I love to serve strata to weekend guests. While everyone sleeps in late on Sunday before heading home, I pop one in the oven. Folks go home full and happy! This is a small strata, perfect to 4 people.

2 slices Italian bread, cut into 1-inch pieces (use a crusty, baguette-style of bread)
2 tablespoons olive oil
1/2 cup chopped onion
2 cups baby spinach leaves
2 garlic cloves, minced
1/2 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 large eggs
1 cup chopped tomato
3 tablespoons freshly grated parmesan cheese

Steps:

  • Butter a 1 1/2 quart baking dish. Place bread cubes in bottom of dish in a single layer.
  • Heat olive oil in a large skillet over medium-high heat. Add onion to skilet and saute until translucent, 3-4 minutes. Add spinach and garlic to skillet. Saute another 3-4 minutes, or until spinach wilts. Remove from heat and set aside.
  • Whisk together eggs, thyme, salt, and pepper in a medium bowl. Stir in spinach mixture and chopped tomato. Pour egg mixture over bread in baking dish and sprinkle with cheese.
  • Refrigerate, covered, overnight. In the morning, remove dish from refrigerator and allow to stand for 30 at room temperature.
  • Preheat oven 375.
  • Bake strata for 25 minutes or until set. Allow to stand for 10 minutes.

SOURDOUGH STRATA WITH TOMATOES AND GREENS



Sourdough Strata With Tomatoes and Greens image

8 plum tomatoes, quartered lengthwise
1 tablespoon chopped fresh thyme
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 cups whole milk
8 large eggs
10 ounces Italian fontina cheese, grated (about 3 cups)
1 cup grated parmesan cheese
1/4 teaspoon cayenne pepper
1 1-pound loaf sourdough bread, cut into 1-inch cubes (about 8 cups)
4 cups chopped greens, such as kale, spinach or arugula

Steps:

  • Preheat the oven to 350 degrees F. Toss the tomatoes with the thyme, olive oil and 1/2 teaspoon each salt and black pepper in a bowl. Spread on a baking sheet and roast, stirring once or twice, until the tomatoes are slightly dried and browned in spots, 1 hour to 1 hour, 15 minutes. Cool completely.
  • Whisk the milk, eggs, fontina, 3/4 cup parmesan, the cayenne, 1 teaspoon salt and 1/4 teaspoon black pepper in a large bowl. Add the bread cubes and greens and toss to coat. Pour into a 3-quart baking dish, then top with the roasted tomatoes. Cover and refrigerate overnight.
  • The next day, preheat the oven to 350 degrees F. Sprinkle the strata with the remaining 1/4 cup parmesan and bake, uncovered, until golden brown and almost set, about 45 minutes. Turn off the oven, but keep the strata inside 10 minutes before serving.

TOMATO-CHEDDAR STRATA



Tomato-Cheddar Strata image

Fill this sourdough strata with sun-dried tomatoes, Cheddar and scallions.

Number Of Ingredients 9

Unsalted butter, at room temperature, for the baking dish
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
Kosher salt and freshly ground black pepper
One 12-ounce loaf sourdough bread, preferably stale, crust removed, cut into 1-inch cubes (about 6 cups)
2 cups shredded sharp Cheddar
1 cup sun-dried tomatoes packed in oil, drained, patted dry and chopped
1/4 cup thinly sliced scallions

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Whisk together the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Cheddar, followed by the sun-dried tomatoes and scallions. Cover with the remaining bread cubes and pour the egg mixture evenly over the top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
  • On the day of baking, preheat the oven to 325 degrees F. Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Cheddar. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

Sausage and Cheese Strata with Sun-dried Tomatoes image

An incredible alternative to Lasagna. You will not believe how light and puffy it bakes up. Never any thrown away. Actually better the next day in my opinion as the ingredients blend. Instead of crustless white bread I usually use Italian bread just broken into small pieces. I believe I obtained this recipe from Bon Apetit a few years ago.

1/2 cup sun-dried tomato, chopped (not oil packed)
12 ounces hot Italian sausage, casing removed
3 1/2 cups milk (do not use low-fat or nonfat)
8 large eggs
2 teaspoons minced fresh thyme or 3/4 teaspoon dried thyme
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
11 slices white bread, crusts trimmed,bread cut into 1 inch pieces (about 1 pound)
1/2 cup chopped onion
1/2 cup fresh grated parmesan cheese (about 1 1/2 ounces)
1 cup packed grated mozzarella cheese (about 4 ounces)
1/4 cup crumbled soft fresh goat cheese (such as Montrachet)
chopped fresh parsley

Steps:

  • Place sun-dried tomatoes in medium bowl.
  • Pour enough boiling water over to cover.
  • Let stand until softened, about 15 minutes.
  • Drain.
  • Sauté sausages in heavy medium skillet over medium heat until cooked through, breaking up with back of spoon, about 5 minutes.
  • Using slotted spoon, transfer sausage to paper towels and drain well.
  • Butter 13x9x2-inch glass baking dish.
  • Whisk milk, eggs, thyme, salt and pepper in large bowl to blend.
  • Add sun-dried tomatoes, sausage, bread, onion and Parmesan cheese and stir to blend.
  • Transfer to prepared dish.
  • Cover and refrigerate at least 4 hours or overnight.
  • Preheat oven to 375°F.
  • Bake strata uncovered until puffed and golden brown, about 45 minutes.
  • Sprinkle with mozzarella and goat cheese and bake until mozzarella melts, about 5 minutes.
  • Transfer pan to rack and cool 5 minutes.
  • Sprinkle with parsley.
