1/4 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup uncooked converted long-grain rice
1 cup half-and-half
1 (10 3/4-oz.) can condensed tomato soup with roasted garlic and herbs
1 (14.5-oz.) can diced tomatoes with roasted garlic, undrained
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. In medium bowl, combine ground beef, onion, salt and pepper; mix well. Shape mixture into 12 meatballs; place in sprayed baking dish.
  • In medium bowl, combine all remaining ingredients except parsley; mix well. Pour over meatballs. Cover tightly with foil.
  • Bake at 350°F. for 1 1/2 hours or until rice is tender. Let stand 10 minutes before serving. Sprinkle with parsley.

1 pound ground beef
1 cup instant rice
1 white onion, chopped
1 egg
1 (28 ounce) can tomato sauce
28 fluid ounces water

Steps:

  • Mix ground beef, rice, onion, and egg together in a bowl with your hands; shape into tennis-ball sized balls.
  • Stir tomato sauce and water together in a large pot; bring too a boil. Gently lie meatballs into the sauce, place cover on the pot, and reduce heat to medium-low.
  • Cook until meatballs are no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
  • Put meatballs on a plate, cut each into halves, and ladle sauce over the meatballs to serve.

1 14.5-oz Muir Glen™ organic fire roasted diced tomatoes
1 garlic clove
1 1/2 cups water
1 tablespoon olive oil
1 serrano pepper, cut in half lengthwise
1 lb ground beef
1/3 cup yellow onion, finely chopped
1/2 teaspoon ground black pepper
1 tablespoon salt
1 egg
1/2 tablespoon Worcestershire sauce
3/4 cup cooked rice
1/8 cup Progresso™ Plain Bread Crumbs
1/2 of 9-oz package frozen chopped spinach

Steps:

  • In a blender, mix the contents of the can of tomatoes, clove of garlic and water.
  • Heat the oil over low heat in a pot. Add the tomato blend and serrano pepper and bring to a boil. Reduce to low heat.
  • While the sauce cooks, mix the ground beef, onion, pepper, salt, egg, Worcestershire sauce, cooked rice and breadcrumbs to form a uniform mass. Grab some of the meat with your fingers, and use your hands to make a ball about 1-inch in diameter.
  • Carefully set the meatball in the tomato sauce. Repeat, making meatballs until you've used all the meat. Add the chopped spinach to the sauce.
  • Increase the temperature to bring the sauce back to a boil. Cover and reduce heat to medium-high so that the tomato sauce gently boils. Cook the meatballs for 25 minutes.
  • Serve immediately with beans and tortillas.

1 small onion (, finely chopped (about 3/4 cup))
4 cloves garlic (, pressed or minced)
1 28- ounce can crushed or puréed tomatoes
1 6- ounce can tomato paste
2 tablespoons granulated sugar
1 tablespoon dried oregano
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
1 pound ground chuck beef
1 large egg (, lightly beaten)
1/3 cup Italian-seasoned bread crumbs
2 teaspoons dried oregano
2 teaspoons dried mint
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
12 ounces tube pasta (, (such as penne or ziti))

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until it begins to brown, about 10 minutes. Lower the heat to medium-low and cook to deepen the color for more flavor.
  • Add the garlic and cook until fragrant, about 1 minute, stirring constantly.

These might have a funny name, but porcupine meatballs are simply delicious beef meatballs made with white rice, slowly cooked in tomato sauce.

½ cup long grain rice
½ cup hot water
1 lb lean Ground Beef, (I used 80/20)
½ cup finely diced yellow onion
2 cloves garlic (minced)
1 tablespoon dry parsley ((or 2 T. fresh parsley))
½ teaspoon black pepper
¾ teaspoon kosher salt
⅛ teaspoon cayenne ((optional))
1 can (15-oz) diced tomatoes
1 can (15-oz) tomato sauce
1 tablespoon all-purpose flour
2 tablespoons water
½ cup finely diced yellow onion
1 clove garlic (minced)
¾ cup diced green pepper
1 tablespoons worcestershire sauce
2 tablespoons sugar
½ teaspoon celery seed
½ teaspoon kosher salt (SEE NOTE BELOW)
Flat leaf parsley for garnish, if desired

Steps:

  • In a medium bowl, combine rice and hot water. Let sit for 20 to 25 minutes.
  • Heat oven to 375°F.
  • While rice soaks, in a large bowl combine the ground beef, onion, garlic, parsley, pepper, salt and cayenne. When rice has soaked 20 minutes add the rice and the water. Mix until everything is evenly distributed.
  • Form mixture into 10 meatballs (they will be about ⅓ cup each). Place the meatballs in a 3-qt or 9-by-13-inch baking dish. Set aside while you make the sauce.
  • In a separate bowl combine diced tomatoes and tomato sauce. Stir together the water and flour and add to tomatoes. Stir in onion, garlic, green pepper, and Worcestershire. Add the sugar, celery seed and salt.
  • Pour the tomato sauce around the meatballs and cover the dish tightly with foil. Bake for 1 hr, then remove the foil and bake until the tops are just browning, 20 to 25 minutes more.
  • Garnish with chopped parsley if desired and serve.

1 can crushed tomatoes (28 ounce can)
1 can tomato sauce (14 ounce can)
1 teaspoon Italian seasoning
1/2 cup water
pinch sugar
1 pound ground beef
¼ pound mild Italian sausage
½ cup rice
1 teaspoon salt (IF your Italian seasoning does not have salt in it)
¼ cup onion (chopped)
¼ cup green pepper (chopped)
2 teaspoons Italian seasoning

Steps:

  • In large pot or Dutch oven, combine tomato sauce, crushed tomatoes, and water. Add a teaspoon of Italian seasoning and a pinch of sugar.
  • Warm sauce over low heat while you make the meatballs.
  • Mix together meatball ingredients in a large bowl, then form into large balls, about 2 inches in diameter.
  • Gently add the meatballs to the warm tomato sauce. Use a spoon to cover all of the meatballs with sauce.
  • Cook at a low simmer for 1 1/2 to two hours - do not allow the sauce to boil.
  • Remove from heat and let rest for about 15 to 30 minutes before serving.

2 tbsp olive oil
150g/5oz onion, finely chopped
1 clove garlic, crushed
900g/2lb beef mince
2 tbsp freshly chopped herbs, such as marjoram, or 1 tbsp rosemary
1 free-range egg, beaten
3 tbsp olive oil
salt and freshly ground black pepper
3 tbsp olive oil
110g/4oz onion, sliced
1 garlic clove, crushed
150g/5¼oz mozzarella, grated
1 tsp caster sugar
2 x 400g cans tomatoes

Steps:

  • Heat two tablespoons of olive oil in a heavy stainless steel saucepan over a gentle heat and add the onion and garlic. Cover and sweat for four minutes, until soft and a little golden. Allow to cool.
  • In a bowl, mix the minced beef with the cold sweated onion and garlic. Add the herbs and the beaten egg. Season the mixture with salt and pepper.
  • Fry a tiny bit to check the seasoning and adjust if necessary. Divide the mixture into approximately 24 round balls. Cover the meatballs and refrigerate until required.
  • Meanwhile, make the tomato sauce. Heat the oil in a stainless steel saucepan.
  • Add the sliced onion and the crushed garlic, toss until coated, cover, and sweat on a gentle heat until soft and pale golden.
  • Slice the canned tomatoes and add, with all the juice, to the onion mixture.
  • Season the contents with sugar, salt and freshly ground pepper.
  • Cook the tomatoes uncovered for approximately 30 minutes or until the tomato softens (while this is cooking make the meatballs).
  • Heat a frying pan and cook the meatballs for about 10 minutes in about three tablespoons of olive oil.
  • When they are cooked, put them into an ovenproof dish with the tomato sauce and top with the grated mozzarella. Place under a preheated grill until the cheese has melted.
  • Serve with spaghetti.
