1 large onion, chopped
2 celery ribs, chopped
2 tablespoons canola oil
2 cans (14-1/2 ounces each) beef broth
1 cup each frozen corn, sliced carrots and cut green beans
1 cup diced uncooked potatoes
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon minced chives
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cups frozen beef or cheese tortellini

Steps:

  • In a Dutch oven or soup kettle, saute the onion and celery in oil. Add the broth, corn, carrots, beans, potatoes, basil, thyme and chives; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender., Add the tomatoes and tortellini. Simmer, uncovered, for 4-5 minutes or until tortellini is heated through.

4 1/2 ounces cheese-filled egg tortellini
1/2 green bell pepper, diced
1/4 cup freshly grated parmesan cheese

Steps:

  • In a large saucepan or Dutch oven, cook onion and garlic in olive oil until tender, about 6 minutes.
  • Add broth, tomatoes, picante sauce and basil; bring to a boil.
  • Stir in tortellini; simmer uncovered 15 minutes.
  • Stir in bell pepper; continue to simmer 3 to 4 minutes or until tortellini is tender.
  • Ladle into soup bowls; sprinkle with cheese.

I couldn't find that mix so I used 1 cup of a broccoli-cauliflower mix and 1 cup of a carrots-corn-peas-lima bean-green bean mix. If you are using a shelf-stable tortellini (like Barilla) add an extra cup of liquid, either chicken broth or water. If you are using refrigerated or frozen tortellini, the amounts below should be satisfactory but use more if you like.

1 Tablespoon olive oil
1/2 yellow onion (chopped)
2 ribs celery (, chopped)
2 cloves garlic (, minced)
1 14.5 oz can diced tomatoes (, undrained)
2 cups frozen mixed carrots, peas, corn, green beans
2 bay leaves
1 teaspoon dried parsley flakes
1/2 teaspoon dried rosemary
2 teaspoons Italian seasoning
4 cups vegetable broth (, or low sodium chicken broth)
2 teaspoons Better than Bouillon Vegetable Base (,optional but recommended for richer flavor)
salt and freshly ground black pepper (, to taste)
10 ounces cheese tortellini (, refrigerated kind)
freshly grated parmesan cheese (for topping, optional)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onions and celery and sauté for 3-5 minutes. Add garlic and sauté for 30 seconds.
  • Add diced tomatoes, bay leaf, spices, broth, bouillon and season with salt and pepper to taste. Bring to a low boil.
  • Add green beans, corn and peas and cook for 2-3 minutes. Add tortellini and cook for 2-3 minutes or until they float to the top. (Keep in mind they will continue to cook in the hot broth even when the heat is off, so don't overcook).
  • Taste and add a little more bouillon, salt or pepper, to taste, if needed. Remove bay leaves.
  • Serve warm with a little parmesan cheese sprinkled on top, if desired.

It's a wonderful time to make a big pot of this hearty and healthy main course soup! I adore soup meals because they are so satisfying. Each bowl of goodness has 300 calories, 4 grams of fat. This makes a large pot and happily, leftovers freeze great!

1 cup onions, diced
1 tablespoon olive oil
1 tablespoon garlic, minced
4 cups reduced-sodium chicken broth, (I like Swanson's)
1 (28 oz) can diced tomatoes, drained
1 (15 oz) can white beans rinsed and drained
2 teaspoons Italian seasoning
Salt and pepper, to taste
1 (9-10 oz) package refrigerated cheese tortellini, (I used Trader Joe's, see shopping tips)
2 cups cooked chicken, diced, (see shopping tips)
2 cups fresh spinach leaves, packed
1 cup reduced-fat milk
Grated parmesan cheese for topping (optional)

Steps:

  • To Make on Stove-Top: Add onions to a small microwave-safe bowl. Cook for 1 minute, to soften.
  • In a large pot, heat olive oil. Add garlic, softened onions, and sauté for a minute or so. Stir in chicken broth, diced tomatoes, beans, Italian seasoning, and a little salt and pepper, to taste. Bring it to a simmer. Continue to simmer for 10 minutes.
  • In the meantime, cook tortellini separately. Follow package directions. Drain and set aside.
  • To the pot of soup add cooked chicken, cooked tortellini, spinach, and milk. Let simmer for 5 minutes until heated completely. When ready to serve, sprinkle each serving with 1 teaspoon of Parmesan cheese, if desired.
  • To Make in Crock-Pot: Add all ingredients except the chicken, tortellini, spinach, and milk, into a crock-pot and let it cook on low heat for 3 ½ hours. Next, mix into soup the cooked chicken, spinach, and milk. Cook for another 30 minutes until heated through. In the meantime, cook tortellini separately. Once the soup is ready, stir in cooked tortellini. When ready to serve, sprinkle each serving with 1 teaspoon of Parmesan cheese, if desired.
