Ingredients

3-1/2 cups peeled chopped tomatoes (about 4 large)
1 large green pepper, chopped
1 medium onion, chopped
1 serrano pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon sugar
2-1/4 teaspoons salt
1 garlic clove, minced
3/4 teaspoon ground cumin
1 can (6 ounces) tomato paste
1/4 cup white vinegar
2 tablespoons lemon juice
Baked tortilla chip scoops

Steps:

In a large saucepan, combine the first nine ingredients. Stir in the tomato paste, vinegar and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring frequently. Cool to room temperature. Cover and refrigerate until chilled. Serve with chips.

3 tbsp vegetable oil
¼ cup chopped yellow onion
1 tsp salt
1 tsp black pepper
½ cup crushed canned tomatoes
¼ tsp cayenne pepper
1½ tsp white sugar
2 tbsp paprika
2 tsp garlic powder
¼ cup all-purpose flour
¾ cup more as necessary milk
1 cup grated Queso Blanco
1 cup grated American Cheddar cheese
1 cup grated Monterey Jack cheese

Steps:

In a medium-sized saucepan, combine the oil, onion, pepper, tomatoes, cayenne, sugar, paprika and garlic powder. Saute briefly.
Meanwhile, mix the flour and milk in a small bowl until combined. Slowly pour into the crockpot.
Stir until the mixture becomes thick and smooth.
Add the shredded cheeses, stirring to prevent sticking.
Cook the sauce on low heat for 5 to 10 minutes, or until well blended. You may need to add more milk as necessary.
Season to taste with salt and pepper. Adjust accordingly.
Serve with tortilla chips.

Ingredients

2 1/2 cups canned diced tomatoes
1/4 cup red onions or 1/4 cup white onion, chopped
1/2 cup tomato paste
2 cups water
1/2 teaspoon garlic powder
1/2 cup fresh cilantro, chopped
1/2-1 teaspoon ground cumin
1 teaspoon salt
1 tablespoon sugar
2 cups canned diced tomatoes
2 jalapeno peppers (optional)

Steps:

Place tomatoes, onions, tomato paste, water, garlic powder, cilantro, cumin, salt and sugar in a blender or food processor.
Puree until smooth.
Add remaining measure of tomatoes and mix till blended. (Fresh, diced tomatoes may be substituded for diced canned tomatoes.)
Add optional jalepeno peppers to taste.
