BANANA-CHOCOLATE CHIP MUFFINS
WOW! Get this...a very low-fat muffin recipe that actually tastes great!! After failing at many attempts to create a really tasty, low-fat muffin, I came across this recipe, and it is really good...great for dieters!

Steps:
- Preheat oven to 350 degrees.
- Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
- In large bowl, mash bananas with fork.
- Whisk in egg, milk, granulated sugar, and brown sugar.
- In separate bowl, combine flour, baking soda, and salt.
- Add flour mixture to banana mixture and combine well.
- Fold in chocolate chips and walnuts.
- Spoon equal amounts of batter into 12 muffin cups.
- Bake 20 minutes or until toothpick inserted in center comes out clean.
- Allow to cool slightly in pan, then remove to wire rack.
DOUBLE CHOCOLATE BANANA MUFFINS
These double chocolate bananas muffins are ridiculously easy to make . . . and even easier to eat. Full of ripe bananas, brown sugar, cocoa powder, and dark chocolate chunks! Socially acceptable for breakfast, but decadent enough for dessert. ;)

- Pre-heat oven to 425 degrees F and line a standard 12 cup non stick muffin tin with paper liners.
- In a large bowl, whisk together sugar, butter, egg, and vanilla.
- Whisk in mashed bananas.
- Add in flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Use a spatula to mix. Don't over mix.
- Gently stir in dark chocolate chunks.
- Scoop evenly into prepared muffin tin. You should get 12 muffins.
- Top with a few more chocolate chips.
- Bake for 5 minutes at 425 degrees F and then lower heat to 350 degrees F (keep muffins in oven)
- Bake an additional 12-14 minutes, or until a toothpick comes out *almost* clean. **Don't over bake and make sure you're not sticking a toothpick into a chocolate chip**
- Remove from pan and enjoy!

- In a large bowl combine the flour, sugar, cocoa powder and baking powder.
- In another bowl, blend the bananas, oil and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full.

- Preheat oven to 425°F. Grease the muffin pan with cooking spray
- Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl. Set aside. In a large bowl mash the bananas. Whisk in the melted butter, brown sugar, egg, vanilla extract, and milk.
- Pour the dry ingredients into the wet ingredients, then beat or whisk until combined. Fold in the nuts and chocolate chips.
- Spoon the batter into the muffin pan, filling them to the top. Bake for 5 minutes. Then, keeping the muffins in the oven, reduce the oven temperature to 350°F. Bake for an additional 15-18 minutes or until a toothpick inserted in the center comes out clean.

- Position an oven rack in the center of the oven and preheat the oven to 350F degrees. Place paper liners in a 12 cup standard muffin pan and set aside.

- Preheat oven to 350°F. Prepare muffin pans by lining 12 muffin cups with paper liners.
- In a large bowl, whisk together flour, baking soda, and salt. In another bowl, use an electric mixer to beat the butter until smooth, and then beat in the sugar until light and fluffy. Blend in the egg, vanilla, mashed bananas, and sour cream until fully incorporated (batter may look curdled at this point...it will smooth out with addition of flour). Gently mix in the dry ingredients until just blended.
- Scoop half of the batter into a second bowl. Stir the melted unsweetened chocolate into one of the bowls of batter until fully incorporated.
- Use a spoon (or small cookie scoop) to scoop plain banana batter into half of a muffin liner. Use another spoon to scoop chocolate batter into the other half of the muffin liner.
