Pumpkin Spice Muffins image

If you like a moist, sweet muffin rich with cinnamon and nutmeg, then look no further. This recipe is from The WEBB Cooks, articles and recipes by Robin Webb, courtesy of the American Diabetes Association.

2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 eggs, beaten
1 cup pumpkin puree
¼ cup white sugar
2 cups unsweetened applesauce
2 tablespoons vegetable oil
1 teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix together flour, baking powder, baking soda, cinnamon and nutmeg; set aside.
  • In a large bowl, combine eggs, pumpkin, sugar, applesauce, vegetable oil, and almond extract. Slowly add the flour mixture to the large bowl until just blended. Do not over beat. Pour the batter into 18 nonstick muffin cups.
  • Bake for 25 to 30 minutes. Remove muffins from the oven, and let cool slightly. Remove the muffins from the pan, and let cool completely.

Number Of Ingredients 13

1-3/4 cups all-purpose flour
1/3 cup grated Parmesan cheese
2 tablespoons sugar
2 teaspoons baking powder
1/4 to 1/2 teaspoon dried rosemary, crushed
1/4 teaspoon baking soda
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 egg
1/2 cup milk
1/2 cup tomato sauce
1/3 cup vegetable oil
Additional Parmesan cheese, optional

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat egg. Add milk, tomato sauce and oil; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper-lined miniature muffin cups two-thirds full. Sprinkle with Parmesan cheese if desired. Bake at 375° for 10-12 minutes or until muffins test done.

1 (10.75 ounce) can tomato soup (such as Campbell's®)
½ cup milk
3 eggs
¼ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch cake pan and set aside.
  • Whisk cake mix, tomato soup, milk, eggs. and cinnamon together in a bowl until well combined. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 28 to 33 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

4 cups all-purpose flour
2-1/2 cups sugar
2 teaspoons ground cinnamon
1-1/4 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1/4 teaspoon pepper
2 eggs
1/2 cup butter, melted and cooled
2 teaspoons vanilla extract
5 cups seeded quartered tomatoes (about 6 medium)
1 cup raisins

Steps:

  • In a large bowl, combine the first nine ingredients; set aside. In a food processor, combine the eggs, butter, vanilla and tomatoes; cover and process until tomatoes are finely chopped. Add to dry ingredients; stir just until moistened. Fold in raisins., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1 1/2 cup gram flour (besan)
1/2 cup tomato puree
4 Numbers cherry tomatoes
4 tablespoon vegetable oil
1 teaspoon baking soda
5 Numbers spring onions
1 cup water
1 teaspoon salt
0 As required black pepper powdered

Steps:

  • To prepare this savoury muffins recipe, mix together salt, gram flour, baking soda, black pepper, and 3 ½ tablespoons of oil in a deep bowl. Next, wash the cherry tomatoes in running water and finely chop them in a bowl. Now, finely chop the spring onions in a separate bow and keep both bowls aside till required.
  • Take another bowl and strain the mixture into a bowl and discard the seeds. Now, using your finger, make a well in the centre of gram flour mixture and pour in the tomato puree along with water. Whisk the mixture until smooth and then add chopped spring onions. Mix well once again to make a fine batter for the muffins.
  • Take muffin cups and grease them with the remaining oil. Pour in the equal amount of the prepared mixture in to them. Meanwhile, pre-heat the oven at 200 degree Celsius.
  • Top all the muffin cups with the finely chopped cherry tomatoes and line them in a baking tray. Now, place this baking tray in the pre-heated oven and bake the muffins for about 25 minutes until they are slightly brown in colour.
  • When done, remove the tray from the oven and let these baked muffins cool slightly. Enjoy them warm with your choice of sauce!
