This Best Ever One Pot Beef Stew is an easy, classic beef stew recipe that cooks to perfection on the stove top and in the oven. It's the best comfort food!

2 tablespoons olive oil
2 pounds stewing beef
salt and pepper (to taste)
2 tablespoons all purpose flour
1 teaspoon dried thyme
2 teaspoons smoked paprika
1 large onion, diced
3 cloves garlic, pressed
3 medium carrots, chopped
2 stalks celery, chopped
1/2 cup red wine
2 dashes Worcestershire Sauce
2 tablespoons tomato paste
1/2 cup tomato sauce
3 cups low sodium beef stock
5 medium white potatoes, quartered
1 cup frozen green beans (optional)
fresh parsley for garnish

Steps:

  • Preheat your oven to 325 degrees Fahrenheit.
  • Place a large Dutch Oven pot over medium-high heat and warm the olive oil in it.
  • Season the beef with salt and pepper and add to the hot pot, just so the beef covers the bottom of the pot (Don't overcrowd as this will prevent the browning process. Brown the beef in batches if necessary.).
  • Brown the beef pieces on each side just until they're beautifully caramelized, sprinkling the flour over the beef as it browns, about 1 teaspoon at a time.
  • Remove the beef from the pot to a plate after it has browned (don't worry about cooking it through at this point!) and add the thyme, smoked paprika, onions, garlic, carrots and celery to the pot.
  • Stir the vegetables around to catch all the drippings left in the pot from the meat and add the beef back into the pot after the onions are almost translucent.
  • Add the red wine, the Worcestershire Sauce, and the tomato paste. Give everything a good stir and let the liquid cook down (it's important to let the wine cook off for a good 4-5 minutes before adding the other liquid).
  • Once the wine liquid has reduced for several minutes and it has thickened, add the tomato sauce, the beef stock and the potatoes.
  • Give everything a good stir, scraping any bits off the bottom of the pot.
  • Make sure the potatoes are nicely nestled into the liquid and add the lid to the pot. Place the pot in the oven at 325 degrees Fahrenheit for about 3 to 3 and a half hours.
  • Every hour or so, lift the lid of the pot and give everything a quick stir.
  • If you'd like to add the frozen green beans (they're totally optional and I only add them about 50% of the times I make this dish), stir them in during the last 30 minutes of cooking so they don't get soggy.
  • You'll know the stew is done after the allotted time has passed and the beef pieces fall apart when you touch them with a fork.
  • Serve in deep bowls with a piece of crusty bread for dipping, and a sprinkling of fresh parsley for garnish (if desired).

1 1/4 lbs sirloin tip roast, cubed
2 large potatoes, cubed
3 carrots, sliced
1 onion, chopped
1 teaspoon salt
1 teaspoon pepper
1 tablespoon Worcestershire sauce
1/2 cup flour
1 tablespoon olive oil
salt and pepper
3 (16 ounce) cans broth

Steps:

  • In a medium mixing bowl put flour and teaspoon each salt and pepper, mix.
  • Toss the beef cubes in the flour until coated.
  • In a soup pot heat the olive oil over medium high heat until the oil blooms.
  • Reserving the extra flour in the bowl, add the meat to the soup pot and cook until the meat is browned on all sides.
  • Add carrot, onion, and potatoes to pot sprinkling the remaining flour over the veggies to coat.
  • Mix the meat, veggies, and flour thoroughly and cook for 3-4 minutes, or until veggies start to soften.
  • Add all three tins of beef broth and bring to a boil.
  • Boil until veggies are tender, add the worcestershire sauce, season to taste with salt and pepper.

1 lb boneless beef chuck, tip or round roast, cut into 1-inch cubes
3 cups water

1 medium green bell pepper, cut into 1-inch pieces

1/2 cup cold water
2 tablespoons Gold Medal™ all-purpose flour

Steps:

  • In 12-inch skillet or 4-quart Dutch oven, heat oil over medium heat 1 to 2 minutes. Add beef; cook about 15 minutes, stirring occasionally, until brown on all sides.
  • Add water, 1/2 teaspoon salt and the pepper. Heat to boiling. Reduce heat to low. Cover; simmer 2 hours to 2 hours 30 minutes or until beef is almost tender.
  • Stir in remaining ingredients except cold water and flour. Cover; cook about 30 minutes or until vegetables are tender. Remove bay leaf.
  • In tightly covered jar or container, shake cold water and flour; gradually stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute until thickened.

The original recipe called for a 10 oz pkg of frozen peas to be added during the last 15 minutes of cooking. I usually add a little rosemary and cayenne. Can add the spices you wish. 1/2 cup flour
1 1/2 teaspoons salt

  • Place meat in bag with the flour and shake until well coated.

  • Stir until well browned.
  • Add finely chopped carrot and next 4 ingredients.
  • Cover and cook over low heat for 1 1/2 hours (stirring every 15 minutes).

1 pound beef stewing meat, trimmed and cut into inch cubes

2 tablespoons red wine vinegar
1 cup red wine
3 1/2 cups beef broth, homemade or low-sodium canned
2 bay leaves
1 medium onion, peeled and chopped
5 medium carrots, peeled and cut into 1/4-inch rounds
2 large baking potatoes, peeled and cut into 3/4-inch cubes

Steps:

  • Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
  • Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.

3 tablespoons vegetable oil
3 pounds boneless chuck roast (cut into 2-inch pieces)
2 teaspoons salt
1 tablespoon freshly ground pepper
2 yellow onions (cut into 1-inch chunks)
1/4 cup flour
3 cloves garlic (minced)
1 cup red wine
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 bay leaf
3 cups beef broth
3 large russet potatoes (peeled and cut into eighths)
2 stalks celery (cut into 1-inch slices)
4 carrots (peeled and cut into 1-inch slices)
Garnish: fresh parsley

Steps:

  • Gather the ingredients.
  • On medium-high heat, add the vegetable oil to a large heavy pot (one that has a tight-fitting lid).
  • When it begins to smoke slightly, add the beef and brown on all sides. Do so in batches if necessary. Add the salt and pepper as the beef browns.
  • Once browned, remove the beef with a slotted spoon or tongs and set aside.
  • Add the onions and sauté for about 5 minutes, until softened.
  • Reduce heat to medium-low and add the flour. Cook for 2 minutes stirring often. Add the garlic and cook for 1 minute.
  • Add wine and deglaze the pan , scraping any brown bits stuck to the bottom of the pan. The flour will start to thicken the wine as it comes to a simmer.
  • Simmer the wine for 5 minutes and then add the beef, thyme, rosemary, and bay leaf. Top with the broth. Bring back to a gentle simmer, cover, and cook on very low for about 1 hour.
  • Add potatoes, celery, and carrots and simmer, covered, for another 30 minutes, or until the meat and vegetables are tender. Taste and adjust seasoning.
  • Turn off the heat and let sit for 15 minutes before serving. Garnish with the fresh parsley if desired.

1 teaspoon dried crushed rosemary
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon paprika
½ teaspoon fresh ground black pepper
2 tablespoons vegetable oil (plus additional as needed)
2 pounds beef stew meat
1 cup diced white or yellow onion
2 stalks celery (chopped)
1 teaspoon minced garlic
3 tablespoons tomato paste
1 cup medium to full-bodied red wine ((like Cabernet, Zinfandel, or Merlot))
2 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
1 bay leaf
1 pound baby yellow or red potatoes (or a combination of both, halved or quartered)
3 or 4 carrots (peeled and roughly chopped)
1 cup frozen peas (no need to thaw)
¼ cup fresh Italian parsley
¼ cup water
2 tablespoons cornstarch

Steps:

  • Combine the seasoning mix ingredients in a small bowl. Cut any large pieces of stew meat into smaller bite-size pieces, if necessary.
  • Heat the vegetable oil in a large Dutch oven over MEDIUM-HIGH heat. Add about half of the meat to the pan, or as much as you can without overcrowding the pan. Sprinkle 2 teaspoons of the spice mixture over the meat and sauté the beef until nicely browned. Use a slotted spoon to transfer the beef to a dish and set aside. Repeat with the remaining beef, adding additional oil if needed, and seasoning with 2 more teaspoons of the spice mixture. Reserve remaining spice mixture for later.
  • Add additional oil to pan if needed and add the onion, celery, and garlic. Cook, stirring occasionally, until softened. Add the tomato paste and stir until well combined. Add the red wine and increase the heat under the pot to bring the mixture to a boil. Add the beef broth, Worcestershire sauce, remaining spice mix and the bay leaf. Add the beef and all the juices that have accumulated back to pot and bring to a boil. Reduce heat to LOW, cover, and simmer for 1 ½ hours, or until the beef is fork tender.
  • Add the potatoes and carrots and raise the heat under the pot to bring the liquid to a boil. Reduce the heat to LOW, cover and simmer for another 30 to 40 minutes until the veggies are fork tender. Stir in the frozen peas and parsley. Combine the water and cornstarch in a measuring cup or small bowl and stir it into the beef stew. Continue cooking, uncovered, until thickened.
  • Discard the bay leaf before serving.

2 pounds room temperature beef stew meat, cut into 1 1/2-inch cubes
½ cup all-purpose flour
1 yellow onion, roughly chopped
1 teaspoon minced garlic
1 (32 ounce) carton low-sodium beef broth
1 (15 ounce) can crushed tomatoes
3 yellow potatoes, or more to taste, cubed
3 stalks celery, chopped
1 cup baby carrots
1 teaspoon Creole seasoning (such as Tony Chachere's®)
1 teaspoon dried basil

  • Heat oil in a large pot over medium-high heat. Add meat, flour, onion, and garlic; cook and stir until browned, 10 to 15 minutes.

2 tablespoons olive oil
2 pounds top sirloin steak, diced
Kosher salt and freshly ground black pepper, to taste
1 medium sweet onion, diced
2 large carrots, peeled and diced
2 celery ribs, diced
3 cloves garlic, minced
8 ounces cremini mushrooms, halved
3 tablespoons all-purpose flour
2 tablespoons tomato paste
1/2 cup dry red wine
2 1/2 cups beef stock
4 sprigs fresh thyme
2 bay leaves
1 large russet potato, peeled and cut in 1/2-inch chunks
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat olive oil in a large stockpot or Dutch oven over medium heat. Season steak with 1 teaspoon salt and 1/2 teaspoon pepper. Working in batches, add steak to the stockpot and cook, stirring occasionally, until evenly browned, about 6-8 minutes; set aside. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Add garlic and mushrooms, and cook, stirring occasionally, until tender and browned, about 3-4 minutes. Steps:

  • Method for Beef Stew: 1 - Preheat frying pan to medium heat on stove top, when ready add 1 tbsp olive oil, 1 tsp butter, chopped beef, cook until brown on both sides. Add chopped onions, fry until it starts to get golden brown, then add 1 tbsp of garlic and 1 tbsp Worcestershire sauce, 1/2 tsp smoked paprika, 1/2 tsp sea salt, 1/2 tsp thyme, 1 tsp pepper. Remove meat from frying pan and put into your medium pot and set aside. 2 - In the same frying pan add 1 tsp butter let melt then add 1 tbsp flour,mix it around the pan until the flour starts to brown, add 1 cup of beef or vegetable broth let thicken then set aside until the last 20 minutes of your cooking step. 3 - In your medium pot add all your vegetables and the remaining beef or vegetable broth and tomatoes, put on medium to low heat on stove top for 1 1/2 hours stirring occasionally, the last 30 minutes add your thickening to the pot. 4 - After your cooking time have completed add your thickening mix together, let it continue cooking for another 30 minutes. 5 - When beef stew have cooked remove from heat and start scooping it into your round pie pan, don't over fill your pie pan,it needs room to breathe when the baking starts. The remainder of beef stew scoop into a jar to have later. Method for Pastry: 1 - In a large bowl add all ingredients not the water and start mixing with your hand until all the butter is equally mixed through, then add the 3 tbsp cold water and mix until it starts to form a ball, at this time you can place your dough in the fridge until you are ready to roll out your dough. 2 - Remove dough from fridge and put on a piece of parchment paper covered with flour, roll with your rolling pin until it is the size of your round pan. 3 - Put the dough on top of the beef stew in the pie pan and pinch the sides to seal the pan, then cut one or two inch cuts in the top of the dough. This will help the beef stew to breathe and release any steam from the stew. 4 - Pre heat oven to 350° , place pie in the oven on a piece of foil wrap, bake pie for 30 minutes or until golden brown. Remove from heat, place on the counter until it reaches room temperature before you cut beef stew with pastry pie.
