Tortellini, Steak, and Caesar image

A well-balanced meal in a bowl! Goes well with a nice slice of Italian or French bread. This is a FAVE to take to work or school for lunch with both my teenaged daughters and son! I vary how much meat, pasta, and salad I use depending on how many servings I need. If you want to make it in advance or have leftovers, don't add the dressing and croutons beforehand. Mix croutons right before packaging and send dressing on the side. I make this whenever I have leftover steak!

1 (9 ounce) package cheese tortellini
1 pound flank steak
garlic powder to taste
salt and pepper to taste
1 tablespoon olive oil
2 heads romaine lettuce, torn into bite-size pieces
2 (2.25 ounce) cans small pitted black olives, drained
1 cup Caesar-style croutons
2 small fresh tomatoes, chopped
1 (8 ounce) bottle Caesar salad dressing

Steps:

  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 7 to 9 minutes, until al dente, and drain.
  • Preheat the oven broiler. Season steak with garlic powder, salt, and pepper; rub with olive oil. Place steak in a baking dish, and broil 5 minutes on each side, or to desired doneness. Slice diagonally into thin strips.
  • In a bowl, toss the cooked tortellini, lettuce, olives, croutons, tomatoes, and dressing. Top with steak strips to serve.

My family *LOVES* this salad, I make often in the summer with sweet cherry tomatoes from my garden, feel free to adjust all ingredient amounts and add in other ingeredints also, you can sub feta for Parmesan, use your favorite Caesar dressing or use my recipe#116849. Prep time does not include cooking the tortellini.

1 (9 ounce) package cheese tortellini (cooked and rinsed under cold water)
1 head romaine lettuce (torn into small pieces)
1 cup prepared creamy caesar salad dressing (can use less, I use Kittencal's Famous Caesar Salad)
1/4 cup grated parmesan cheese (or to taste)
10 large cherry tomatoes (cut in half)
2 cups caesar-flavor croutons (see my Kittencal's Garlic Croutons)
black pepper (to taste)
salt (optional and to taste)

Steps:

  • In a medium bowl combine the cooked tortellini with chopped lettuce, Caesar dressing and Parmesan cheese; toss well to coat.
  • Season with black pepper to taste and salt if desired.
  • Top with sliced cherry tomatoes and croutons.
  • Serve immediately.
  • Delicious!

1/2 cup mayonnaise
1/4 cup 2% milk
1/4 cup plus 1/3 cup shredded Parmesan cheese, divided
2 tablespoons lemon juice
2 garlic cloves, minced
8 cups torn romaine
1 cup seasoned salad croutons
Halved cherry tomatoes, optional

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a small bowl, combine the mayonnaise, milk, 1/4 cup Parmesan cheese, lemon juice and garlic. , Drain tortellini and rinse in cold water; transfer to a large bowl. Add romaine and remaining Parmesan. Just before serving, drizzle with dressing; toss to coat. Top with croutons and tomatoes if desired.

Shake up your salad routine with this tasty Tortellini Caesar Salad!

9 oz cheese tortellini (, frozen or refrigerated)
4-6 cups chopped romaine lettuce
1 tomato (, chopped or diced)
fresh parmasan cheese for topping (, optional)
1/2-1 cup Caesar dressing (, homemade or store-bought)
2 cups diced bread ((stale french baguette + ciabatta are my fav!) approx. 2-3 oz)
1 TBSP olive oil
salt and pepper (to taste)

Steps:

  • First make the croutons. This is a perfect way to use up older/stale bread. Preheat oven to 375°F. Add cubed bread to a bowl with oil, salt, and pepper. Mix well (using your hands works best to really work it into every piece) and spread on a parchment paper lined baking sheet. Bake on the center rack for 12-16 minutes or until golden and crisp. Times will vary slightly based on type and staleness of bread.
  • While the croutons cook, bring a small/medium pot of water to a boil and cook tortellini via package instructions. Approx 3 minutes for fresh and 4-5 min for frozen tortellini. Drain and rinse with cold water. Set aside.
  • In a large bowl, combine romaine, tortellini, chopped tomatoes, and optional parmesan cheese. Just before serving, drizzle with dressing and mix well to coat pasta and veggies. Top with croutons and enjoy!

1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/3 cup finely chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (10 ounces) hearts of romaine salad mix
1-1/2 cups grape tomatoes
1 can (6-1/2 ounces) sliced ripe olives, drained
3/4 cup creamy Caesar salad dressing
3/4 cup shredded Parmesan cheese
6 bacon strips, cooked and crumbled

Steps:

  • Cook tortellini according to package directions. Drain; rinse with cold water., Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink.   • CROUTONS: Position a rack in the center of the oven and preheat the oven to 325ºF. When the oven is done heating, line a baking sheet with parchment paper or a sheet of foil. Place the slices next to each other on the baking sheet and bake the bread for 15-20 minutes, flipping halfway through. Older bread (staler) will take less time to crisp up while fresh bread will most likely require the full 20 and maybe a little more. Remove the bread from the oven. Add the melted butter, garlic powder, 1/2 teaspoon of salt to a medium bowl and stir to combine. When the bread is cool enough to handle, dice or break the bread into small pieces.   • PASTA: While the bread is baking, heat a large pot of water and allow it to come to a boil. Cook the tortellini according to package directions, drain and toss it a bit of olive oil to keep them from sticking, set aside.
  • SERVE: Place the chopped romaine in a large bowl (if you’re serving this family style.) Top with the cooked tortellini, the sliced/diced chicken and as much dressing as you’d like. I would add ½ and then adjust the dressing according to preference. Top with croutons, shaved parmesan, and serve immediately!
