"Coleslaw is one of my husband's favorite side dishes," says Shirley Glaab from Hattiesburg, Mississippi. "We love this version because it's not as sweet as other slaws, but it's very colorful and the ingredients always make our mouths water."

1-1/2 cups shredded cabbage
2 tablespoons chopped sweet red pepper
1 tablespoon minced fresh parsley
1 tablespoon chopped green onion
3 tablespoons cider vinegar
1 tablespoon water
1-1/2 teaspoons sugar
1 teaspoon Dijon mustard
1 teaspoon olive oil
1/4 teaspoon dried basil
1/4 teaspoon coarsely ground pepper
1/8 teaspoon garlic salt

Steps:

  • In a small bowl, combine the cabbage, red pepper, parsley and onion. In another bowl, combine the remaining ingredients; pour over cabbage mixture and toss to coat. Cover and refrigerate until chilled. Toss before serving. Serve with a slotted spoon.

2 tbsp vinegar
1 tsp salt

Steps:

  • In a large bowl, combine the diced tomatoes, cucumbers, cabbage, and scallions. Set aside.
  • To make the dressing whisk together all the dressing ingredients until smooth.
  • Pour dressing over the slaw and toss everything together. Keep refrigerated and stir before serving.

With a generous amount of acidity from apple cider vinegar and Dijon mustard, our coleslaw recipe is anything but dull. Instead, it is packed with fresh, lively flavors that wake up anything you serve with it. Unlike some of the more traditional or popular recipes for coleslaw, we skip the addition of sugar to our coleslaw dressing. Try this as a topping to sandwiches, served next to ultra-savory meats, like braised beef or pork. Or, mound some on top of your next hot dog or hamburger. Sugar: We find that the cabbage and carrots are sweet enough. If you disagree, add a teaspoon or two of sugar (or honey) to the dressing before mixing with the cabbage and carrot.

1 medium cabbage (about 2 pounds), outer leaves removed
3 medium carrots, peeled and shredded
1/2 cup loosely packed fresh parsley leaves, coarsely chopped
1 cup (170 grams) mayonnaise, try our homemade mayonnaise recipe
2 tablespoons apple cider vinegar or more to taste
2 tablespoons Dijon mustard or coarse ground mustard
1 teaspoon celery seeds
1/4 teaspoon fine sea salt or more to taste
1/4 teaspoon fresh ground black pepper or more to taste
1 to 2 teaspoons sugar or honey, optional, add for a sweeter coleslaw

Steps:

  • Quarter the cabbage through the core, and then cut out the core. Cut each quarter crosswise in half and finely shred. Place the shredded cabbage in a very large bowl (you will have 6 to 8 cups).
  • Add the shredded carrot and parsley to the cabbage and toss to mix.
  • In a separate bowl, stir the mayonnaise, vinegar, mustard, celery seeds, salt, and pepper together. Taste for acidity and seasoning, then adjust as desired. If the dressing tastes too tart and you prefer a sweeter coleslaw, stir in the optional sugar.
  • Pour two-thirds of the dressing over the cabbage and carrot then mix well. (Clean hands are the quickest tool).
  • If the coleslaw seems dry, add a little more of the dressing. Eat right away or let it sit in the refrigerator for about an hour to let the flavors mingle and the cabbage to soften.

My mother would make this slaw in the summertime when the fresh tomatoes were in abundance. I call it "sloppy slaw" as it has a bit more juice than normal, but that's what I like. I don't like a dry coleslaw. Using the other fresh garden ingredients makes for a wonderful side dish.

1 - 2 heads young, tender cabbage, chopped into small pieces with a knife
1 - 2 carrots, grated
1/2 red onion or 2 - 3 green onions with tops
1 med. - large ripened tomato, chopped
dressing for slaw:
1/2 cup mayo with olive oil
1/4 cup pickle juice (dill or sweet)
1 package sweetner or 1 tablespoon sugar
mccormick's salad supreme
pinch of red cayenne pepper
salt and pepper to taste

Steps:

  • 1. Cut cabbage into 4 wedges. Clean and wash cabbage, removing the outside leaves and cutting out the core. Chop cabbage with knife into small pieces. Grate onion and carrots on medium size of box grater. Mix these ingredients in a large mixing bowl. Peel tomato and remove seeds and squeeze tomato to remove as much of the juice as you can. Chop tomato and add to cabbage mixture. Mix all dressing ingredients and pour over cabbage mixture, mixing well. Top with Salad Supreme. Place in container with a lid and chill in refrigerator for several hours. When ready to serve, you may want to pour off excess liquid, if any. NOTE: Salt will bring out the liquid from the vegetables and the slaw will pack down about 1/2.
  • 2. Clone of McCormick's Salad Supreme Seasoning from Everyday Cheapskate: 1 1/2 tsps. sesame seeds 1 tsp paprika 3/4 tsp. sea salt 1/2 tsp.celery seeds 1/2 tsp. poppy seeds 1/4 tsp garlic powder 1/4 coarse ground black pepper 1 pinch cayenne pepper 2 tablespoons grate Romano cheese Mix all together and keep in a shaker. Great in pasta salad, tossed salads or on burgers before cooking.

1/2 large white cabbage ((or 1 small white cabbage))
2 medium carrots (peeled)
1/4 brown onion (peeled)
1 cup (240g) mayonnaise
3 tbsp sour cream
1 tbsp white wine vinegar
1/2 tsp salt
2 tsp sugar (granulated or superfine)
1/8 tsp mustard powder
Pinch white pepper

Steps:

  • Julienne the white cabbage and the 2 carrots using a mandoline, so you have fine, even, strips. Place in a large bowl.
  • Carefully grate (shred) the quarter of an onion using a grater and add the onion to the bowl.
  • Add the cup (240g) of mayonnaise, 3 tbsp sour cream, 1 tbsp white wine vinegar, 1/2 tsp salt, 2 tsp sugar, 1/8 tsp mustard powder and the pinch of white pepper.
  • Stir everything together until thoroughly combined.
  • Serve immediately, or cover and refrigerate until needed (up to 2-3 days).

1 tsp barbecue seasoning
1 tsp hot sauce (adjust to taste)

Steps:

  • In a medium size mixing bowl, mix together cabbage, onion and carrot.
  • In a separate bowl whisk together ketchup, vinegar, sugar, pepper flakes, salt, barbecue seasoning and hot sauce.
  • Pour dressing over slaw, mix well. Place into an airtight container and chill for several hours or overnight.
