- Warm the eggs by placing them UN-CRACKED in a medium bowl and cover with hot water (as hot as your tap will go). Let them sit for 10 minutes.
- Preheat the oven to 450°F and move the oven rack to a low position (to prepare for huge popovers!). Grease the popover pan thoroughly inside each cup as well as around the top edges.
- With your whisk, beat together the eggs, milk and salt until they are combined. The yolks should be completely blended in.
- Add the flour and whisk until the mixture is frothy and all large lumps are gone. Then quickly stir in the melted butter.
- Divide the batter between the prepared popover cups. They should be about 3/4 of the way full.
- Bake the popovers for 20 minutes and then reduce the heat to 350°F. Bake for another 10 or 15 minutes. The popovers will be very golden brown.
- My preference is to serve immediately and enjoy them warm!

- Preheat the oven to 400 degrees F.
- Using a pastry brush, coat 8 muffin cups with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes. Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth. - If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
- After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
- Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
- Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
- Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
- Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
- Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.

- About 30 minutes before you want to start baking, preheat the oven to 450 degrees. If you have an oven thermometer, use it to make sure that the oven reaches 450 degrees before you start baking the popovers. Place a rack in the lower to allow the popover tops to rise to the center of the oven. Position a second rack on the top setting and make sure that you can easily slide in a baking sheet if the oven gets too hot.
- Fill a large bowl or cup with hot water from the faucet. Let the eggs sit in the warm water for about 10 minutes so that they are warm.
- Prep your popover pan or muffin tin by spraying it with nonstick baking spray. Spray the top surface of the pan as well as in the cups. Set aside.
- In a large bowl, add the warm milk, salt, and eggs. Whisk together until the eggs are completely broken down, and the mixture is completely smooth. This should only take a minute or less.
- Add the flour to the egg mixture all at once and whisk together until all of the large clumps are broken down. You don't need to break down the small clumps.
- Add the melted butter and combine quickly. Pour the mix into the pans to fill them about 2/3 or 3/4 full.
- Ensure that the oven has reached 450 degrees with an external thermometer if you have one. Bake at 450 degrees for 20 minutes. Then, reduce the temperature to 350 for an additional 10-15 minutes until they are a deep golden brown. Muffin tins will bake at the lower end of time, and popover pans will need the higher end of time.
- Do NOT open the oven door until the popovers are nearly done- not even a quick peek! You want to make sure that the heat stays high to allow the steam to build-up inside the popovers.
- Add an additional five minutes (for a total of 40 minutes) if you want to ensure that the popovers don't deflate when they cool. You will want to make sure that your popovers aren't getting too dark before doing this. Place a pan on the top rack if you need to block some of the heat from the oven.
- Popovers are best served immediately. Poke the base of the popover with a toothpick or cut a small slit with a narrow knife to allow the steam to vent. Letting the steam vent will give the popovers a crisper crust and prevent the popovers from getting too soggy inside.
- Serve with my Homemade Honey Butter for a sweet creamy flavor.
EASY POPOVERS RECIPE
I make popovers at least once a week. They are so easy to make that you'll be doing it too! For years this has been my go-to popovers recipe.

- Position rack on the lower half of your oven so that your popovers have room to rise. Place the un-greased popover pan in the oven to warm.
- In a food processor or blender, combine the eggs, milk and salt. Process for a few seconds until just combined. You should not see streaks of yolk.
- Scrape down sides of your blender or food processor bowl to get any flour off the sides. There should not be any big lumps in the batter.
- The batter should be slightly frothy on top, as shown in the photo above.
- Carefully remove heated popover pan from oven and spray well with PAM or other cooking spray.
- Fill each mold about 3/4 high.
- Place pan on lower rack in oven and bake for 20 minutes. Do not open the oven door.
- Do not open the oven door for first 10 minutes. After 10 min you can check periodically for doneness. Popovers are done when they are a deep golden brown.
