1 package (19 ounces) frozen cheese tortellini
2 packages (6 ounces each) fresh baby spinach
6 cups shredded red cabbage
1 pint cherry tomatoes, quartered
3 tablespoons thinly sliced green onions
1 package (1 pound) sliced bacon, cooked and crumbled
1 bottle (16 ounces) ranch salad dressing

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a large salad bowl, layer the spinach, cabbage, tomatoes and onions. , Drain tortellini and rinse in cold water; place over onions. Top with bacon. Drizzle with salad dressing; do not toss. Cover and refrigerate until serving.

Not your standard 7-layer salad, this is always a big hit at pitch-ins and my wonderful daughter even requests it for her birthday dinner and other family functions. It has that 'just right' side dish flavor and lightness, while still being a special treat. If you use real bacon bits and bottled dressing, it's even faster to have ready for drop-in guests! Add croutons or fresh Parmesan cheese to top if desired. Store in refrigerator and serve chilled.

½ pound bacon, cut crosswise into 1/4-inch pieces
2 (9 ounce) packages refrigerated cheese tortellini
1 cup milk
1 cup mayonnaise
1 (1 ounce) package ranch dressing mix
3 (10 ounce) bags baby spinach
2 cups shredded red cabbage
1 cup cherry tomatoes, or more to taste

Steps:

  • Heat a skillet over medium heat; cook and stir bacon until crispy, 7 to 10 minutes. Drain on a paper towel-lined plate.
  • Bring a large pot of lightly salted water to a boil. Cook tortellini in the boiling water until tender yet firm to the bite, 3 to 4 minutes; drain and run under cold water.
  • Whisk milk, mayonnaise, and ranch dressing mix together in a bowl until dressing is smooth.
  • Place a layer of spinach in the bottom of a 9x13-inch baking dish; top with 1 cup cabbage and layer of tortellini, arranging tortellini so they are evenly spaced over the cabbage. Sprinkle half of the bacon over tortellini layer. Drizzle half of the dressing over salad. Continue layering with remaining spinach, cabbage, tortellini, bacon (reserving a few for the end), and ending with cherry tomatoes. Drizzle the remaining dressing over the top. Garnish with a few bacon pieces. Serve chilled.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
8 ounces cheese tortellini
6 cups loosely packed baby spinach
1/2 cup chopped fresh basil
1/2 cup thinly sliced scallions
1/4 cup grated Gouda
1 vine-ripe tomato, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add to the bowl with the dressing.
  • Add the spinach, basil, and scallions, Gouda and tomato to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

I copied this recipe from a vegetarian cookbook many years ago and I just came across it again today. It is such a wonderful salad - I love spinach and cheese tortellini but the dressing is what really makes it stand out.

1/3 cup vegetable oil
2 tablespoons toasted sesame oil
2 tablespoons lemon juice
1 teaspoon tamari soy sauce
2 garlic cloves, minced
1/2 teaspoon salt
ground black pepper, to taste
1 lb frozen cheese tortellini
1 bell pepper, cut in thin strips (yellow, orange or red)
1 tomatoes, diced
1/3 cup slivered red onion
2 teaspoons toasted sesame seeds (see note)
4 cups fresh spinach, washed, dried and torn in small pieces

Steps:

  • Combine dressing ingredients (oil through black pepper) in a jar, shaking to combine (or whisk together in a small bowl).
  • Cook tortellini according to package directions, being sure not to overcook. Drain and transfer to a large serving bowl.
  • Stir the bell pepper, tomato and onion with the tortellini. Pour half of the dressing over and toss well.
  • Let marinate for at least 30 minutes, or up to 8 hours. (Cover and chill if longer than 1 hour. Bring to room temperature before serving.).
  • Just before serving, stir the spinach into the tortellini mixture. Pour on the remaining dressing and toss well. Sprinkle on the sesame seeds and toss again.
  • *Note: To toast sesame seeds, place in a small, dry skillet and toast over medium heat until they begin to pop and smoke slightly, about 3 minutes. Let cool. Be careful not to burn them!

  • Heat a large pot of water and cook the cheese tortellini to package directions. I like to prepare the pesto while the pasta is boiling to save a little time.
  • Toss the pasta with ½ the pesto, tomatoes, mozzarella, and a handful of parmesan cheese. Adjust with additional pesto to preference. I find I needed all of the pesto for the recipe. Sometimes I like to add in another couple tablespoons of olive oil to help things blend together better. Season with salt and pepper to taste. Top with chopped basil before serving!
  • Add all the ingredients for the pesto except the olive oil to a food processor. Pulse the food processor 5-10 times or until the ingredients breakdown. Stream in ½ cup of olive oil from the top while you continue to pulse. Stop the food processor and scrape down the sides. If the pesto is too thick, use the remaining 2 tablespoon of olive oil. I find I need it sometimes when I pack the cups of spinach full. Season the pesto with ¼ teaspoon of salt, and adjust to preference.
