Adapted from fall '07 Paula Deen magazine. The first time I made it, I tried it out on a bunch of my former bf's skateboarder friends who've never tried buttermilk pie before. One of the boys reported that it was "totally bitchin", hence the name change.

Number Of Ingredients 9

1 1/4 cups sugar (if thats too much sugar for you,divide this into part sugar, part Splenda. It won't be as sweet, but)
1 tablespoon flour
3 eggs
1/4 cup butter (melted, but not hot to the touch)
1 teaspoon vanilla
1/2 cup buttermilk
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 (9 inch) pie crusts (unbaked, pre-made)

Steps:

  • Preheat oven at 350.
  • Don't pre-bake the crust!
  • Mix all ingredients together in a big bowl. Make sure everything is well blended. I found that adding the buttermilk last came out best.
  • Pour into pie crust and bake for 10 minutes.
  • Lower the heat to 325 and bake for 1 hour. If the crust is browning too quickly, cover the pie with foil to keep the crust from burning.

This recipe is older than I am...and I was born in 1919! My mother and grandmother made this pie with buttermilk and eggs from our farm and set it on the tables at church meetings and social gatherings. I did the same and now our children make it, too! -Kate Mathews, Shreveport, Louisiana

CRUST:
1-1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup shortening
1/4 cup cold whole milk
1 large egg, lightly beaten
FILLING:
1/2 cup butter, softened
2 cups sugar
3 tablespoons all-purpose flour
3 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 cup lemon juice

Steps:

  • In a large bowl, mix flour and salt. Cut in shortening until smooth. Gradually add milk and egg and mix well. On a floured surface, roll dough out very thin. Place in a 10-in. pie pan; set aside. , For filling, cream butter and sugar in a bowl. Add flour. Add eggs, one at a time, beating well after each addition. Stir in remaining ingredients and mix well. Pour into crust. , Bake at 350° for 45 minutes. Cool completely before serving.

3 eggs
½ cup butter, softened
1 ½ cups white sugar
3 tablespoons all-purpose flour
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon lemon juice
⅛ teaspoon freshly grated nutmeg
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees (175 degrees C).
  • Beat eggs until frothy; add butter, sugar and flour. Beat until smooth.
  • Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell.
  • Bake for 40 to 60 minutes, or until center is firm.
