- In a large pot of salted water boil tortellini until al dente. Drain well.
- In a 1-1/2 quart saucepan combine sauce, green chilies, cilantro and cumin. Simmer over medium-low heat for 5 minutes.
- Place tortellini on a serving platter and pour tomato sauce mixture evenly over pasta. Sprinkle cheese over sauce and serve.

Steps:
- In a large saucepan combine broth, salsa and orange peel.
- Bring to a boil then reduce to low and simmer 3 minutes.
- Stir in tortellini and vegetables.
- Raise heat and cook over medium heat for 6 to 8 minutes or until tortellini and vegetables are ender.
- Stir in milk and salt to taste.
- Heat a few more minutes until nice and hot, but do not boil.
- Serve garnished with fresh cilantro.
- Note: If you use frozen tortellini, add before the vegetables and cook for 4 to 5 minutes before you add vegetables and then cook until vegetables are done.

- Preheat oven to 350 degrees. Lightly grease/spray a 1 1/2 qt casserole dish.
- In a bowl, toss together the black beans, tortellini, green chilies, diced tomatoes and cumin. Mix well and pour into the prepared casserole dish.
- In another bowl, stir together the sour cream, lime juice and sugar; evenly spread this over mixture in the casserole dish.
- Evenly sprinkle with cheese, then olives, then green onions, then the cilantro.
- Cover with foil and bake at 350 for 30 minutes.
- Uncover and continue baking an additional 20-30 minutes until cheese is bubbly and lightly browned.
- Let stand 10 minutes before serving.
- Garnish with cilantro.

- Add all of the Creamy Salsa Dressing ingredients to a blender or food processor and "chop" then puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time, to reach desired consistency.
- Cook Tortellini in generously salted water just until al dente according to package directions (do NOT overcook - we don't want soggy tortellini). Rinse tortellini in cool water and add to a large serving bowl. Add. corn, bell pepper, tomatoes, black beans, red onion and half of the dressing. Gently toss. Cover and chill in the refrigerator for at least one hour.
- When ready to serve, add avocado, bacon, cheese and the desired amount of dressing to the salad (you may not use all it) and gently toss to combine. Add additional dressing if needed so its nice and creamy. Taste and season with salt and pepper and hot sauce if desired.

- Prepare Italian Dressing according to directions. Refrigerate until ready to use then shake or whisk to recombine before using.
- Cook tortellini in salted water according to package directions. Rinse with cool water, drain and add to a large serving bowl. Pour half of the dressing over the warm pasta and toss to combine. Add the remaining salad ingredients to the tortellini.
- If serving within the hour: toss with desired amount of remaining dressing. Although you can serve salad immediately, I highly recommend refrigerating for at least 30 minutes for the flavors to meld and salad to chill.
- If serving later: Gently toss ingredients to combine but do NOT add remaining dressing yet. Cover and refrigerate. When you are ready to serve, toss with desired amount of remaining dressing. This salad is excellent the next day.
