GREEN PAPAYA SALAD
In Isan (and the rest of Thailand), green papaya salad is called som tum, with "som" meaning "sour" and "tum" referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef and chicken.

- In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.
- Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.
- Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.

- Combine garlic, chiles, and green beans into a mortar and pound roughly. Add the papaya and pound again, to bruise the ingredients. Stir in fish sauce, lime juice, and sugar and pound again. Ad the tomato and pound to combine. Stir in the chopped peanuts and serve.
- If you don't have a mortar and pestle, you can make a version of this in your blender or food processor: coarsely chop the garlic, chile peppers, and green beans. Mix in the papaya, and pulse a few times. Mix in the tomato, fish sauce, lime juice, and sugar. Pulse to combine; salad should still have texture. Transfer to a serving dish and stir in the peanuts.

- Peel and pit the avocados and slice the flesh into 10 wedges. Peel and seed the papaya and slice the flesh into 12 wedges.
- Juice the limes into a non-reactive bowl, add red onion and ginger to bloom for 5 minutes. Add the remaining ingredients and gently toss. Season with salt and pepper, to taste. Serve immediately.

- Preheat the oven to 350 degrees F (175 degrees C). Place peanuts on a baking sheet.
- Toast in the preheated oven until fragrant and browned, 7 to 8 minutes. Let cool for 5 minutes.
- Grind roasted peanuts, Thai chilies, garlic, dried shrimp, and sugar in a mortar and pestle or food processor. Stir in lime juice and fish sauce to make dressing.
- Toss papaya, tomatoes, green beans, and carrot with dressing. Season with salt and pepper.

TOMATO PAPAYA SALAD
I made this recipe last summer after I saw the colourful summer tomatoes. I love papaya and find it a great ingredient. My wife likes mango more (I try not to fault her on that) and this salad works with mango as well. While pretty much all tomatoes are available year round, I find the fresh, summer grown tomatoes are key for the full flavour. Smell your tomatoes! If they don't smell like a tomato, they ain't going to taste like one.

- Combine and toss the first eight ingredients (include any reserved juices).
- Using a dry skillet, toast the black sesame seeds until they are fragrant, about 2-3 minutes.

- Place the garlic and the green beans in a large zipper close bag. Seal the bag, removing as much air as possible. Use a rolling pin or mallet to gently whack the green beans and garlic until the green beans are lightly bruised and the garlic is smashed into small pieces.

- Prep the Papaya: Use a vegetable peeler to peel the papaya. Then cut the hard flesh into long “julienne” slivers. Do this by using a julienne tool, or by tapping a large chef's knife rapidly over the surface of the papaya, making many slashes in the same direction. Then shave them off, perpendicular to the slashes. You will need 6-7 cups of julienne papaya total.
- Place the papaya slaw in a large bowl. Then pile ice over the papaya and fill the bowl with cold water. Let the slaw soak in the cold water to firm for 10-15 minutes while you prepare the rest of the ingredients.
- Set out a mortar and pestle. Place the garlic cloves, the white ends of the scallions, and the chopped chiles in the bowl. Use the pestle to smash the ingredients until very soft and broken. Then add in the peanuts and lime zest. Smash and break the peanuts into fine pieces.
- Now pour in the fish sauce, lime juice, sugar, long bean segments and tomatoes. Mix and smash all the ingredients together.
