TOMATO SAMMY/SANDWICHES
I love tomato sandwiches in the summer, so I came up with this caprese-type sandwich to serve for lunch one day.

Steps:
- Whisk together olive oil and vinegar. Marinate tomatoes in the dressing, stirring occasionally.
- Combine mayonnaise, black pepper and 3 teaspoons Parmesan cheese. Spread the mixture on each slice of toasted bread. Sprinkle fresh basil over two slices.
- Place marinated tomatoes on the same two slices.
- Sprinkle all four slices of bread with remaining Parmesan cheese.
- Place on a baking sheet and broil for 5-6 minutes, or until cheese turns golden brown. Place one half on top of the other to form a sandwich, and serve hot.

- Spread four slices of bread with half of the mayonnaise. Top with tomatoes; season with salt and pepper. Spread remaining mayonnaise over remaining bread; close sandwiches.

Tastes like summer! Room temperature tomatoes are key here and once the salt and pepper hit them, the juices start flowing. When the juicy tomatoes blend in with the mayonnaise, it makes a delicious, creamy, slightly tangy, and flavorful sauce. The bread becomes slightly soggy, in the best way possible. The last bite is even better than the first!

- Spread 1 to 2 tablespoons mayonnaise (depending on taste) evenly over both slices of bread. Place two slices of tomato on one slice of bread and sprinkle with half of the salt and pepper.
