BROCCOLI FRITTATA WITH TOMATO TOAST AND BANANA MILK



Broccoli Frittata with Tomato Toast and Banana Milk image

This stove-top frittata is quick and easy and the flavored milk is a clever way to include fruit into your breakfast.

Number Of Ingredients 11

2 ripe bananas, sliced
3 cups plus 1/3 cup reduced-fat milk
2 cups broccoli florets
5 slices whole wheat bread
1/3 cup shredded low-fat Swiss
1/4 cup fresh basil leaves
2 large eggs plus 2 large egg whites
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 cloves garlic, halved
1 ripe tomato, cut into 4 slices

Steps:

  • Divide the sliced bananas among the four glasses, smash slightly and fill each glass with 3/4 cup of milk. Refrigerate until ready to serve.
  • Combine the broccoli and 1 tablespoon water in a microwave-safe bowl. Cover with plastic wrap and microwave until crisp-tender, about 2 minutes. Let rest for a few minutes, carefully remove the plastic and drain.
  • Tear up one slice of bread into small pieces and soak in the remaining 1/3 cup milk in a large bowl until soft, about 2 minutes. Add the broccoli, cheese, basil, eggs, 1/2 teaspoon salt and some pepper. Heat half of the oil in a medium nonstick pan over medium heat. Pour in the egg mixture and cook until the bottom begins to set, about 2 minutes. Adjust the heat to medium-low, cover and continue to cook until the middle is set, 6 to 7 minutes more.
  • Meanwhile, toast the remaining bread, then rub each slice with garlic and top with a slice of tomato. Drizzle the toast with the remaining 1/2 tablespoon oil.
  • Cut the frittata into four slices and divide among four plates along with the tomato toast. Serve with the banana milk.

1 tablespoon extra-virgin olive oil
1 bunch scallions, thinly sliced (1 cup)
2 cups grape tomatoes
Coarse salt and ground pepper
8 large eggs, lightly beaten
1/2 cup grated cheddar (1 1/2 ounces)

Steps:

  • Preheat oven to 425 degrees. In a 10-inch ovenproof nonstick skillet, heat oil over medium-high. Add scallions and tomatoes, season with salt and pepper, and cook about 5 minutes.
  • Add eggs and cheese, season with salt and pepper, and stir to combine. Cook, undisturbed, until edges are set, about 2 minutes. Transfer skillet to oven and bake until top of frittata is just set, 10 to 13 minutes.
  • Invert or slide frittata onto a plate and cut into 6 wedges. Serve warm or at room temperature.

500 g broccoli, cut into flowerets
2 teaspoons nut oil or 2 teaspoons seed oil
2 onions, finely sliced
3 slices lean bacon, trimmed of all fat and chopped
2 cloves garlic, finely chopped
2 tomatoes, chopped
8 eggs
seasoning (optional)

Steps:

  • Heat oil in large frying pan (a cast-iron or ovenproof one is good).
  • Cook onion over medium heat for 2 minutes, add garlic and bacon and cook until onion is soft.
  • Add broccoli and tomato, cook for one minute.
  • Add seasonings (eg. freshly ground black pepper) to taste.
  • Beat eggs in bowl, pour over other ingredients in pan.
  • Cook gently without stirring until base of frittata is cooked and golden.
  • Place frypan under grill until top of frittata is golden brown and firm.
  • Cut into wedges and serve hot or cold.

1 tablespoon extra-virgin olive oil, plus more for serving
1 tablespoon minced garlic
10 ounces frozen broccoli florets
1/3 cup grated sharp white cheddar
Salt and pepper
5 large eggs
Sliced avocado and flaky sea salt, for serving

Steps:

  • In a small ovenproof nonstick skillet, heat oil and minced garlic over medium until fragrant, 1 minute. Stir in broccoli florets; season with salt and pepper. Cook, covered, until broccoli is tender, 4 to 5 minutes.
  • Uncover and continue to cook until liquid has evaporated, 30 seconds. Meanwhile, preheat broiler. Beat eggs with cheddar, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Add egg mixture to skillet, and stir occasionally until large curds form and edges begin to set, about 30 seconds.
  • Transfer skillet to oven and broil until eggs are puffed, golden, and just set, about 2 minutes. Let stand 5 minutes. Serve frittata with sliced avocado, flaky sea salt, and a drizzle of oil.
