Saw this on the Food Network. It's a great side dish for anything from Jamaican Jerk Flank Steak, pork, chicken, beef etc. You whip this up in no time.

2 -3 ripe beefsteak tomatoes, sliced
1/2 cup fresh basil leaf
2 teaspoons balsamic vinegar (preferably aged)
2 teaspoons olive oil
salt & fresh ground pepper (to taste)

Steps:

  • Arrange tomato slices on a plate.
  • Layer with basil leaves.
  • Drizzle vinegar and oil. Sprinkle salt and black pepper over top.

If you love tomatoes like I do, then you may enjoy this recipe. It's a quick side dish/plate filler that doesn't have too many ingredients, it's healthy and tastes nice. Original recipe calls for Roma and Plum tomatoes but I use what is in season. This recipe comes from a book called "Purely Golden Door" by The Golden Door Health Retreats.

6 roma tomatoes or 6 plum tomatoes, halved
1 tablespoon balsamic vinegar
2 tablespoons fresh basil, chopped
salt (to taste)
black pepper, freshly cracked (to taste)

Steps:

  • Preheat the oven at 180oC/350oF/Gas 4.
  • Place tomatoes on oven tray with the cut side facing down.
  • Dash over the balsamic vinegar, basil, salt, black pepper to taste.
  • Bake for about 15 minutes for semi firm (still holding shape) and 30 minutes for well done (extra soft).

All you need for this rendition of a classic tomato-mozzarella salad is fresh seasonal tomatoes, a drizzle of aged balsamic vinegar, and a little extra-virgin olive oil and some fresh basil.

1 medium or large tomato, cut crosswise into 1/4-inch thick slices
2 ounces fresh burratta, cut crosswise into 1/2-inch slices
Salt and freshly ground pepper
1 thin slice prosciutto
1/2 teaspoon aged balsamic vinegar,* or Balsamic Reduction, recipe follows
2 teaspoons extra-virgin olive oil
3 to 4 leaves fresh basil, slivered
Storebought breadsticks, for serving

Steps:

  • Arrange the tomato slices and burratta, seasoning each slice of tomato with salt and pepper, and ending with a tomato slice. Top with prosciutto. Drizzle on the balsamic vinegar and the oil just before serving and sprinkle with basil. Garnish with storebought breadsticks or make your own.
  • Balsamic Reduction: *If you don't have aged balsamic vinegar, you can reduce ordinary balsamic and give it a similar sweet flavor of aged balsamic. 1 cup balsamic vinegar Bring the vinegar to a boil in a small saucepan over medium heat. Turn the heat to low and reduce to 1/3 to 1/2 cup. Remove from the heat. The vinegar will thicken as it cools. Store in an airtight container in the refrigerator. Yield: 1/3 to 1/2 cup
