PROPER ENGLISH COTTAGE PIE

Proper English Cottage Pie is a delicious, very traditional mince pie (beef) topped with mashed potato. Serve with garden peas.

1 pound lean ground beef
1 onion, diced
3 carrots, diced
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 tablespoon Italian seasoning
2 tablespoons chopped fresh parsley
1 ½ cups beef broth
1 tablespoon tomato paste
salt and pepper to taste
4 potatoes, peeled and diced
¼ cup butter, softened
1 cup milk
salt and pepper to taste
¼ pound shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • To Make Meat Filling: Place a large skillet over medium heat. Crumble in ground beef and saute 1 minute. Add onion and carrot, then continue to saute until meat is no longer pink and onion begins to brown, about 5 minutes. Mix in flour, cinnamon, mixed herbs, and parsley.
  • In a small bowl, combine beef broth and tomato paste. Mix together, then add to beef mixture. Add salt and pepper to taste. Lower heat and simmer mixture for 15 minutes, stirring occasionally, until almost all of liquid has been absorbed. Spoon mixture into a 9 inch pie plate.
  • To Make Potato Topping: Place diced potatoes in a medium saucepan. Cover with water and place over high heat. Allow to come to a boil. Boil for 15 minutes, or until potatoes are tender. Drain.
  • Mash potatoes until smooth, then add butter or margarine, followed by milk. Whip until fluffy. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle with grated Cheddar cheese.
  • Bake in preheated oven for 25 minutes, until top is browned and cheese is bubbly.

This is one of Mary Berry's recipes for a delicious cottage pie which can be baked as one large pie, or several smaller ones. Or a large pie and a couple of stuffed Jacket potatoes.

Number Of Ingredients 14

2 TBS canola oil
1 large onion, peeled and finely chopped
1 celery stalk, washed, trimmed and finely chopped
1 large carrot, peeled and finely chopped
1 1/2 pounds (750g) minced beef (I like to use a lean one)
2 tsp plain all purpose flour
1 1/4 cups (300ml) beef stock
1 TBS tomato puree (tomato paste)
2 TBS Worcestershire Sauce
salt and black pepper to taste
1 1/2 pounds (750g) potatoes for mashing, peeled and cut into chunks
3 TBS butter
2 - 3 TBS hot milk
4 ounces (125g) mature cheddar cheese, grated

Steps:

  • Heat the oil in a large saucepan. Add the onions, carrot and celery. Cook for a few minutes, then crumble in the beef. Cook, stirring frequently until the beef has browned.
  • Sprinkle the flour over top and cook, stirring for about a minute, then add the stock, tomato puree and Worcestershire sauce. Season with some salt and pepper to taste. Bring to the boil, then reduce to a simmer and cook, covered, for about 45 minutes over low heat. Stir occasionally.
  • While the filling is cooking, prepare the potato topping. Put the potatoes into a saucepan of lightly salted water to cover. Bring to the boil. Cook at a quick simmer for about 20 minutes, or until fork tender. Drain well and return to the saucepan. Shake the pan over the residual heat of the burner for a few minutes to dry the potatoes out.
  • Mash the potatoes with the butter and milk until soft and lump free. Stir in the cheese until it melts. Season to taste with some salt and pepper. (Remember cheese is quite salty.)
  • Spoon the meat filling into a deep dish or into 6 smaller deepish dishes. Spread the cheesy potato mash over top to cover, roughing it up a bit.
  • Bake in a 400*F/200*C/ gas mark 6 oven for 20 to 25 minutes for small pies, or 35 to 40 minutes for a larger pie. When done the meat filling will be bubbling and the potato topping will be golden brown.
  • Serve hot with a vegetable or salad on the side.

2 lbs floury potatoes
salt and pepper
2 large onions
1 ounce beef drippings
2 lbs minced beef
3 teaspoons flour
1/2 pint strong beef stock
1 (14 ounce) can chopped tomatoes
8 ounces frozen vegetables (green beans are nice)
1/4 pint milk
2 ounces butter

Steps:

  • Cook potatoes in boiling salted water.
  • Preheat oven to 375* Thinly slice onions.
  • Heat dripping in a fry pan and fry onions until transparent.
  • Add beef and fry until browned.
  • Sprinkle in the flour and cook, stirring for 1 minute.
  • Slowly add stock and bring to a boil stirring constantly.
  • Add tomatoes with juice, s& p and frozen veg.
  • Simmer for 5 min.
  • Spoon cooked mixture into a casserole dish and spread on the mashed spuds.
  • Bake for 30 min.

So it should follow that a vegetable version could be named gardener's pie. Filled with a saucy, savory leek and mushroom stew, it's a pie that will please vegetarians and carnivores alike.

2 tablespoons unsalted butter
1 large onion, diced (about 1 1/2 cups)
Salt and pepper
4 medium leeks, tender green and white parts, split lengthwise and cut in 1-inch pieces (about 4 cups)
2 tablespoons olive oil
1 pound medium-brown or white mushrooms, quartered
1/2 pound shiitake mushrooms, caps only, sliced 1/4-inch thick
2 teaspoons chopped fresh thyme
2 small garlic cloves, minced
2 tablespoons chopped parsley
2 tablespoons white miso (optional)
2 cups whole milk
2 tablespoons cornstarch, dissolved in 2 tablespoons cold water
3 pounds russet or yellow-fleshed potatoes, peeled and cut in 2-inch chunks
6 tablespoons unsalted butter
1/2 cup heavy cream
Salt and pepper
1 cup homemade coarse dry bread crumbs

Steps:

  • Heat oven to 350 degrees. Put butter in a large skillet or Dutch oven over medium-high heat. Add onions and season with salt and pepper. Cook, stirring occasionally, until softened and beginning to color, 5 to 7 minutes.
  • Add leeks, a little more salt and stir to combine. Cook mixture for about 5 minutes more, until leeks have lost their crunch, but are still green. Turn off heat.
  • Cook the mushrooms separately (work in batches if necessary): Put olive oil in a large skillet over medium-high heat. When oil is wavy, add both kinds of mushrooms and sauté 2 to 3 minutes, until lightly browned. Season with salt and pepper. Turn off heat and stir in thyme, garlic and parsley, and toss to coat.
  • Add mushrooms to onion-leek mixture, and turn heat to medium-high. Add miso and milk, and bring to a simmer. Stir cornstarch and water, add to mixture and simmer for 2 minutes, stirring, until sauce thickens. Transfer mixture to a 9-by-13-inch baking dish, and leave at room temperature.
  • Meanwhile, boil potatoes in salted water until very soft, about 15 minutes. Drain potatoes and mash with 4 tablespoons butter, then stir in cream and beat until smooth. Season with salt and pepper.
  • Spread mashed potatoes evenly over surface of vegetable mixture. Sprinkle with bread crumbs and dot with remaining 2 tablespoons butter. Bake for 45 minutes, until bubbling and nicely browned.
