Best Ever 5 Minute Cassava Flour Tortillas image

The easiest, most versatile, fool proof, and delicious paleo cassava flour tortillas! Mix up and cook in 5 minutes! Make them thick, thin, crisp, or soft! Gluten free and dang delicious!

Number Of Ingredients 8

2 cups cassava flour (be sure to use Anthony's Goods brand! This recipe will not work with tapioca flour!)
1 cup coconut milk (canned or boxed)
1/2 cup olive oil
1/2 cup water
1-2 teaspoons sea salt (to taste)
2 teaspoons garlic granules
fresh cracked pepper (to taste- about 1-1 1/2 teaspoons)
olive oil (for cooking)

Steps:

  • Combine ingredients for the tortillas in a medium size bowl and mix together until well combined. The dough should stick together and be a smooth consistency.
  • Divide the dough into 10 equal parts and shape into balls. On a piece of parchment paper roll and pat each section of dough into a thin tortilla. You can use your hands to press out the dough into a tortilla shape or use a rolling pin for this. If the dough is sticking sprinkle lightly with cassava flour.
  • Heat a fry pan on the stove over medium/low heat. Drizzle the pan lightly with olive oil for cooking.
  • Cook the tortillas for about 1-3 minutes in each side until it reaches desired consistency. You can make them crisp or soft. It's up to your personal preference!

Vegetarian mushroom tortilla soup recipe made with assorted mushrooms, cilantro, onions, garlic, jalapeños, tomatoes, spices, vegetable broth, lime juice and served with queso fresco, tortilla chips, and avocado.

~3 lbs (1.4kg of assorted mushrooms, washed and cleaned)
2 tablespoons of oil
1 medium white or yellow onion (diced (~200grams or 7 ounces))
1 bunch of green onions (finely chopped - save a small amount to add at the end)
1 bunch of cilantro (finely chopped - save a small amount to add at the end)
2 jalapeños (seeds and veins removed, diced)
4 garlic cloves (crushed)
1 tablespoon of paprika
1 tablespoon of ground cumin
1 teaspoon dried oregano
½ teaspoon cayenne pepper (adjust to taste)
5 roma tomatoes (about 1 lb or 450 grams, diced)
4 cups of vegetable broth
2 cups of tomato juice
¼ cup freshly squeezed lime juice
Salt and pepper to taste
Tortilla chips (homemade or store-bought)
Avocado (diced or sliced)
Queso freso (crumbled)
Chopped cilantro and green onions
Lime slices
Jalapeño slices or extra hot sauce (if desired)

Steps:

  • To prepare the mushrooms, you will need about in 1 cup of diced mushrooms (for the soup base) and the rest should be sliced or chopped into bite size pieces. If there are any very small mushrooms you can leave them whole (if you prefer).
  • Heat the oil in large soup pot and add the diced mushrooms, let them cook until they release any liquid and then continue cooking until the liquid reduces leaving just the oil which should start to brown the mushrooms.
  • Add the diced onions, green onions, cilantro, jalapeños, crushed garlic, paprika, cayenne pepper, oregano, cumin, salt and pepper. Mix well and cook on low heat for about 10 minutes or until all the ingredients are soft.
  • Add the diced tomatoes and cook for another 10 minutes.
  • Add the vegetable stock and tomato juice. Bring to a boil, add the mushrooms and cook over low heat for about 10 to 15 minutes. The mushrooms will reduce in size by the time the soup is done.
  • Stir in the lime juice and remove from the heat. Add some of the chopped cilantro and green onions.
  • Serve immediately garnished with queso fresco, tortilla chips, diced avocado, chopped cilantro, green onions and lime slices.

2 pounds peeled, deveined and quartered yuca
1/2 cup (1 stick) unsalted butter
1/4 cup plus 3 tablespoons vegetable oil
Salt
1 cup shredded mozzarella (or your choice of melting cheese)
Ensalada Criolla, recipe follows
2 tomatoes, sliced
1 large red onion, sliced
1 bell pepper, sliced
2 tablespoons chopped cilantro
Juice of 1 lime
Salt

Steps:

  • Place the peeled and quartered yuca in a pot and cover it with at least 2 quarts water. Cook over high heat until tender, about 30 minutes. Drain the yuca in a colander for 2 minutes. Transfer to the bowl of an electric mixer and add the butter, 1/4 cup of the oil and salt to taste. Mix on medium speed until well incorporated, about 3 minutes. Refrigerate until cool, 15 to 20 minutes.
  • Shape the yuca dough into eight 4-ounce balls. Make a hole in one of the balls with your finger and stuff it with a tablespoon of the mozzarella. Flatten it into a thick patty (a tortilla). Repeat with the remaining balls.
  • Heat the remaining 3 tablespoons oil in a skillet over medium heat. Add 4 yuca patties and cook until light golden brown, 1 to 2 minutes per side. Repeat with the remaining patties, adding more oil as necessary. Top the tortillas with the Ensalada Criolla.
  • Combine the tomatoes, onion and pepper in a large bowl. Add the cilantro, lime juice and salt to taste and toss. Yield: 8 servings

  • Pela la yuca y córtala en tres pedazos. Prepara una olla con agua, espera a que hierva e introduce la yuca. Cocina hasta que la yuca tenga una consistencia suave pero aún firme. Es decir, que la puedas pinchar con facilidad sin que pierda la firmeza.
  • Escurre la yuca, córtala en rodajas delgadas y reserva. Corta la cebolla en juliana y agrégala a las rodajas de yuca. Mezcla ambas y salpimienta.
  • Calienta el aceite en una sartén grande a fuego medio y cocina la yuca con la cebolla. Procura que ambas cubran toda la superficie de la sartén. Mueve por 5 minutos y tapa. Cocina removiendo de vez en cuando, no descuides la cocción.
