KITTENCAL'S GREEK MARINATED TOMATO, OLIVE AND FETA SALAD



Kittencal's Greek Marinated Tomato, Olive and Feta Salad image

If you love Greek salads you will love this, it's an absolute must made with garden ripe tomatoes! I use the dressing from my recipe#66596 but you may use your own favorite dressing, the cucumber is only optional I like to add some in, plan ahead this salad must be chilled at least 3 hours before serving or up to 6 hours. Serve this salad with crusty bread on the side to dip into the juice, you may also serve the tomatoes with juice on a bed of lettuce.

Number Of Ingredients 10

1/3 cup plus 2 tablespoons Greek salad dressing
3/4 cup feta cheese (broken into small pieces, do not crumble finely)
1 -2 tablespoon chopped fresh parsley
6 large roma tomatoes, chopped
1/2 small cucumber (peeled, seeds removed and chopped) (optional)
3/4 cup kalamata olive (pitted and sliced or use similar brined olives)
1 small red onion, thinly sliced (or to taste)
fresh ground black pepper (to taste)
salt (optional)
crusty bread (to serve on the side)

Steps:

  • In a large glass bowl stir together the dressing with parsley.
  • Add in feta pieces and all remaining ingredients (except black pepper, salt and bread) toss to combine and season with black pepper------ (don't be tempted to add in more than the stated amount of dressing as the tomatoes will release more juice when chilled, you just might find your salad swimming in too much liquid!).
  • Cover and refrigerate for a minimum of 3 hours or up to 6 hours.
  • Serve with crust bread.

4 pints grape tomatoes, red or mixed colors
1 1/2 cups small-diced red onion (2 onions)
1/4 cup good white wine vinegar
6 tablespoons good olive oil
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh parsley leaves
1 1/2 pounds feta cheese

Steps:

  • Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2- to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.

5 large tomatoes (about 3 pounds), cored, sliced
1 red onion, halved, thinly sliced
1/2 cup olive oil
1/2 cup red wine vinegar
1/4 cup chopped fresh parsley
3 large garlic cloves, finely chopped
4 ounces feta cheese (about 1 generous cup), crumbled
1/3 cup brine-cured olives, preferably Kalamata (optional)

Steps:

  • Overlap tomato and onion slices on large platter. Whisk oil, vinegar, parsley and garlic in small bowl. Season to taste with salt and pepper. Pour over salad. Let stand at room temperature 1 hour or cover and refrigerate up to 3 hours, basting occasionally with dressing.
  • Sprinkle salad with cheese and garnish with olives, if desired.

1 tablespoon coarse-grained Dijon mustard
1 shallot, minced
1 large garlic clove, minced

1 cup olive oil
4 large tomatoes, thinly sliced
1/3 cup Kalamata olives or other brine-cured black olives, pitted, chopped
1/3 cup crumbled feta cheese

Steps:

  • Combine first 6 ingredients in medium bowl; gradually whisk in oil. Season dressing to taste with salt and pepper.
  • Arrange tomatoes on platter. Sprinkle with olives and cheese. Drizzle with enough dressing to coat. Serve, passing remaining dressing separately.

TARRAGON TOMATO SALAD



Tarragon Tomato Salad image

Here is my version of a recipe taught by Anne Willan. Her version uses small cherry tomatoes, which are scored, blanched, and peeled. The combination is incredible, as the peeled tomatoes soak up the flavorful vinaigrette and explode in your mouth. However, the number of people I would peel cherry tomatoes for is fairly limited. The wine may seem a little surprising, but tomatoes contain alcohol-soluble flavors that can only be delivered to your taste receptors in the presence of alcohol. As the salad marinates, the tomatoes begin to exude their juices, so don't make this more than 2 or 3 hours before serving. Serve this pretty combination in a butterhead lettuce cup with plenty of bread to soak up the juices.

1/2 cup walnuts
1 1/2 pounds grape tomatoes, halved
2 tablespoons chopped fresh tarragon
1 tablespoon chopped fresh chives
2 tablespoons dry white wine
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
6 tablespoons extra-virgin olive oil
2 tablespoons walnut oil
Coarse salt and freshly ground black pepper
1/4 cup microgreens, such as basil, arugula, or beet (optional)

Steps:

  • Preheat the oven to 350°F. Toast the walnuts on a baking sheet until brown, about 10 minutes. Let cool slightly, then coarsely chop. Set aside.
  • To marinate the tomatoes, place the tomatoes, tarragon, and chives in a large bowl. Drizzle over the wine and stir to combine. Set aside.
  • To prepare the dressing, whisk the vinegar and mustard together in a small bowl. Add the oils in a slow steady steam, whisking constantly, until the dressing is creamy and emulsified. Season with salt and pepper.
  • To assemble the salad, pour enough of the dressing over the tomatoes to lightly coat. Add the walnuts and stir to combine. Taste and adjust for seasoning with salt and pepper.
  • To serve, divide the salad among chilled serving plates. Garnish with microgreens. Serve immediately.
  • Tarragon is an essential seasoning in classic French cuisine and is wonderful with a range of foods, including eggs, chicken, and fish. Many sauces include it, like Sauce Béarnaise, served with steak, and Sauce Rémoulade, served with cold meats and seafood. When married with chopped fresh parsley, chives, and chervil, it forms the traditional seasoning blend fines herbes.

2 kg (4. lb) assorted heirloom tomatoes
2 teaspoons sea salt
1/4 teaspoon ground black pepper
200 g (7 oz) feta cheese, crumbled
125 ml (1/2 cup) extra virgin olive oil
30 ml (1 1/2 tablespoons) red wine vinegar
1 clove garlic, crushed
2 teaspoons dried oregano
1 avocado
1/2 red onion, halved and thinly sliced
Sea salt and ground black pepper

Steps:

  • Slice the larger tomatoes into thick slices and halve or quarter the smaller ones. Place them on a serving plate, alternating color and sizes, and sprinkle with the salt and pepper.
  • To make the dressing, in a large bowl, whisk together half of the feta with the olive oil, vinegar, garlic and oregano until just combined. Season to taste with salt and pepper. Set aside.
  • Peel and slice the avocado, reserving some for garnish, and place it on top of the tomato. Pour the dressing over the salad and top with the reserved avocado and onion. Sprinkle the remaining feta on top and serve.

  • Drizzle with enough dressing to coat.
  • Pass the remaining dressing on the side.
  • Delicious!
