Filled with a mozzarella cheese mixture layered in between thick slices of summer tomatoes makes this the best tomato pie. There's no better way to close out summer than making this delicious southern recipe.

1 9-inch pie shell
6 large tomatoes (very ripe)
1 tablespoon kosher salt
8 ounces shredded mozzarella cheese
1/2 cup mayonnaise
1/4 cup fresh basil (chopped)
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350ºF and if making prepare the pie dough.
  • Slice the tomatoes to about 1/4-inch in thickness and arrange them in a single layer on a paper towel-lined baking sheet. Coat the tomatoes in salt and cover again with another layer of paper towels. Let sit for 10 minutes.
  • In a medium bowl combine the shredded cheese, mayonnaise, fresh basil, and spices together until mixed well. Set aside.
  • Place the 9-inch pie shell into your pie dish and arrange a single layer of sliced tomatoes on the bottom. Cover the tomatoes with half of the cheese mixture and repeat this step.
  • Layer the last of the tomato slices on top, overlapping is okay, and firmly press them into the pie. This helps the ingredients come together.
  • Place the pie into the oven and bake for 35 to 45 minutes, until the cheese begins to bubble and the crust turns a golden brown.

1/4 teaspoon salt
1/2 cup cold butter, cubed
2 to 3 tablespoons ice water
FILLING:
3/4 cup mayonnaise
1/2 cup shredded cheddar cheese
1/3 cup thinly sliced green onions
1 tablespoon minced fresh oregano
1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon pepper
6 medium tomatoes (1-3/4 pounds), cut into 1/4-inch slices
4 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, mix flour and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic. Refrigerate 30 minutes or overnight., Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. Line unpricked pastry with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice., Bake until bottom is lightly browned, 20-25 minutes. Remove foil and weights; bake until light brown, 5-10 minutes longer. 1 yellow onion
¾ cup mayonnaise
⅓ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 pie crust (homemade or store-bought)
1 1/2 pounds tomatoes (sliced ¼ to ½-inch thick)
1/2 cup yellow onion (thinly sliced)
3/4 cup mayonnaise
1/4 cup sour cream
1 cup shredded cheddar cheese (plus more for topping)
1 cup shredded part-skim mozzarella cheese (plus more for topping)
1/4 cup grated Parmesan cheese
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup fresh basil leaves (sliced)
1/2 cup Panko bread crumbs (optional)

Steps:

  • Place tomato slices on paper towels, and press out any excess moisture. Sprinkle with salt and allow to drain and dry on the counter while you prep other ingredients.
  • Preheat oven to 350 degrees F.
  • Roll out a round of pie crust and press it into a 9-inch pie pan. Pierce the crust with a fork, then layer on a piece of parchment paper and fill with baking beans. Bake 8-10 minutes until lightly browned, then remove from oven and set aside to cool. Remove the baking beans when they can be touched.
  • In a bowl, combine mayonnaise, sour cream, cheeses, salt, and pepper. Mix well.
  • Spread half of the sliced onion on the bottom of the par-baked pie crust. Arrange half of the sliced tomatoes on top, then sprinkle on half of the sliced basil leaves.
  • Carefully spread half of the cheese mixture over the vegetables. Repeat layers with the remaining onion, tomato, basil, and cheese mixture.
  • Finally, sprinkle the top with more cheese (if desired) and bread crumbs (if using).
  • Bake for 35-40 minutes until the pie is nicely browned and the filling is bubbling. Garnish with fresh basil and serve warm.

1 1/3 Cups All-Purpose Flour
1/2 Teaspoon Salt
2 Tablespoons Butter (, cold and cubed)
6 Tablespoons Shortening (, cold)
3-4 Tablespoons Ice Water
1 Cup Mozzarella Cheese (, divided)
1/4 Cup Parmesan Cheese (Fresh)
1/2 Cup Cheddar Cheese (, divided)
4 Large Tomatoes
1 Teaspoon Salt
3/4 Teaspoon Garlic Powder
1/2 Teaspoon Oregano
1/3 Cup Basil Leaves (Fresh )
1/4 Cup Mayonnaise

Steps:

  • Preheat oven to 450 degrees F.
  • Prepare the pie crust by mixing the flour and salt in a bowl.
  • Add the cold butter and shortening. Using a pastry cutter (trust me, it's worth the couple of bucks), cut the fats into the flour mixture until it resembles small peas.
  • Using a tablespoon, add a little water to the flour mixture at a time, using a fork to stir everything together until the dough just comes together. It should not be smooth and soft like cookie dough, but instead a little more flaky until you squeeze it together.
  • Place the dough between two pieces of plastic wrap, shaping it into a ball.
  • Using a rolling pin, roll the dough out into a circle.
  • Place in a pie dish and trim any overhanging dough, leaving a good inch around the lip. Crimp this dough and prick the bottom and sides of the pie crust.
  • Sprinkle with parmesan cheese and 1/4 cup mozzarella and place in a 450 degree F oven for 10 minutes.
  • Remove from the oven to cool while you prepare the filling.
  • Slice the tomatoes thin and place on a double layer of paper towels
  • Lightly salt tomato slices and leave them for 10 minutes. The salt will pull out excess water which the paper towels will sop up so you don't have a wet pie.
  • Combine 1/4 cup cheddar cheese and 1/2 cup mozzarella cheese in a small bowl. Set aside.
  • Sprinkle tomato slices with the garlic powder, oregano, and black pepper to taste. Layer 1/3 of the tomato slices, 1/3 of the cheese mixture, and 1/3 of the basil. Repeat layers.
  • In a small bowl combine remaining 1/4 cup cheddar cheese, 1/4 cup mozzarella cheese and 1/4 cup mayonnaise. Dot over the final layer of tomatoes.
  • Reduce oven heat to 350 degrees F and bake the pie uncovered for 30-35 minutes. Cool before serving.

1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 cup mayonnaise, (regular or light)
2 tablespoons minced chives (or green onions)
1/2 tablespoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place a double layer of paper towels on a baking sheet. Lay fresh tomato slices on top and gently press two more layers of paper towel over the tomatoes. Let stand for at least 30 minutes.
  • Preheat oven to 400°F. Meanwhile mix together Bisquick, 1/2 cup shredded cheese, milk, butter, garlic powder, basil, and oregano. Press into a greased pie plate on the bottom and up sides. Store crust in refrigerator until ready to use.
  • For filling mix together remaining cheddar cheese, mayonnaise, minced chives, apple cider vinegar, salt and pepper.
  • After tomatoes have drained remove crust from refrigerator. Spread on half cheese / mayo filling. Layer drained tomatoes on top, slightly overlapping. Spread remaining cheese / mayo filling on top of tomatoes.

2 tablespoons parmesan cheese (I double this amount) or 2 tablespoons romano cheese (I double this amount)

Steps:

  • Preheat oven 350 degrees.
  • Thoroughly mix mayonnaise, cheddar cheese, minced onions, herbs and pepper; set aside.
  • In large mixing bowl, mix together baking mix, baking powder, buttermilk and water.
  • With floured fingers, pat mixture into the bottom and sides of a lightly greased and floured 9" pie pan.
  • Bake crust 10 minutes. Remove from oven.
  • Arrange tomato slices on top of crust to completely cover; cut smaller pieces of tomato to fill in gaps. At this point you may want to lightly salt the tomatoes.
