EASY TOMATO PIE WITH BISQUICK
Easy Tomato Pie recipe tastes like comforting cheesy southern tomato pie but without the work! Just mix and pat in a fluffy Bisquick crust, top with sharp cheddar cheese mayo filling, and layer on fresh tomato slices.

- Place a double layer of paper towels on a baking sheet. Lay fresh tomato slices on top and gently press two more layers of paper towel over the tomatoes. Let stand for at least 30 minutes.
- Preheat oven to 400°F. Meanwhile mix together Bisquick, 1/2 cup shredded cheese, milk, butter, garlic powder, basil, and oregano. Press into a greased pie plate on the bottom and up sides. Store crust in refrigerator until ready to use.
- For filling mix together remaining cheddar cheese, mayonnaise, minced chives, apple cider vinegar, salt and pepper.
- After tomatoes have drained remove crust from refrigerator. Spread on half cheese / mayo filling. Layer drained tomatoes on top, slightly overlapping. Spread remaining cheese / mayo filling on top of tomatoes.
- Bake for 35-40 minutes or until crust has browned and top is bubbly. If desired, finish browning the top by broiling 1-2 minutes. Let stand 15 minutes before slicing.

Continuing my search for a really good tomato bread like I once had on a cruise ship... These aren't quite it, but they're very good nonetheless and are full of flavor!

Steps:
- Prheat oven to 450°F.
- Mix all ingredients in a large bowl. Turn onto surface dusted with baking mix and knead 10 times.
- Drop by spoonfuls onto an ungreased baking sheet.
- Bake 8-10 minutes until golden brown.
- Serve with honey butter, made by combining 1/2 cup soft butter with 1/4 cup honey.

This came from the Indianapolis Star newspaper, where I work. It's great when you want a meatless meal. You could even serve it for brunch.

- 1. Preheat oven to 425 degrees. Line a 9- by 9-inch pan with aluminum foil. Lightly spray with cooking spray.
- 2. Melt butter in microwave. Combine butter, flour and sour cream in a medium bowl. Spread the dough in the prepared pan. Bake 20 minutes.
- 3. While crust bakes, peel tomatoes and slice 1/4 inch thick. Remove crust from oven. Arrange half of tomato slices over crust. Sprinkle with half the salt, pepper, basil, chives and cheese. Repeat the layer.
- 4. Bake 20 minutes at 425 degrees. Let pie sit 5 minutes. Use foil to lift pie from pan. Cut and serve.
THE VERY EASIEST TOMATO PIE EVER (AND IT'S GOOD, TOO!)
Don't want to deal with pastry? Looking for a fast fix? Here you go! Can't get any easier than this. You can also get creative: add bacon crumbles, shallots, spices, buttered breadcrumb topping, vary the cheese, etc. But you gotta have good tomatoes. Although, come to think of it, very well-drained canned diced (fire-roasted?) tomatoes might work in the off-season. Never tried it. The recipe came from another website, don't remember which one.

Steps:
- Grease a 9" pie plate and place the biscuit dough evenly in the plate.
- Stretch and spread the biscuits until they touch and form a continuous crust.
- Slice the tomatoes and spread over the crust. Sprinkle with basil, salt and pepper.
- Spread the mozzarella evenly over this.
- Bake in a 375 degrees F. oven for ten minutes.
- Turn 180 degrees and bake another ten minutes, or until crust is lightly browned.

- Center the oven rack, and preheat the oven to 375°F. Press the biscuits against the bottom and sides of the prepared pie plate to form a crust. Then layer the tomato slices over the crust, and give them a sprinkling of salt and pepper. Scatter the basil over the tomatoes.
- Blend the mayonnaise and cheese in a small bowl. Spoon the mixture mixture over the pie, and spread it out with the back of a spoon.
- Bake in the preheated oven until the biscuits color and the topping puffs -- about 30 minutes. Cool on a wire rack until juices recede -- 30 minutes. Serve warm or at room temperature.
