Steps:
- In a large pot with boiling salted water cook radiatore pasta until al dente. Drain.
- Meanwhile, combine chopped onion, bell pepper, olives, tomatoes, and green chilies in a large bowl.
- In a small bowl, whisk together vinegar, cilantro, garlic salt, lemon juice, vegetable oil, sugar and chili powder.
- Mix cooked pasta with vegetables. Toss with cilantro dressing and serve.

TOMATO-BASIL PASTA SALAD
I got the basis for this recipe from my cousin's wife, who absolutely adores the taste of fresh basil! This is a great, simple summer pasta salad, with a nice light blend of flavors. FRESH basil is a must on this one!! This salad is great alongside BBQ chicken. Easy, and yummy!! Prep. time includes marinating time.

Steps:
- Mix together the tomatoes, garlic, salt, pepper, olive oil, and basil.
- Refrigerate 2 hours.
- Meanwhile, cook pasta according to package directions, and rinse under cold water; drain.
- Mix pasta with tomato mixture until well-combined.
- Sprinkle with Parmesan cheese.
- Serve with additional Parmesan, if desired.
TOMATO-SALSA PASTA SALAD

- Combine tomatoes, jalapeno, lime juice, onion, and oil in a large bowl. Sprinkle with 1 1/2 teaspoons salt. Let stand at room temperature until tomatoes release their juices, about 1 hour. Toss with half the cilantro.
- Bring a large pot of salted water to a boil. Add pasta, and cook until al dente, about 8 minutes. Drain, and rinse with cold water.
- Toss pasta with tomato mixture. Stir in remaining cilantro, and adjust seasoning with salt, pepper, and lime juice. Serve immediately.

- Finely chop the tomatoes and coriander (stalks and all) and place into a large bowl.
- Peel and finely chop the onion, deseed and finely chop the chillies, then scrape into the bowl. Peel and finely grate in the garlic.

- Prepare Italian Dressing according to directions. Refrigerate until ready to use then shake or whisk to recombine before using.
- Cook tortellini in salted water according to package directions. Rinse with cool water, drain and add to a large serving bowl. Pour half of the dressing over the warm pasta and toss to combine. Add the remaining salad ingredients to the tortellini.
- If serving within the hour: toss with desired amount of remaining dressing. Although you can serve salad immediately, I highly recommend refrigerating for at least 30 minutes for the flavors to meld and salad to chill.
