With a delicate crust and lots of lovely tomatoes on top, this dish is a special one to serve to guests. I make it often when fresh garden tomatoes are in season. It freezes well unbaked, so I also keep one on hand to pop in the oven for a quick dinner.-Neta Cohen, Bedford, Virginia

5 tablespoons butter, melted
14 sheets phyllo dough (14x9 in.)
7 tablespoons grated Parmesan cheese, divided
1 cup shredded part-skim mozzarella cheese
1 cup thinly sliced onion
1 pound plum tomatoes, sliced
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
Salt and pepper to taste

Steps:

  • Preheat oven to 375°. Brush a 15x10x1-in. baking pan with some of the melted butter. Unroll phyllo dough; cut stack into a 10-1/2x9-in. rectangle. Discard scraps., Line bottom and sides of prepared pan with 2 sheets of phyllo dough (sheets will overlap slightly). Brush with butter and sprinkle with 1 tablespoon Parmesan cheese. Repeat layers 5 times. (Keep dough covered with a damp towel until ready to use to prevent it from drying out.) , Top with layers of remaining phyllo dough; brush with remaining butter. Sprinkle with mozzarella cheese; arrange onion and tomatoes over cheese. Sprinkle with oregano, thyme, salt, pepper and remaining Parmesan cheese. Bake until edges are golden brown, 20-25 minutes.

8 sheets frozen thawed phyllo pastry
2 cups shredded fat free mozzarella cheese
1/2 cup thinly sliced onion
1 lb tomatoes, thinly sliced
salt and pepper, to taste
1/4 cup grated parmesan cheese
3/4 teaspoon dried dill weed
1/2 teaspoon dried basil leaves

Steps:

  • Spray jelly roll pan with cooking spray; place sheet of phyllo on pan and spray generously with spray.
  • Repeat with remaining sheets phyllo.
  • Sprinkle mozzarella cheese and onion over phyllo; arrange tomato slices on top.
  • Sprinkle lightly with salt and pepper.
  • Sprinkle with Parmesan cheese and herbs.
  • Bake pizza at 375°F until phyllo is browned and cheese melted, about 15 minutes.

2 garlic cloves, crushed
8 phyllo pastry sheets
1 cup shredded mozzarella cheese
3 medium red and orange tomatoes, sliced
4 ounces crumbled feta cheese
1/3 cup fresh basil, chopped

Steps:

  • Lightly grease a large baking sheet.
  • Preheat oven to 375*F.
  • Combine butter and garlic.
  • Place 1 sheet of phyllo on pan and brush with butter/garlic mixture.
  • Repeat with remaining phyllo and butter/garlic mixture.
  • Sprinkle phyllo with mozzarella to within 2.5" of the edges.
  • Top with sliced tomatoes.
  • Sprinkle with feta and basil.
  • Roll phyllo edges to form rim.
  • Bake 20-25 minuntes, til phyllo is crisp and cheese is melted.
  • NOTE: You can use any size phyllo sheets and adjust the ingredients accordingly.

6 layers of phyllo dough
1/2 cup sliced, pitted black olives
1 stick butter, melted
3 ripe tomatoes, thinly sliced
2 cups caramelized sliced onions
3/4 cup grated Parmesan cheese

Steps:

  • Butter a baking sheet with a brush. Lay down one layer of dough and brush with butter. Repeat process until all dough is layered and buttered. Fold in sides of rectangle to form a crust. Top with onions, olives, tomatoes and cheese. Bake at 375 for 30 minutes or until phyllo crust is golden brown.

7 tablespoons freshly grated parmesan cheese
1 cup coarsely grated mozzarella
1 cup very thinly sliced onion
2 pounds tomatoes (about 5) cut into 1/4 thick slices
1/2 teaspoon dried oregano crumbled
1 teaspoon fresh thyme leaves or 1/4 teaspoon crumbled dried

Steps:

  • Brush a baking sheet lightly with some of the butter, lay 1 sheet of the phyllo in the butter and brush it lightly with some of the remaining butter. Sprinkle the phyllo with 1 tablespoon of the parmesan, lay another sheet of the phyllo on top, and press it firmly so that it adheres to the bottom layer. Butter, sprinkle and layer the remaining phyllo in the same manner, ending with a sheet of phyllo and reserving the remaining 1 tablespoon of parmesan. Sprinkle the top sheet of phyllo with the mozzarella, scatter the onion evenly on top and arrange the tomatoes in one layer over the onion. Sprinkle the pizza with the reserved 1 tablespoon parmesan, the oregano, the thyme and salt and pepper to taste. Bake in the middle of a pre heated 375 degree oven for 30 to 35 minutes or until the edges are golden and with a pizza wheel or sharp knife cut into squares
