MAMA'S BEST BROILED TOMATO SANDWICH
A broiled sandwich, made of fresh seasoned tomatoes, with an Italian taste. A perfect match for soup.

Steps:
- Preheat oven to broil.
- In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
- Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
- Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

SIMPLE TOMATO SANDWICH
I am only posting such a simple recipe because I actually somehow lived 29 years of life before my husband introduced me to the Tomato Sandwich. If you've only used tomatoes as an accessory in your sandwiches, and not as the Featured Ingredient, you are truly missing summer as it was meant to be tasted. Note: after many years, I have solidly converted to mayo for this sandwich, with fresh ground black pepper too. (Oct 2012)

PLT - PANCETTA, LETTUCE AND TOMATO SANDWICH

- Before putting together sandwich, make a plate of arugula and sliced tomatoes and set aside with unsalted butter.
- Butter 1 side of each bread slice, then put 4 slices, buttered side down, on a work surface. Top the bread slices with the pancetta, distributing it evenly. Top each with a second slice of bread, buttered side up.
- Heat a cast iron skillet or grill pan until hot. Place the sandwiches in the skillet and top with a weight, such as another skillet. Cook until nicely browned, 2 to 3 minutes, then turn the sandwiches and replace the weight. Cook until the second side is well browned, about 2 minutes.
- Transfer the sandwiches to a work surface and remove the top slice of bread from each sandwich. Spread the underside of those slices with the basil mayonnaise. Top the pancetta with the tomato slices, pepper to taste, and arugula leaves. Replace the top slice of bread, cut the sandwiches in half, and serve immediately.
- Take the roll of pancetta, and dice into about 1-inch cubes. Drizzle some olive oil into a saute pan on medium heat. Add pancetta to heated oil and cook until crispy. Pour the cooked cubes with fat, into a bowl and allow to cool.
- Place basil leaves in blender and puree until almost fine. Add mayonnaise to blender and season with freshly ground black pepper, to taste. Puree together until smooth.
ITALIAN TOMATO SALAD (MARINATED TOMATO SALAD)

- Slice the tomatoes into slices about 1/3 of an inch thick and arrange on a platter with a rim in a single layer.
- Whisk together the olive oil, red wine vinegar, lemon juice, minced red onion, diced basil and parsley, crushed garlic and sea salt to make the marinade.
- Pour the marinade evenly over the tomatoes ensuring that they are all covered in marinade and that the herbs and onion are spread out across the top of the tomatoes.
- Place the platter in the fridge and let sit for at least an hour so that the tomatoes can absorb the marinade.
- Garnish with fresh ground pepper when ready to serve.

- All ingredients in this recipe are to taste.
- Assume that each person will eat at least a half loaf sandwich.
- Build these sandwiches immediately before serving.
- Slice tomatoes to 1/4 or 1/2 inch slices.
- Crush lots of fresh garlic cloves.
- Chop some basil leaves leave some whole for decoration.
- Cut loaf of Italian bread in half crosswise.
- Slice each half loaf lengthwise but NOT all the way through as you would for a sub sandwich.
- Open each half loaf flat.
- Drizzle a good amount of olive oil on both sides of the loaf.
- Spread fresh garlic (to taste) on bottom of loaf.
- Spread some chopped basil (to taste) on bottom of loaf.
- Lay tomato slices on bottom of loaf slightly overlapping.
- Add more garlic if desired.
- Salt and pepper to taste.
- Add some whole basil leaves for decoration.
- Serve open for eye appeal.
GRILLED BACON-TOMATO SANDWICHES

- Top 2 slices of bread with a slice of cheese each; layer each with 2 tomato slices, 2 bacon strips, half of the basil and another cheese slice. Top with remaining bread. Brush dressing over outside of sandwiches.
- In a large skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.
