ZUCCHINI-TORTILLA CASSEROLE (PASTEL AZTECA)



Zucchini-Tortilla Casserole (Pastel Azteca) image

Vegetable oil, for frying
12 corn tortillas
2 tablespoons vegetable oil
2 cloves garlic, chopped
1 small white onion, chopped
2 large tomatoes, boiled 30 seconds, peeled, and pureed (to yield 2 cups)
3 tablespoons unsalted butter
4 1/2 cups chopped zucchini (from 3 large zucchini)
1 1/2 cup fresh corn off the cob (from 1 ear)
3 poblano chiles charred, seeded, deveined, and chopped
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Nonstick cooking spray
3 cups shredded Oaxaca cheese, or Monterey Jack
3/4 cup Mexican crema or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large heavy saute pan, add enough oil to come 2 inches up the sides of the pan. Heat the oil on medium-high heat. When hot, work in batches and quickly fry the tortillas for about 10 seconds on each side (they should still be pliable). Remove the tortillas from the heat and drain on a paper-towel-lined plate.
  • In a medium saute pan over medium heat, heat 2 tablespoons vegetable oil and add the garlic and onion. Saute until the onion is translucent, about 3 minutes. Add the tomato puree. Cook for 10 minutes and turn the heat off.
  • In a separate large saute pan over medium heat, melt the butter. Add the zucchini and corn. Cook for 2 minutes, and then add the chopped poblano chiles. Add 1/2 cup water to the mixture and cook for 4 more minutes. Season with salt and pepper.
  • Spray a 9-by-13-inch baking dish with a nonstick cooking spray. Cover the bottom with about 4 tortillas. Add 1/2 cup of the tomato mixture on top of the tortillas. Top with 1 1/2 cups of the zucchini mixture. Add 1 cup of the cheese. Drizzle with 1/4 cup of Mexican crema. Sprinkle the first layer with some salt and pepper. Start on the second layer with the tortillas, then the tomato, zucchini, cheese and Mexican crema. Again sprinkle with some salt and pepper. Repeat for a third time, to finish off a third layer. Place the casserole into the oven until the cheese is melted, 10 to 15 minutes. Serve hot.

12 day old tortillas
2 cups prepared salsa (red or green)
2 -3 poblano chiles, roasted peeled, seeded and deveined, sliced in 1/4 inch strips
2 cups refried beans (optional)
1 1/2 cups cream or 1 1/2 cups sour cream
1 1/2 cups shredded cheese
1 1/2 cups ham, 1/4-inch strips
1 1/2 cups chicken, shredded
1 1/2 cups chorizo sausages
1 1/2 cups shredded pork
1 1/2 cups shredded beef
1 1/2 cups fish
avocado
cilantro
green onion (to garnish)

Steps:

  • Quick fry tortillas in oil for 2 to 3 seconds on each side; drain.
  • Line the bottom of a 9-inch square baking pan with 3 tortillas, then start layering sauce, creme cheese, and all of the ingredients. The top will only have sauce, cream and cheese.
  • The ingredients from the refried beans down are all suggestions. You can put in any combination you like of the meats, depending on what you have on hand.
  • Bake in the oven for about 30 minutes at 350°.
  • Garnish with onions, cilantro and avocado.

12 tortillas de maíz (6 pulgs.)
3 cucharadas de aceite, cantidad dividida
1 cebolla, picada, cantidad dividida
2 latas (15 oz cada una) de salsa de tomate (jitomate)
2 cucharaditas de orégano mexicano seco
1-1/2 libra de papas rojas, (unas 5), cocidas, cortadas en cubos de 1/2 pulg. (unas 4 tazas)
1 calabacín (zucchini), picado
1 paquete (10 oz) de granos de elote (maíz) congelados
4 onzas (1/2 pqte. de 8 oz) de queso crema PHILADELPHIA Cream Cheese, en cubitos
1/4 taza de leche
3 tazas de queso estilo mexicano desmenuzado fino de cuatro variedades KRAFT Mexican Style Finely Shredded Four Cheese
1 cucharada de chiles chipotles en adobo picados

Steps:

  • Calienta el horno a 350°F.
  • Calienta una sartén pesada grande a fuego medio-alto. Pincela las tortillas con 2 cdas. de aceite. Agrégalas a la sartén por tandas; cocínalas de 10 a 15 segundos por lado o justo hasta el momento de ablandarse. (No las cocines demasiado. Las tortillas deben quedar todavía flexibles.) Escúrrelas sobre toallas de papel. Corta 6 tortillas por la mitad.
  • Calienta 1 cdta. del resto del aceite en una cacerola mediana a fuego medio. Agrega 1/4 taza de cebollas; cocínalas 3 min. revolviéndolas con frecuencia. Incorpora la salsa de tomate y el orégano; mantén un hervor suave 10 min. mientras revuelves de vez en cuando.
  • Calienta el resto del aceite, mientras tanto, en la sartén grande. Agrega el resto de las cebollas; cocínalas 3 min. revolviéndolas con frecuencia. Agrega las papas, el calabacita y el elote; cocínalos 5 min. revolviéndolos con frecuencia. Agrega el queso crema con la leche; cocínalo revolviéndolo con frecuencia de 3 a 5 min. o hasta que se derrita y se obtenga una salsa bien mezclada. Retíralo del fuego.
  • Rocía un molde para hornear de 13x9 pulgs. con aceite en aerosol; cubre el fondo con 2 tortillas enteras y 4 mitades de tortilla. Ponles encima 1 taza de salsa, 1-1/2 taza de mezcla de papas y 1 taza de queso; repite el procedimiento. Repite las capas de tortilla, salsa y queso; tápalo. Reserva el resto de la salsa más tarde.
  • Hornea el pastel 30 min. o hasta que se termine de calentar. Cocina en el microondas el resto de la salsa y los chiles chipotles en un tazón apto para tal uso a potencia ALTA 2 min. Sirve la salsa con el pastel.

4 (3 ounce) thin-cut beef round steaks
4 Mexican-style sandwich rolls (bolillos)
¼ cup sour cream, divided
1 (15 ounce) can pinto beans - drained, rinsed, and mashed - divided
2 avocados - peeled, pitted and sliced
2 large tomatoes, sliced
2 pickled jalapeno peppers, sliced into quarters lengthwise
2 cups shredded romaine lettuce, divided
1 cup chopped fresh cilantro, divided
1 cup crumbled queso fresco (Mexican fresh cheese), divided
1 lime, quartered

Steps:

  • Heat a large skillet over medium heat, and pan-fry the round steaks 5 minutes on each side, or to desired doneness.
  • Slice the rolls lengthwise. Spread about 1 tablespoon of sour cream onto one side of each roll, and top with about 1/3 cup of mashed pinto beans per sandwich. Place a cooked round steak per sandwich on top of the pinto beans, and then layer each sandwich with one-fourth of the avocado slices, tomato slices, and sliced pickled jalapenos, about 1/2 cup of shredded lettuce, 1/4 cup of cilantro, and 1/4 cup of crumbled queso fresco cheese. Squeeze a lime wedge over each sandwich, close, and serve.
