Easy Tortellini Soup image

Quick, easy and colorful, this soup makes a cozy cup or even a light lunch on blustery days. Veggies add nutrition, and cheese tortellini makes it hearty and delicious. -Gaye Thompson, St. Charles, Missouri

Number Of Ingredients 10

1 medium onion, chopped
1 teaspoon olive oil
1 garlic clove, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini or tortellini of your choice
3 cups chopped fresh spinach
1 tablespoon balsamic vinegar
1/4 teaspoon pepper
Shredded Parmesan cheese, optional

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally., Add tortellini; cook for 7-9 minutes or until tender. Stir in the spinach, vinegar and pepper. Cook and stir until heated through and spinach is wilted. Sprinkle with cheese.

One Pot Cheese Tortellini with Garlic Butter Sauce image

Quick and easy cheese tortellini recipe, loaded with garlic butter sauce. This 30 minute meal is made with simple ingredients in one pot.

1 package Three cheese tortellini (Frozen, 19 oz. bag)
1/4 cup Butter (Unsalted)
1 tbsp Olive oil
3 cloves Garlic (Finely minced)
1.5 tbsp Cornstarch
1.5 cups Vegetable broth (Low sodium)
1 tbsp Italian seasoning
Salt (To taste)
Pepper (To taste)

Steps:

  • Boil tortellini, according to package instructions, in salted water. Drain and keep aside.
  • In the same nonstick pot, heat butter and olive oil over medium high heat until butter is fully melted.
  • Add garlic and saute until golden brown.
  • Dissolve cornstarch in broth and pour this mixture in the pot.
  • Mix in Italian seasoning, salt, pepper.
  • Bring to a boil and let it cook, uncovered, until sauce thickens.
  • Mix in the boiled tortellini until fully coated.
  • Garnish with finely chopped fresh herbs like basil or parsley and sprinkle grated parmesan cheese. Enjoy!

1 package (20 ounces) refrigerated cheese tortellini
8 ounces bulk Italian sausage
1 jar (24 ounces) pasta sauce with mushrooms
1/2 cup shredded Parmesan cheese
1 carton (8 ounces) mascarpone cheese
Crushed red pepper flakes, optional

Steps:

  • Prepare tortellini according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in pasta sauce; heat through., Drain tortellini, reserving 1 cup cooking water. Add tortellini to sauce and enough reserved cooking water to reach desired consistency; toss to coat. Stir in Parmesan cheese; dollop with mascarpone cheese. If desired, sprinkle with red pepper flakes.

8 oz of dry penne pasta
20 oz prime rib, cooked and all fat removed - cut into bite sized pieces
1 tsp olive oil
1 medium onion, chopped
3 cloves garlic, chopped
2 cups beef broth
2 tbs flour
1/2 tsp black pepper
1 tbs parsley, dried
1 tsp thyme, fresh

Steps:

  • Cook the pasta. In a large skillet saute the onions and garlic in the olive oil. Add the prime rib pieces. Sprinkle on the flour trying to avoid lumps. Add the black pepper, parsley, and thyme. Stir well to ensure that the flour is evenly distributed. Add the beef broth and reduce heat to a simmer. Simmer until the sauce is the thickness you desire. Add in the cooked penne pasta and toss well to combine.

1 onion diced
10 oz box frozen spinach (unthawed)
2 cans cream of chicken soup
2 cans water
32 oz chicken broth
Family size package of cheese or chicken tortellini, half cooked

Steps:

  • Family size package of cheese or chicken tortellini, half cooked 1) Put olive oil in the bottom of a large soup/stock pan 2) Saute' garlic, celery, carrots and onions until tender 3) Add frozen spinach. Break up blocks of spinach as you cook 4) Continue to saute' until spinach thaws, then heats up 5) Add cream of chicken soup and water 6) Add chicken broth and then add tortellini 7) Heat and Serve Note: It's better to eat it a few hours after it's made so the broth soaks up into the noodles.
