening. Fold the flour into the batter very gently, to keep as much air in the batter as possible. True to its name, sponge cake takes well to being soaked in syrup! The recipe calls for an aluminum pan because dark pans absorb heat too quickly, which would make the outside of the cake bake too quickly and become dry. Cake strips can be used to prevent this.
