PEPPERCORN STEAK

Peppercorn Steak image

A twist on the usual steak with peppercorn sauce, this steak is first encrusted in crushed peppercorns and pan-fried, then finished with a creamy peppercorn and brandy cream sauce. This is great for two, or for one hungry person!

Time 20m

Yield 2

Number Of Ingredients 8

1 (12 ounce) top sirloin, rib-eye, or T-bone steak, 1-inch thick
salt to taste
2 tablespoons whole black peppercorns, coarsely ground
oil, or as needed
½ shallot, minced
¼ cup brandy
¼ cup beef stock
¼ cup heavy whipping cream

  • Heat oil in a skillet over high heat. Add steak and cook for 4 minutes on each side. Remove steak and let it rest. Discard oil from the skillet.
  • Return skillet to heat and add shallot. Cook and stir shallot for 1 minute. Pour in brandy. Reduce heat slightly; add stock and heavy cream. Cook until liquid has reduced to a creamy consistency, 3 to 5 minutes. Season with salt. Serve steak with the sauce.

PORCINI-BUTTERED ROAST BEEF SIRLOIN WITH PICKLED PEPPERCORN SAUCE

Porcini-buttered roast beef sirloin with pickled peppercorn sauce image

Carve this rolled sirloin at the Christmas dinner table. The porcini butter adds a fabulous umami note, and pickled peppercorns cut through the creamy sauce

Provided by Anna Glover

Categories     Dinner

Time 1h50m

Yield Serves 6-8

Number Of Ingredients 11

2kg boneless sirloin, rolled and tied
10g dried porcini mushrooms
1 tsp black peppercorns
50g unsalted butter, softened
2 tbsp rapeseed or vegetable oil
6-8 shallots, peeled and trimmed
2 tbsp green peppercorns
4 tbsp sherry vinegar
2 large shallots, finely chopped
250ml beef or vegetable stock
200ml double cream

Steps:

  • The night before, prepare the peppercorns for the sauce. Put the green peppercorns and vinegar in a small bowl, cover and leave at room temperature overnight.
  • The next day, pat the beef dry with kitchen paper, cover loosely, and leave for 1 hr at room temperature - this helps to ensure perfectly cooked meat later. Put the dried porcini mushrooms and black peppercorns in a small blender or spice grinder, and blitz to a powder. Mash with the butter and set aside.
  • Heat the oven to 230C/210C fan/gas 8. Season the sirloin all over with the sea salt. Heat the oil in a flameproof roasting tin or large frying pan over a high heat, and sear the beef, fat-side down, for 5-8 mins until some of the fat has rendered out and turned golden brown, then holding the beef with tongs, sear it on all sides for 2-3 mins until browned all over. Sit the browned beef in the roasting tin fat-side up and spoon out most of the fat (if you have rendered it in the tin). Spoon 2 tbsp of the rendered fat over the beef and reserve any leftover fat for making yorkshires. Arrange the shallots around the beef, turning to coat them in the fat.
  • Roast for 20 mins, then dot the porcini butter all over the beef and reduce the heat to 180C/160C fan/gas 4. Roast for another 40-50 mins for rare to medium-rare, or 1 hr for medium-well. If you have a meat thermometer, it should read 55C for medium-rare, or 65C for well done. Baste the meat in the butter from the tin, then transfer to a warm platter or board with the shallots. Cover and leave to rest for 20 mins.
  • To make the sauce, discard all but 4 tbsp fat from the tin and set the tin over a low heat (or transfer to a pan), and fry the chopped shallots for 6-8 mins until softened and translucent. Strain the pickled peppercorns, reserving the vinegar, and add to the pan along with the stock. Bring to a simmer and cook for 10 mins until reduced by about half, then whisk in the cream. Taste for seasoning, and add the reserved vinegar, 1 tsp at a time, to balance the acidity and creaminess (we used about 5 tsp). Simmer for another 5-6 mins until the sauce has thickened. Pour into a jug. Carve the beef and serve with the roasted shallots and sauce.

BEEF SIRLOIN STEAKS WITH FRESH HERBS (COTES DE BOEUF AUX HERBES)

Beef Sirloin Steaks With Fresh Herbs (Cotes De Boeuf Aux Herbes) image

The top sirloin or rib-eye steak is a great luxury in France and, like the leg of lamb, is often featured at wedding banquets and other festive occasions. From the cookbook "Savoring Provence" and posted for ZWT5.

Categories     Steak

Time 25m

Yield 6 , 6 serving(s)

Number Of Ingredients 12

2 tablespoons unsalted butter
2 tablespoons olive oil
2 sirloin steaks, each about 1 1/2 pounds (thick-cut, bone-in top sirloin)
kosher sea salt, to taste
fresh ground black pepper, to taste
3 tablespoons unsalted butter
4 shallots, finely chopped
1/4 cup beef stock
2 tablespoons green mustard, with herbs or 2 tablespoons Dijon mustard
3 tablespoons chopped mixed fresh flat-leaf parsley, chervil, and tarragon
kosher sea salt, to taste
fresh ground black pepper, to taste

Steps:

  • In a cast-iron frying pan over high heat, melt the butter with the olive oil until the mixture turns a light brown.
  • Add the steaks and sear well, about 1 minute.
  • Turn, sprinkle with sea salt, and brown on the second side for 1 minute more.
  • Turn again, reduce the heat slightly, and cook, turning once, for about 6 minutes on each side for rare, or until done to your liking.
  • Transfer to a platter, tent with aluminum foil, and let rest for 5 to 8 minutes before carving.
  • Meanwhile, make the sauce: In a saucepan over medium heat, melt 2 tablespoons of the butter.
  • Add the shallots and saute until softened but not colored, about 30 seconds.
  • Add the stock, bring to a boil and cook until reduced by half.
  • Remove from the heat and stir in the mustard, the remaining 1 tablespoon of butter, and the herbs.
  • Stir in any juice that has collected on the platter holding the beef.
  • Season with salt and pepper; pour into a warmed bowl.
  • Transfer the steaks to an attractive cutting board and sprinkle them with pepper, then carry the board to the table.
  • Cut along the bone to free the meat then carve in slices diagonally across the grain. Pass the sauce at the table.
