½ avocado - peeled, pitted, and mashed
1 teaspoon garlic salt
1 slice ciabatta bread
3 slices tomato
1 pinch ground black pepper to taste

Steps:

  • Mix mashed avocado and garlic salt together in a bowl; spread onto ciabatta bread. Layer tomatoes over avocado and top with black pepper.

I love sandwiches of all types but sometimes I just want veggies. This is satisfying even for a meat lover like myself. Other items that would be great on this sandwich would be shredded lettuces, bean sprouts, peppercini peppers and arugula. I just used what I had in my fridge.

2 slices bread, toasted
4 slices tomatoes, cut 1/8 inch
4 slices cucumbers, cut 1/8 inch
1 tablespoon minced red onion
1/2 ripe avocado, mashed
1/8 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon lime juice
1/8 teaspoon red wine vinegar
1 tablespoon mayonnaise

Steps:

  • Add lime juice, salt and red onion to mashed avocado and mix well.
  • Spread mayo on toasted bread slices.
  • Spread avocado mixture on one of the toasted bread slices.
  • Add cucumber and sprinkle salt and pepper if desired.
  • Add tomatos and sprinkle salt and pepper if desired.
  • Sprinkle tomatoes with red wine vinegar.
  • Top with other toasted bread slice.
  • Cut on the diagonal and enjoy!

This delicious sandwich is a re-creation of one I ate in a lovely lunch cafe in Natchitoches, Louisiana. This was served with slices of fresh melon,kiwi,strawberries,and orange on the side drizzled with some honey mustard dressing.

2 slices rye bread (or a round sandwich roll)
2 -4 slices cucumbers
2 -4 slices beefsteak tomatoes (or other large ripe tomato)
2 slices red onions
1/2 avocado, peeled and thinly sliced
lemon juice
alfalfa sprout (optional)
2 teaspoons honey mustard, to taste,or honey mustard salad dressing
1 -2 leaf green leaf lettuce

Steps:

  • Lightly toast bread or roll.
  • Toss avocado slices with a tiny bit of lemon juice to keep from getting brown.
  • Spread some of the honey mustard on the bread.
  • Place lettuce on bread, followed by tomato slices, cucumbers, red onion, and avocado slices.
  • Drizzle remaining honey mustard over the vegetables.
  • Top with sprouts and close up sandwich, securing with a toothpick.
  • Note: To make honey mustard, combine honey and prepared yellow mustard together to taste.
  • To make honey mustard salad dressing, simply add a little mayonnaise to the same mixture and thin with a tiny bit of milk if needed, to suit your taste.
  • Of course, both honey mustard and honey mustard salad dressings are now sold in stores if you prefer to use ready made.

6 slices cucumber
2 tablespoons alfalfa sprouts
1 teaspoon olive oil
1 teaspoon red wine vinegar
1 tomato, sliced
1 leaf lettuce
1 ounce pepperoncini, sliced
½ avocado, mashed

Steps:

  • Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

¼ cup rice wine vinegar
¼ cup Italian salad dressing

¾ teaspoon freshly ground black pepper, or to taste
½ teaspoon sea salt, or to taste

Steps:

  • Cut avocados into wedges. Peel cucumbers, if desired, and cut into slices. Core tomatoes and cut into wedges. Transfer all to a bowl.
  • Add vinegar, Italian dressing, oregano, pepper, and salt; mix until well combined. Taste and adjust seasonings.

1 dash fine sea salt
1 dash white pepper
8 slices multigrain bread (Toasted)
8 leaves romaine lettuce
2 heirloom tomatoes (Brandy Wine, Sliced 1/4-inch Thick )

4 slices maui onions (Sliced Thin)
