COUNTRY TOMATO AND BACON PIE
Country Tomato and Bacon Pie is comfort food at its finest. Fresh tomatoes with layers of cheese and bacon all baked in a yummy pie crust!

Steps:
- If using a frozen pie crust, you'll need to let it defrost on the counter for about 10 minutes, then prick the crust with a fork (this keeps the crust from getting too puffy while baking).
- Then bake it using the instructions on the back of your package (usually 400F degrees for about 10-12 minutes).
- If using my Wham Bam Pie Crust, you'll prepare as directed, prick the crust with a fork, and then prebake at 400F degrees for about 10-12 minutes.
- Allow crust to cool slightly.
- Turn oven down to 350F degrees.
- Start layering tomato slices on the bottom of the pie.
- Season with some freshly ground black pepper.
- Then top with green onions, basil and crumbled bacon.
- In a bowl, combine mayonnaise with shredded cheese.
- Spread the cheese mixture on top of your pie.
- Bake at 350F degrees for about 30-35 minutes (until golden brown).
- If the the edges of your pie crust are becoming too brown while baking, you may want to put some aluminum foil around the edges of the pie, just covering the crust for the duration of baking.

TOMATO PIE WITH BACON
Tomato Pie with Bacon is wonderfully creamy and full of slices of ripe summer tomatoes, salty bacon and mozzarella and cheddar cheese all baked in a buttery pie crust.

- Let pie crust sit at room temperature for 20 minutes.Preheat oven to 375 degrees.
- Poke bottom of pie crust with fork. Brush with egg white. Bake for 12 minutes. Let cool
- Place tomato slices in a colander and sprinkle with kosher salt. Let sit 10 minutes. Blot dry with paper towels.
- Season tomato slices to taste with pepper and arrange in pie crust, saving three slices.
- In a medium bowl, stir together mayonnaise, mozzarella cheese, cheddar cheese, basil, green onion, and half of bacon. Spread over tomatoes.
- Arrange remaining 3 tomato slices on top and sprinkle with remaining bacon.
- Bake in 350 degree oven for 35 to 40 minutes.

BACON TOMATO PIE
Each year, I look forward to tomato season so I can make this delicious fresh tomato pie. For vegetarians, it may be made without the bacon with great results. However, using canned or hot-house tomatoes will significantly alter the flavor. Delicious side dish, or as a light dinner. I like to serve with a green salad and fresh multigrain bread.

- Preheat the oven to 375 degrees F (190 degrees C). Arrange pie crust in a 9-inch pie plate.
- Spread sour cream evenly over the crust. Sprinkle 1 cup mozzarella cheese, Parmesan cheese, and chives over the sour cream. Arrange tomato slices evenly on top. Season with pepper. Add basil and bacon crumbles. Top with remaining 1 cup mozzarella cheese.

CORN, BACON AND CHEDDAR PIE WITH PICKLED JALAPEñOS

- Prepare the crust: In the bowl of a food processor fitted with the blade attachment, or in a large bowl, pulse or mix together flour, cornmeal and salt until combined. Add butter, and either pulse or use your finger to smoosh it in until butter is the size of lima beans. Add ice water, 1 tablespoon at a time, and pulse or mix just until dough comes together. There should still be large flecks of butter left in dough. Shape dough into a disk and wrap in plastic wrap. Refrigerate at least 1 hour before baking. (Dough can be made up to 5 days ahead.)
- On a lightly floured surface, roll out dough into a 12-inch circle. Transfer dough to a 9-inch pie plate; trim and crimp edges. Chill for 30 minutes.
- Heat oven to 425 degrees. Prick the bottom of the pie with a fork. Line with foil or parchment paper and fill with pie weights, dried beans or rice. Bake for 15 minutes. Remove foil or paper and pie weights or beans. Bake until pale golden and dry to the touch, about 5 to 7 minutes more. Reduce oven temperature to 375 degrees.
- While crust is chilling and baking, prepare the filling: Cut red onion in half across the equator (not root to stem), then from the center, cut out two very thin, round slices. Separate onion slices into rings and put them in a bowl with lime juice and a pinch each of salt and sugar. Set aside while you assemble the rest of the tart. Coarsely chop remaining onion and set aside.
- Scatter bacon in a cold 12-inch skillet. Turn heat to medium, and cook until the bacon is golden and the fat has rendered, 10 to 14 minutes. Using a slotted spoon, transfer bacon to a paper-towel-lined plate. Leave fat in the skillet.
- Stir chopped onion into pan with bacon fat and place over medium heat. Sauté until golden-edged and translucent, about 6 minutes. Stir in corn, 1/2 teaspoon salt and chopped pickled jalapeño. Cook until corn is tender, 2 to 5 minutes.
- Remove from heat and scoop 1/2 cup corn mixture into a blender. Add cream, sour cream and eggs. Blend until you get a thick purée. Using a spatula, scrape corn purée back in pan with whole corn kernels, and stir in 1/2 cup Cheddar, the parsley and the cooked bacon. Scrape into baked pie shell.
- Top filling mixture with pickled red onion slices and jalapeño slices. Sprinkle with remaining 1/4 cup Cheddar.
- Bake until puffed, golden and just set, 35 to 45 minutes. Transfer to a wire rack to cool slightly. Serve warm or at room temperature.

- Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
- Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. TOMATO PIE WITH BACON AND JALAPENOS

- Place the sliced tomatoes in a colander and then place the colander in a mixing bowl. Toss the tomatoes with the salt, and allow them to sit at room temperature for 30 minutes to extract some of the juices. Meanwhile, to make the crust, stir together the flour, cornmeal, baking powder, baking soda, salt and pepper. Cut into the flour the chilled butter, until the flour has a crumbly, pea-like texture. Stir in the buttermilk and mix until well combined. On a lightly floured surface, turn out the dough and roll it out into it's about an 11-inch circle. Preheat the oven to 350°F and lightly grease a deep-dish pie pan or a large cast-iron skillet. Gently lift the dough and place it into the pan, working the dough until the pan is evenly lined with the crust. (Unlike regular pie crusts, I don't do anything fancy with the top of the crust since it's puffier than most as it's a biscuit crust, I simply make sure it goes to the top of the pan.) To fill the pie, sprinkle half of the cheese along the bottom of the crust. Layer in the tomatoes, garlic, jalapeño slices and bacon, topping with the remaining cheese. Line a baking sheet with foil or parchment paper and place the pie pan on top. (This is to catch any juices if it boils over.) Slide the sheet into the oven and cook the pie uncovered for 30 minutes or until the crust and cheese are lightly browned and the pie is bubbling.
