Tomato Salad With Turkish Tahini Dressing image

If tomatoes are unavailable, use this popular Turkish dressing with steamed vegetables or a green salad.

Yield Serves four to six (the recipe makes about 2/3 cup dressing)

Number Of Ingredients 9

1 1/2 pounds tomatoes, or a mixture of red and green tomatoes, cored and sliced
4 tablespoons sesame tahini
1/3 cup water
2 tablespoons freshly squeezed lemon juice
1 to 2 garlic cloves
Salt to taste
1/2 teaspoon cumin seeds, lightly toasted and ground
Freshly ground pepper or Aleppo pepper to taste
1 to 2 tablespoons chopped flat-leaf parsley

Steps:

  • Arrange the sliced tomatoes on a platter.
  • Mix together the tahini, water and lemon juice. Combine the garlic with 1/4 teaspoon salt in a mortar and pestle, and mash to a paste. Stir into the tahini mixture. Add the cumin, then salt and pepper (or Aleppo pepper) to taste. Thin out with water if the dressing is too thick to pour. Drizzle over the sliced tomatoes, sprinkle on the parsley and serve.

A Middle Eastern salad drizzled with lemon tahini dressing.

3 tomatoes
1 cucumber (optional)
½ tablespoon parsley (chopped)
2 tablespoons tahini paste
2 tablespoon lemon juice
2 teaspoons water (cold)
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • In a bowl, mix all the ingredients together. The tahini mixture will become watery, then it will shrink, and then again it will become a bit loose while you mix. If your tahini dressing is too thick, add a little bit of cold water and mix again. Adjust ingredients to your liking.
  • Chop the tomatoes and the cucumber into cubes. Add the tahini dressing and mix the salad.
  • Sprinkle with chopped parsley and serve.

This is a recipe I learned from my Middle Eastern husband. It is a delicious way to get those very valuable brightly-colored veggies, and at the same time have a little fun. This side salad goes nicely with any main dish.

2 pickle-size Persian cucumbers, diced
1 large tomato, diced
3 radishes, diced
1 green onion, sliced
10 mint leaves, sliced
⅓ bunch parsley, chopped
1 clove garlic, minced
¾ cup tahini
¼ cup lemon juice
2 tablespoons olive oil
Salt, to taste

Steps:

  • Combine the cucumber, tomato, and radish in a bowl with the green onion, mint, and parsley. In a small bowl, stir together the garlic, tahini, lemon juice, and olive oil until smooth; season to taste with salt.
  • Toss the vegetables with the dressing until combined. Cover, and refrigerate for 30 minutes before serving.

1 teaspoon salt
1 cup finely diced tomato

2 tablespoons olive oil, or more to taste
1 tablespoon fresh lemon juice, or more to taste
salt and ground black pepper to taste

Steps:

  • Place diced cucumber into a colander and sprinkle with 1 teaspoon salt or as needed; allow to drain for about 15 minutes. Toss drained cucumber with tomato, sweet onion, parsley, and mint. Drizzle salad with olive oil and fresh lemon juice and season with salt and black pepper. Serve immediately.

3 tomatoes
1 large cucumber
2 garlic cloves, crushed
2 lemons, juice of
1/2 cup tahini
2 tablespoons olive oil
salt

Steps:

  • Wash and dice tomatoes. You can leave the skin on the cucumber if you prefer, it adds a little color and crunch. Dice the cucumber as well.
  • Mix the tahini with garlic, lemon juice,salt, and pepper. You can add a little water to make a thick sauce.
  • Add the tahini mix with the tomatoes and cucumbers and mix well.
  • Pour olive oil over salad and garnish with dried mint.

1 Lime Tahini Sauce recipe,
1/2 large English cucumber ((seeded and diced into small cubes))
1 to 2 tomatoes ((vine-ripe, diced into small cubes))
1 small jalapeno pepper ((chopped, remove the seeds for less spicy))
1/2 tsp Aleppo pepper ((optional))
Kosher salt ((to taste))
lime juice ((if needed))

Steps:

  • For the dressing, make my lime tahini sauce recipe by blending tahini paste, lime juice, water, kosher salt together, then stir in a good cup of parsley. You can do this one night ahead of time and save it covered in the fridge. (If the tahini sauce becomes thicker as it sits in the fridge, you can stir in more lime juice or water to loosen it).
  • To make the salad, in a medium mixing bowl, combine the tahini sauce with the diced cucumbers, tomatoes, and jalapeno. Add the Aleppo-style pepper, if using. Mix well. Taste and add salt to your liking. And if needed, add more lime juice.

  • In a large saucepan,heat more olive oil ,add onion, cook, stirring until beginning to brown 6-7 minutes.
  • Add ginger,garlic and spices, cook, stirring until fragrant.
  • Add chopped tomatoes, tomato paste, tahini, rose water and water, simmer for 10-15 minutes over medium heat.
  • Add chicken and fresh parsley, simmer for 20 minutes over medium heat.
  • Enjoy with naan bread, Basmati rice such as Recipe #206772 or pita bread and a green salad.
