100g wholemeal penne
1 tsp rapeseed oil
1 large onion, sliced, plus 1 tbsp finely chopped
1 orange pepper, deseeded and cut into chunks
2 garlic cloves, grated
2 tsp mild chilli powder
1 tsp ground coriander
½ tsp cumin seeds
400g can chopped tomatoes
196g can sweetcorn in water
1 tsp vegetable bouillon powder
1 avocado, stoned and chopped
1/2 lime, zest and juice
handful coriander, chopped, plus extra to serve

Steps:

  • Cook the pasta in salted water for 10-12 mins until al dente. Meanwhile, heat the oil in a medium pan. Add the sliced onion and pepper and fry, stirring frequently for 10 mins until golden. Stir in the garlic and spices, then tip in the tomatoes, half a can of water, the corn and bouillon. Cover and simmer for 15 mins.
  • Meanwhile, toss the avocado with the lime juice and zest, and the finely chopped onion.
  • Drain the penne and toss into the sauce with the coriander. Spoon the pasta into bowls, top with the avocado and scatter over the coriander leaves.

½ pound cooked chunky shaped pasta (like cavatappi)
Kosher salt (to taste)
4 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 cup thinly sliced scallions
½ cup finely diced red bell pepper
2 tablespoons roughly chopped fresh cilantro (optional)
Freshly ground pepper to taste
2 cups cooked chicken breasts (about 2 6-ounce boneless skinless breasts (shredded or diced))
1 ripe avocado (cut into small cubes)
1 pint cherry or grape tomatoes (halved)

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package directions, cooking them until past the al dente stage, and in fact nicely tender, so that far end of the recommended cooking time, plus an extra minute. Drain, and rinse quickly with cool water.
  • While the pasta is cooking, in a large bowl combine the olive oil, lime juice, scallions, bell pepper, cilantro (if using) and salt and pepper. Once you have drained and rinsed the pasta, add it to the bowl with the dressing and toss to coat well. Allow it to sit for about 5 minutes.
  • Add the chicken, avocado and tomatoes and toss to combine everything. Taste and adjust the seasonings as needed. Transfer to a serving bowl.

This will be one of the tastiest pasta salads you've tried! It's packed with mini pasta, fresh mozzarella pears, fresh tomatoes, fresh basil, fresh avocados and a tasty balsamic glaze. In other words lots of fresh exciting flavors here!

10 oz. (2 3/4 cups) mini penne pasta shells
Salt and freshly ground black pepper
1 pint cherry or grape tomatoes, (halved)
2 small avocados, (diced (they should be fairly firm but ripe))
8 oz. fresh mozzarella pearls
1/4 cup chopped fresh basil leaves
1 1/2 Tbsp balsamic vinegar, then more for serving to taste ((use white balsamic vinegar for better coloring if desired))
1 cup (18g) slightly packed fresh basil leaves
1 cloves garlic, (peeled)
1/4 cup olive oil
2 Tbsp finely shredded parmesan, (plus more for serving if desired)
1 Tbsp pine nuts or chopped walnuts

Steps:

  • Cook pasta in boiling salted water according to directions on package. Drain and let cool completely.
  • In a food processor pulse 1 cup basil leaves, parmesan, pine nuts, and garlic until minced. Pour in olive oil and process until everything is finely minced. Season with salt and pepper to taste.
  • Add pasta and tomatoes to a salad bowl. Pour basil (pesto) mixture over pasta and tomatoes and toss to evenly coat.
  • Add in avocados, mozzarella, basil (set some aside to garnish over top if desired), and pour in balsamic vinegar and toss just lightly.
  • Serve immediately with more balsamic vinegar and parmesan if desired.

  • Preheat oven to 425° F. Toss the tomatoes with a couple glugs of olive oil and a good sprinkle of salt and pepper on a large baking sheet. Roast for 20 minutes, tossing with a spatula once during the cook time, until they are spotty brown, soft, and the juices have just started to release.
  • While the tomatoes roast, cook the pasta according to package directions, reserving 1 cup of the water towards the end of the cook time. Drain and return the pasta to the hot pot.
  • While the tomatoes roast and the pasta cooks, pulse the garlic, lemon juice, lemon zest, and 2 tablespoons of olive oil in a food processor until the garlic is fairly well-chopped. Halve, pit, and scoop out the avocado flesh from the skin and add it to the food processor along with the basil, cheese, ½ teaspoon salt, and a few cranks of black pepper. Process until completely smooth, scraping down the sides of the bowl as needed. Season with more salt and pepper to taste.
  • With the machine running, stream in the reserved pasta water until the sauce loosens up and is almost runny. You won't likely need the whole cup of water but I like to keep a little extra just in case. You want the sauce thick enough to nicely coat the pasta but not too thick that it's like a paste.
