TOMATO-BERRY SKEWERS



Tomato-Berry Skewers image

Number Of Ingredients 6

12 strawberries, hulled and halved
12 cherry tomatoes, halved
1 tablespoon balsamic vinegar
1 teaspoon extra-virgin olive oil
Salt and pepper
1 tablespoon basil leaves, torn

Steps:

  • 1. In a large bowl, toss the strawberries, tomatoes, vinegar, and oil. Season to taste with salt and pepper.
  • 2. Alternately skewer the strawberry and tomato halves on 12 appetizer toothpicks or mini skewers. Drizzle with the juices from the bowl and sprinkle basil leaves on top.
  • 3. Wipe up any oil drips or juices from the counter with Clorox® Disinfecting Wipes*.
  • *Use as directed. For surfaces that may come in contact with food, a potable water rinse is required.

4 tablespoons olive oil
2 tablespoons jarred pesto
2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

  • Toss tomatoes, mozzarella cheese, olive oil, basil, salt, and pepper together in a bowl until well coated. Skewer one tomato and one piece of mozzarella cheese on each toothpick.
