1 medium onion, chopped (1/2 cup)
1/2 teaspoon salt

3/4 cup uncooked medium-grain white rice
1 cup water
1 medium zucchini, cut into 1/4-inch-thick slices (2 cups)
1 large tomato, chopped (1 cup)
1 can (19 oz) Progresso™ Vegetable Classics tomato basil soup
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Sprinkle with salt and pepper.
  • Place rice and water in baking dish; stir to mix. Layer cooked beef, zucchini and tomato over rice. Pour soup over top. Cut 16x12-inch sheet of foil; spray with cooking spray. Cover dish with foil, sprayed side down.
  • Bake 40 minutes. Uncover dish; sprinkle cheese over top. Bake uncovered 10 to 15 minutes longer or until edges are bubbly and cheese is lightly browned.

1 head green cabbage, shredded
½ cup uncooked long-grain white rice
1 pound ground beef
1 small onion, chopped
1 ½ teaspoons dried oregano
½ teaspoon dried sweet basil
¼ teaspoon garlic powder
¼ teaspoon dried thyme
½ teaspoon salt
½ teaspoon white sugar
¼ teaspoon ground black pepper
1 (28 ounce) can whole tomatoes
10 slices American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread cabbage in the bottom of a 9x13-inch baking dish; sprinkle rice on top.
  • Heat a large skillet over medium heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add onion, oregano, basil, garlic powder, and thyme; cook and stir until onion is transparent, about 5 minutes. Season with sugar, salt, and pepper.
  • Spoon beef mixture over rice and cabbage in the baking dish. Break up tomatoes in the can with your hand; pour over beef mixture. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until rice is tender, about 1 hour 15 minutes. Uncover and arrange American cheese slices over casserole. Let stand until cheese melts and absorbs juices, 15 to 20 minutes.

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).

2 cups shredded cheddar

1/2 cup water

Steps:

  • Cook and drain the pasta according to the package directions.
  • Meanwhile, preheat your oven to 375 degrees and grease and 9x13 baking dish.
  • In a large skillet, brown and chop the ground beef with garlic powder, salt and pepper (or any seasoning of your choice).
  • Add the cooked pasta, tomato soup, a half cup of water and HALF of the cheese to your skillet with the browned beef; stir and cook for 2-3 minutes over medium heat.
  • Pour the mixture into your greased dish and top with the remaining cheese.
  • Cover with foil and bake for 20 minutes. Uncover and continue baking for an additional 10 minutes (I also like to turn the broiler on for the last 2-3 minutes to brown the cheese).

Steps:

1 low-sodium beef bouillon cube
1 cup hot water
1 can (28 ounces) diced tomatoes, undrained
Chopped fresh parsley, optional

Steps:

  • In a Dutch oven, layer half of the meat, potatoes and onion. Sprinkle with half of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. , Cover and cook over medium heat for 45-50 minutes or until potatoes are tender. Garnish with parsley if desired.

1 lb box medium shells
1 lb ground hamburger (, cooked with garlic powder, dried onion, salt and pepper to taste. We use 2 tsp each. )
21.5 oz tomato soup (2 cans)
1 cup cheddar cheese
1 cup mozzarella cheese

Steps:

  • Cook noodles according to package directions. Drain.
  • While cooking the noodles, in a frying pan, cook the hamburger until no longer pink. (If you are using salt and pepper, add it while cooking the hamburger).
  • Pour cooked noodles in a greased 9x13 baking dish.
  • Stir the cooked hamburger and tomato soup with the noodles. I just stir everything in the pan. I also sometimes add 1/2 cup of water to the mixture for a little more moisture. Completely optional.
  • Sprinkle cheese over casserole and cover with foil.
  • Bake in a 375* oven for 20 minutes.
  • Remove foil and bake for 10 minutes longer.
  • Can bake under broiler for 3-5 minutes to brown cheese, if desired.

3 tablespoons chopped flat leaf parsley
1 tablespoon chopped marjoram
1 cup crumbled feta
1 cup day old bread crumbs
1 teaspoon paprika
Serving suggestion: Crusty bread.

Steps:

  • Preheat oven to 400 degrees F.
  • Brush a casserole dish with olive oil. Slice tomatoes evenly 1/8-inch thick and place 1 layer in a 1 1/2-quart casserole. Season with salt and pepper; sprinkle with half of herbs and all of feta.   • In a medium bowl combine the tomatoes and soup and mix together. Set aside.

1 (10.5 ounce) can condensed cream of celery soup, NOT diluted
1 ¼ cups milk
½ teaspoon salt
½ teaspoon dried chives
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups cooked rice ((I use 2 packages (8.8 oz each) of Uncle Ben's Ready Rice microwaved according to package instructions))
2 cups frozen mixed vegetables, thawed ((I use a 10-ounce package))
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal ((about 1 ¾ c. whole cereal before crushing))
2 tablespoons melted butter

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.

1 pound ground beef (80/20 is perfect for this)
1-2 Tablespoons olive oil if necessary, (depends on how fatty your meat is)
1 small-to-medium onion,diced (about 3/4 cup)
3 cloves minced garlic
kosher salt and freshly ground black pepper, to taste
3/4 teaspoon Italian seasoning blend of your choice
1 28 oz can whole tomatoes and their juice
3 oz softened cream cheese, (eyeballing it is fine)
1/2-3/4 cup sour cream, (ditto--a huge serving spoonful will do nicely)
1 pound pasta short pasta of your choice, cooked to al dente (elbows, shells, penne, fusilli, rigatoni, wagon wheels, radiatore, cavatappi, etc)

Steps:

  • Place the ground beef in a heavy skillet to brown, breaking it up with a spatula. If the meat is on the lean side, add a tablespoon or two of olive oil to the pan.
  • Once the meat is about halfway done (some will be browned and some still pink or red), add the onion and garlic.
  • Season liberally with salt and pepper.
  • Cook until onions and garlic are softened and meat is completely cooked.
  • Add the tomatoes and softened cream cheese
  • Stir around so the cream cheese melts evenly into the tomatoes.
  • Let simmer for about ten minutes or so.
  • With the heat on low, stir in the sour cream.
  • Taste and adjust the seasonings.
  • Fold the sauce into your freshly drained pasta.
  • Serve as-is or spoon into individual ramekins or a big old casserole.
  • Bake at 350F until the pasta on top has a bit of crunch to it and the casserole is bubbling all around the sides.
  • Let sit for ten minutes before serving.

  • Slice the onion, into rounds, then into quarters.
  • Place the mushroom soup in a medium size mixing bowl.
  • Add the milk.
  • Add the salt.
  • Add the pepper.
  • Mix well and set mixture aside.
  • Rinse and slice the potatoes into 1/8 inch thick slices.
  • Place a layer of potatoes in the casserole dish.
  • Add a layer of the beef.
  • Add a layer of onions.
  • Add a layer of soup mixture.
  • Add layer of cheese. Reserve ½ cup of cheese for topping later.
  • Repeat the layering process ending with the soup mixture.
  • Cover with aluminum foil and bake at 350F degrees for 1 hour and 30 minutes.
  • Remove foil, sprinkle top with remaining cheese.
  • Bake uncovered for another 15 minutes or until potatoes are fork tender.
  • Remove from oven, place on wire rack, let cool for 10 minutes.
