TOMATO-ONION PHYLLO PIZZA
With a delicate crust and lots of lovely tomatoes on top, this dish is a special one to serve to guests. I make it often when fresh garden tomatoes are in season. It freezes well unbaked, so I also keep one on hand to pop in the oven for a quick dinner.-Neta Cohen, Bedford, Virginia

Steps:
- Preheat oven to 375°. Brush a 15x10x1-in. baking pan with some of the melted butter. Unroll phyllo dough; cut stack into a 10-1/2x9-in. rectangle. Discard scraps., Line bottom and sides of prepared pan with 2 sheets of phyllo dough (sheets will overlap slightly). Brush with butter and sprinkle with 1 tablespoon Parmesan cheese. Repeat layers 5 times. (Keep dough covered with a damp towel until ready to use to prevent it from drying out.) , Top with layers of remaining phyllo dough; brush with remaining butter. Sprinkle with mozzarella cheese; arrange onion and tomatoes over cheese. Sprinkle with oregano, thyme, salt, pepper and remaining Parmesan cheese. Bake until edges are golden brown, 20-25 minutes.

Steps:
- Spray jelly roll pan with cooking spray; place sheet of phyllo on pan and spray generously with spray.
- Repeat with remaining sheets phyllo.
- Sprinkle mozzarella cheese and onion over phyllo; arrange tomato slices on top.
- Sprinkle lightly with salt and pepper.
- Sprinkle with Parmesan cheese and herbs.
- Bake pizza at 375°F until phyllo is browned and cheese melted, about 15 minutes.

- Butter a baking sheet with a brush. Lay down one layer of dough and brush with butter. Repeat process until all dough is layered and buttered. Fold in sides of rectangle to form a crust. Top with onions, olives, tomatoes and cheese. Bake at 375 for 30 minutes or until phyllo crust is golden brown.
TOMATO PHYLLO PIZZA
Steps:
- Brush a baking sheet lightly with some of the butter, lay 1 sheet of the phyllo in the butter and brush it lightly with some of the remaining butter. Sprinkle the phyllo with 1 tablespoon of the parmesan, lay another sheet of the phyllo on top, and press it firmly so that it adheres to the bottom layer. Butter, sprinkle and layer the remaining phyllo in the same manner, ending with a sheet of phyllo and reserving the remaining 1 tablespoon of parmesan. Sprinkle the top sheet of phyllo with the mozzarella, scatter the onion evenly on top and arrange the tomatoes in one layer over the onion. Sprinkle the pizza with the reserved 1 tablespoon parmesan, the oregano, the thyme and salt and pepper to taste. Bake in the middle of a pre heated 375 degree oven for 30 to 35 minutes or until the edges are golden and with a pizza wheel or sharp knife cut into squares

- Brush a 15in x 10in baking pan with some of the melted butter. Lay a sheet of phyllo in pan, folding edges in to fit (keep remaining dough covered with waxed paper to avoid drying out). Brush dough with butter and sprinkle with 1 Tbsp Parmesan cheese. Repeat layers 5 times, folding edges for each layer. Top with remaining dough, folding edges to fit pan; brush with remaining butter. Sprinkle with mozzarella cheese; arrange onion and tomatoes over the cheese. Sprinkle with oregano, thyme, salt, pepper, and remaining Parmesan. Bake at 375 degrees for 20-25 minutes or until edges are golden brown.
