SWEET AND SPICY CANNED ONION MARMALADE
Canned* sweet & spicy onion marmalade is perfect for meat glazes, toppings and great for appetizer platters with or without cream cheese.

Steps:
- Prepare waterbath canner, 6 half pint jars & lids, keeping warm until needed.
- Cut ends off onions and peel; slice in half and cut each in half again, lengthwise (or in thirds if onions are big). Turn halves and cut into 1/4 inch slices widthwise (as pictured in tutorial). Place slices in an 8 quart measuring cup - you should have 6 cups of onion slices.
- Add prepared onions, apple juice, vinegar, garlic, salt, pepper, mustard and red pepper flakes to an 8 quart stockpot. Gradually stir in pectin and then add butter if using. Bring to a boil that can't be stirred down over high heat, stirring constantly.
- Add honey and sugar; return to a full boil and let boil for 1 minute, stirring constantly. Remove from heat (skim foam if needed).
- Ladle hot marmalade into prepared half pint jars one at a time, leaving 1/4-inch headspace. Wipe rims, attach lids, and place in canner.
- Place lid on canner and bring to a gentle, steady boil - process for 10 minutes, maintaining steady boil the entire time. Turn off heat, and let jars cool in canner 5 minutes before removing jars to a towel lined surface to cool for 24 hours. Check lids for seal before labeling and storing in a cool, dark place (with rings removed).

TOMATO-SWEET ONION MARMALADE
This marmalade accompanies chef Ben Ford's recipe for Polenta Fries.

- Bring a large pot of water to a boil over high heat. Prepare an ice-water bath; set aside. Using a small sharp knife cut an "X" in the core of each tomato. Place tomatoes in boiling water and cook until skins begin to split, 30 to 60 seconds. Drain and immediately transfer to ice-water bath. Peel tomatoes and coarsely chop; set aside.
- Heat oil in a medium skillet over medium-high heat. Add onions and cook, stirring, until lightly browned, 2 to 3 minutes. Reduce heat to low and continue cooking until onions are softened, about 5 minutes more. Add chopped tomatoes, lemon zest, lemon juice, vinegar, brown sugar, and 2 tablespoons water to skillet. Cook, stirring occasionally, until thickened, 2 to 3 minutes. Remove from heat and transfer to a medium bowl. Refrigerate until chilled.
TOMATO ORANGE MARMALADE
Steps:
- If desired, sterilize jars , lids, and screw bands.
- Chill 2 small plates (for testing marmalade).
- Cook all ingredients, including reserved juices from tomatoes, in pot over moderate heat, stirring frequently, until sugar is dissolved, about 6 minutes. Simmer, stirring frequently as marmalade thickens (to prevent scorching) and adjusting heat as needed, until marmalade tests done, 50 minutes to 1 1/4 hours. Begin testing for doneness after 50 minutes: Drop a spoonful of marmalade on a chilled plate, then tilt; it should remain in a mound and not run (if necessary, remove pot of marmalade from heat while testing).
- If not processing, cool marmalade, uncovered, then chill in an airtight container (preferably glass).
- If processing, drain jars upside down on a clean kitchen towel 1 minute, then invert. Ladle marmalade into jars, leaving 1/4 inch of space at top. Run a thin knife between marmalade and jar to eliminate air bubbles.
- Seal, process, and store filled jars (and boil marmalade in jars 10 minutes).
- Let marmalade stand in jars at least 1 day for flavors to develop.
TOMATO-ONION MARMALADE

- Heat oil in medium saucepan over medium heat. Add onions and saute until translucent, about 3 minutes. Add tomatoes, orange juice, zest and sugar, and reduce, stirring occasionally, until mixture forms thick paste, about 25 minutes. Season with salt and pepper to taste. Serve at room temperature with grilled meat, fish or sandwiches. Keeps for 2 days in refrigerator.

- REMOVE peel from tomatoes and cut in small pieces.
- Slice oranges and lemons very thin and quarter the slices.
- Pour off juice from the tomatoes.
- Add sugar.
- Stir until the sugar is dissolved.
- Add oranges, lemons, and spices which have been tied loosely in cheesecloth bag.
- Place mixture over high heat and boil rapidly, stirring often.
- Cook until clear and thick (about 50 minutes).
- Pour into sterilized jars to within 1/2 inch of top.
- Put on cap, screw band firmly tight.
- Process in Boiling Water Bath 10 minutes.

- Bring milk and chicken stock to a boil in a large saucepan. Slowly stir in polenta; stir in 1 teaspoon salt and reduce heat to a simmer. Cook, stirring, until polenta thickens and begins to pull away from sides of pan, about 5 minutes. Stir in cheese and season with salt and pepper.
- Remove from heat and spread polenta in an even layer on a rimmed baking sheet. Transfer to refrigerator until chilled, about 2 hours.
- Remove polenta from refrigerator and cut into 4 1/2-inch long, 1/2-inch-wide strips to create "fries." Place flour in a shallow dish; season with salt and pepper. Heat clarified butter in a cast-iron skillet until it reaches 365 degrees on a deep-fry thermometer. Working in batches, dredge polenta fries in seasoned flour and add to butter. Cook until golden brown and crisp on all sides, about 15 seconds per side. Transfer to a paper towel-lined plate to drain. Sprinkle with rosemary, sea salt, and pepper before serving with marmalade.
FRESH TOMATO AND CARAMELIZED ONION JAM RECIPE

- Melt butter in a 3-quart stainless-steel saucepan or saucier or a 4- or 5-quart enameled Dutch oven over high heat. Add onions and cook, stirring frequently, until bottom of saucepan is glazed in a pale brown fond, about 5 minutes. Add 2 tablespoons water and scrape up fond with wooden spoon. Continue to cook, stirring frequently, until fond has built up again, about 2 minutes longer. Add 2 more tablespoons water and scrape up browned bits. Repeat cooking, adding water, and scraping until onions are completely softened and a deep, dark brown, about 15 minutes total.
- Add tomatoes, white sugar, brown sugar, lemon juice, vinegar, salt, and red pepper flakes in with the onions; stir to combine. Bring mixture to a boil, then reduce heat and simmer, stirring occasionally, until tomatoes have broken down and jam has thickened and developed a jammy consistency, 1 to 1 1/2 hours. Remove from heat. Transfer jam to an airtight container and store in refrigerator for up to 2 weeks.
