ROASTED CAPRESE TOMATOES WITH BASIL DRESSING
Roasted Caprese tomatoes with creamy mozzarella and fresh basil is a delicious and easy side dish recipe and perfect as a Summer appetizer served with crusty bread.

Steps:
- Pre-heat the oven to 180°C/350°F.
- Halve the tomatoes and place on a non-stick baking sheet, cut side up.
- Drizzle over the olive oil and Balsamic and season with salt and pepper then top the 4 bottom halves with the mozzarella and basil leaves. Add the tops of the tomatoes.
- Roast for 20-25 minutes until the skins are blistered and the tomatoes are soft.
- To make the dressing, blitz all the ingredients in a small food processor until the basil is finely chopped.
- Serve the tomatoes drizzled with the dressing with crusty bread.

- Cut tomatoes into quarters; puree in a food processor. Pass through a strainer into a bowl; discard seeds and skin.
- Using a rubber spatula, press cottage cheese through a strainer into tomatoes. Add remaining ingredients; whisk to combine. Refrigerate until ready to use.

- Place the tomato wedges in a serving dish, and sprinkle lightly with the salt and pepper.
- Pour the warm dressing over the tomatoes, add the parsley, and toss well to coat. Serve immediately.

- Heat oil in a medium skillet on medium heat. Add tomatoes, and cook, swirling pan often, until skins are blistered, about 5 minutes.
- Stir in garlic, red wine, and balsamic vinegar, and cook until liquid reduces by half and tomatoes are soft, about 5 minutes. Stir in sugar, salt, and red-wine vinegar, and cook for 1 minute. Serve immediately, or cover, and refrigerate for up to 2 days. (Warm over low heat before using.)
