- In a large bowl, dissolve yeast in warm water. Add 1 tablespoon oil, salt, sugar, garlic powder, herbs, pepper and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Cover and let rest for 10 minutes. Shape into a 13-in. x 9-in. rectangle; place on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. With fingertips, make several dimples over top of dough., Brush dough with remaining oil; arrange tomatoes over the top. Sprinkle with cheeses. Bake at 400° for 20-25 minutes or until golden brown. Remove to a wire rack. Freeze option: Freeze cooled focaccia squares in freezer containers, separating layers with waxed paper. To use, reheat squares on a baking sheet in a preheated 400° oven until heated through.

- In a large bowl, combine 2 cups flour, yeast, sugar and salt. In a small saucepan, heat the water and 1/4 cup oil to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise for 20 minutes., Preheat oven to 375°. Punch dough down. Press into a greased 13x9-in. baking pan. Cover and let rest 10 minutes., In a small bowl, combine tomatoes, garlic, Italian seasoning and remaining oil. Spread over dough; top with cheese. Bake 25-30 minutes or until golden brown. Place pan on a wire rack. If desired, serve with olive oil and red pepper flakes.

Steps:
- If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat gas or charcoal grill for indirect heat. Coarsely chop grilled peppers. Top focaccia with peppers, cheese and basil.
- Place focaccia over drip pan or over unheated side of gas grill. Cover grill; cook using high heat 10 to 15 minutes or until heated and cheese is melted. Cut into wedges to serve.

A large rectangular focaccia is sliced in half horizontally then stuffed inside with brie slices, peppers and cherry tomatoes, then grilled on the BBQ until the sides are slightly charred. Cut in portions then serve. Dolcelatte, Tallegio or Mozzarella may be used instead of the Brie

Steps:
- Slice the focaccia in half horizontally and brush both exterior sides with the olive oil.
- On the bottom side arrange the brie slices, top with the peppers and cherry tomatoes, top with the basil leaves.
- Press firmly together, wrap in plastic wrap for up to 3 hours ahead.
- To cook: Unwrap the focaccia and lay on the coolest part of your BBQ (raise the grill higher) Cook for about 2 minutes on each side until golden and charred in places and the brie has started to melt. Cut into 6 wedges and serve.
