20 MINUTE EASY RAVIOLI OR TORTELLINI BOLOGNESE
A very easy and great tasting pasta dinner to serve to the family on those busy weeknights. I serve this with a salad or veggie and warm bread. This recipe is courtesy of Rosetto.

Steps:
- Prepare frozen pasta as directed; drain.
- While pasta is cooking, in a saucepan or skillet, heat olive oil.
- Add ground beef, onion and garlic; cook until beef is browned.
- Add tomatoes, wine or broth, mushrooms, basil and oregano/thyme and mix.
- Simmer for 5 minutes, stirring occasionally.
- Add salt and pepper to taste.
- Serve sauce over cooked pasta.

- Heat 20gm butter in a frying pan over medium heat, add minced pork, stir occasionally until cooked through (3-5 minutes), season to taste and set aside to cool.
- Process mortadella, prosciutto and cooked pork in a food processor until finely chopped, add parmesan, egg and nutmeg, season to taste and refrigerate until required.
- For pasta dough, process flour, eggs and a pinch of salt in a food processor until combined, turn onto a work surface and knead until smooth (5-7 minutes). Wrap in plastic wrap and set aside to rest (30 minutes).
- Divide dough in two, then, working with one piece at a time, feed dough through pasta machine, starting at the widest setting. Lightly flour dough as you fold and feed it through, reducing settings notch by notch until pasta is 3mm thick. Cut 6.5cm-diameter circles from pasta with a cutter, fill with a teaspoon of pork mixture, brush edges with water, fold to form a semi-circle and enclose filling. Brush one pointed end with water, bring edges together to form a tortellino, pressing to seal. Set aside on a tray dusted with semolina. Repeat with remaining dough and filling.

- In a large saucepan, melt the butter with the extra virgin olive oil over medium-high heat. Add the minced veal, pork and chicken flesh and sauté until brown.
- After about 10 minutes the meat will start to release its juices. At this point, add the prosciutto and mortadella and cook for a further 10 minutes or until the juices evaporate.
- When cooled, add the nutmeg, Parmigiano Reggiano cheese and egg, and season. Process the mixture in a food processor until all the ingredients are combined.
- To make the tortellini, roll the pasta dough into sheets of less than 1 mm (1/ 32 inch) thickness. Cut the pasta into squares of approximately 4.5 x 4.5 cm (1_ x 1_ inches).

- Heat the bolognaise sauce in a saucepan. Meanwhile, bring abundant salted water to the boil and cook the tortellini for 10 minutes or until they rise to the surface.
