Tossed Asian Salad with Wasabi Vinaigrette Recipe image

A great twist on the classic salad. The dressing has a little bit of a kick, and the greens are better for you than lettuce.

Number Of Ingredients 11

2 cups baby spinach
2 cups bagged coleslaw mix
1 (8-ounce) can water chestnuts, chopped or sliced, drained
1/2 cup diced red bell pepper
1 bunch green onions, chopped
1/4 cup sliced almonds, toasted
1 tablespoon Dijon mustard
1/2 teaspoon wasabi powder
1/4 cup seasoned rice-wine vinegar
1 teaspoon sesame oil
2 tablespoons canola oil

Steps:

  • In a large bowl, combine spinach, coleslaw, water chestnuts, red pepper and green onions.
  • Toss with Wasabi Vinaigrette (recipe follows) to lightly coat.
  • Divide on plates and sprinkle with almonds.
  • In small bowl, whisk together all ingredients until smooth and well combined.

Zest and juice of 1 lime
2 tbsp prepared wasabi
2 tbsp seasoned rice wine vinegar
4 tsp canna-oil (preferably sesame)
1 tbsp peanut oil
1 tbsp low-sodium soy sauce
1 tsp agave nectar or honey
1/4 tsp ground ginger
freshly ground pepper, to taste
2 1/2 cups shredded cooked chicken (from 8 ounce chicken breast)
1/2 head Napa cabbage (shredded)
1/2 head romaine lettuce (chopped)
2 large carrots (shredded)
2 stalks celery (thinly sliced)
4 green onions (white and green parts) (cut on a diagonal)
1 cup julienned snow peas
1/2 cup chopped fresh mint leaves
1/2 cup chopped cilantro leaves
1/2 cup chopped roasted unsalted peanuts

Steps:

  • Put all the ingredients in a glass jar with a tight-fitting lid. Screw the lid on, making sure the seal is tight and shake vigorously to combine.
  • Combine all the ingredients except the peanuts in a large glass bowl. Pour the dressing over the salad and toss well to combine.Top with the peanuts before serving.
