CORN AND TOMATO GRATIN
Originally from Bon Appetit, but has been transformed just a bit. This hearty gratin resembles a savory bread pudding. Tomatoes, basil, and parmesan cheese give it an Italian flair. Perfect for using the bounty of your garden. Enjoy!

Steps:
- Arrange tomato slices in 1 layer on a rack set in a shallow baking pan and sprinkle on both sides with 1 teaspoon salt and 1/2 teaspoon pepper. Let drain 30 minutes.
- While tomatoes drain, bring corn, milk and cream, and 1 teaspoon salt to a simmer in a 2- to 3-quart heavy saucepan over high heat, then reduce heat and simmer, partially covered, until corn is tender, about 5 minutes. Cool slightly, uncovered.
- Put oven rack in upper third of oven and preheat oven to 375 degrees.
- Butter a shallow 2-quart baking dish.
- Toss together bread crumbs, basil, cheese, and remaining1/4 teaspoon salt and 1/2 teaspoon pepper in another bowl.
- Arrange one third of tomato slices in baking dish, then cover evenly with one third of bread-crumb mixture and dot with one third of butter. Spoon half of corn mixture over crumbs, then repeat layering with half of remaining tomatoes, crumbs, and butter, and all of corn.
- Arrange remaining tomatoes over corn, then top with remaining bread crumbs and dot with remaining butter.
- Bake, uncovered, until top is golden and gratin is bubbling all over, 40 to 45 minutes. Cool slightly on a rack, about 15 minutes, before serving.

LEEKS AND CORN AU GRATIN

Steps:
- Preheat the oven to 350 degrees F.
- Bring a small saucepan of salted water to a boil over medium heat and add the fresh corn kernels. Cook for about 3 to 4 minutes. Strain and adds to a small bowl. Set aside.
- Wash the leeks well, making sure to remove all the grit and sand which is hidden between the leaves. On a cutting board, cut the leeks in half lengthwise, then slice into half moons.
- Preheat a large skillet over medium heat, add the oil and the leeks and saute until soft. Add the blanched corn and continue to cook for about 5 minutes allowing any water to evaporate. Add the heavy cream and Parmesan and mix well. Season with salt and pepper, to taste. Transfer the mixture to an oven proof casserole dish. Allow to cool down for 10 minutes.
- Mix the panko bread crumbs, chives and parsley together in a small bowl. Sprinkle the crumb mixture over the leeks and corn and bake in the preheated oven for 15 minutes.
- Remove from the oven and serve hot.
SUMMIT HOUSE CLASSIC CREAMED CORN AU GRATIN
When I make this recipe I put lots and lots of Parmesan cheese in it and I do not put it under the broiler. I even make it the night before serving. Excellent. This is from a wonderful restaurant in Fullerton, California who gives out the recipe on postcards. Everyone asks for the recipe when I bring it to dinners.

Steps:
- Combine corn, cream, salt, sugar and white pepper in a pot and bring to a boil.
- Simmer 5 minutes.
- Make a roux from butter and flour, add to corn, mix well and remove from heat.
- Transfer corn mixture to casserole.
- Sprinkle with Parmesan cheese and brown under broiler.

OVEN-ROASTED TOMATO AND SWEET CORN GRATIN
I love fresh vegetables so much! Not counting what is in the grocery produce dept. Sometimes, they get real garden produce, but most of the time, it seems like something artificial--hot house grown. When you mix garden ripe tomatoes and corn, it doesn't get any better! Thanks to Cooking Thin with Chef Kathleen. I have tweaked only slightly.

- Preheat oven to 350°F. Lightly spray a 9 inch square baking dish with olive oil or cooking spray.
- In a nonstick skillet, heat 1 Tb. olive oil, over med-high heat, until hot but not smoking. Add onions; stir to coat evenly with oil. Add water to pan, and cover. Cook, stirring frequently, until onions are softened, 15 to 18 minutes. While onions are cooking, season bread crumbs with salt and pepper. Set aside. Break corn cobs in half, then slice off kernels.
- When onions are thoroughly cooked, turn off heat. Add corn and garlic (if using), to onions; stir, until corn, garlic, and onions are evenly distributed. Season with salt, pepper, and parsley.
- Spread one third of bread crumbs, in the prepared baking dish. Top with a layer of tomatoes, then half of onion, garlic (if using), and corn mixture. Repeat layer, finishing with tomato slices. Spray (or drizzle 1 tsp.) olive oil over tomatoes. Finish with bread crumbs on top & spray with cooking spray.
- Bake 35-40 minutes, or until heated through. Serve immediately.

- Preheat oven to 350°F. Heat olive oil in heavy large skillet over medium-high heat. Add chopped onions to skillet. Sauté until onions are translucent, about 4 minutes. Add corn kernels and sauté until cooked through, about 6 minutes. Stir in ground nutmeg. Season to taste with salt and pepper. Cool.
