Meat sauce with a wonderful blend of spices to pour over your choice of meat, macaroni salad, or home fries. A Rochester, New York original and a must-have. Add diced onions, ketchup, and mustard if desired.

Steps:
- Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease.
- Transfer the cooked beef to a blender and blend until the meat is finely minced. Bring the minced beef, water, vinegar, paprika, black pepper, chili powder, cayenne pepper, salt, allspice, cloves, cumin, thyme, and cinnamon to a simmer in a saucepan over medium heat; cook for at least 30 minutes, adding water as needed to keep the mixture moist and gravy-like.

Steps:
- Saute the onion and garlic in the oil until soft.
- Add the carrots with a small amount of water.
- Bring to a boil, reduce the heat, and simmer until the carrots are soft.
- Place the chilies, vinegar and lime juice in a blender and blend until peppers are finely minced.
- Add the onion, garlic and carrots and puree the mixture until smooth.
- Return the mixture to the stove and simmer for 5 minutes.
- Strain the mixture into an empty hot sauce bottle. You'll get about 4 ounces.
- This is a fiery hot sauce that you need to use with care.
- Place the ingredients that were strained out into a jar and refrigerate.
- It will have the consistency of finely grated horseradish and the flavor of habanero fruit.
- I love this on just about everything.

Steps:
- Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.
- In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

TOM'S SWEET CHILI SAUCE
Thai Sweet Chili Garlic Sauce which I made with the Recipe #506416. It cost quite a bit to ship; arrived when they were not home; and had to be delivered a second time. Since I only used a scant 1/4 cup relish, I was afraid it would not be hot enough, and I did not want to taste it to check the flavor. It took forever to get there. I was afraid that the Sauce was not worth the effort, so I asked Tom, knowing he would be straightforward with me. This is what he said... Yes it had the right amount of heat; Thank You; it as worth it. Supa and I love it; it was fantastic; it is worth making because it has a different flavor.

Steps:
- In a heavy saucepan, bring vinegar, water, sugar, salt, and corn starch to a rolling boil, reduce heat and simmer for about 30 minutes, or until mixture thickens.
- When mixture is thick, stir in relish, bring up to rolling boil, and boil until mixture reaches 230°F about 2 minutes.
- Stir sauce and pour into hot sterilized jar. Jar will seal.
- Refrigerate after opening. Keeps well for at least a year.
