BACON, EGG, AND AVOCADO BURGERS



Bacon, Egg, and Avocado Burgers image

If you're craving a really juicy, delicious burger that's packed with flavor and textures then this egg-topped burger is the burger for you! When you bite into this burger the burst of the egg yolk and the creaminess of the avocado with the crunchiness of the bacon sends this burger over the edge.

3 tablespoons salted butter, softened
4 hamburger buns, split
8 slices thick-cut bacon
1 ½ pounds lean ground beef
2 tablespoons Worcestershire sauce
1 tablespoon steak seasoning
4 slices Cheddar cheese
4 large eggs
4 large lettuce leaves
½ red onion, thinly sliced
2 avocados - peeled, pitted, and thinly sliced

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Butter each half of hamburger buns.
  • Place bacon in a heavy skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels. Set the skillet aside, reserving grease.
  • Mix ground beef, Worcestershire sauce, and steak seasoning together in a large bowl; do not overmix. Form into 4 patties. Make a thumbprint in the middle of each patty to keep it from shrinking as it cooks.
  • Grill patties on the preheated grill until preferred doneness, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top each burger with 2 slices bacon and a Cheddar cheese slice; close the grill lid until cheese is melted, about 1 minute. Remove patties from the grill.
  • Place buns on the grill, buttered-side down, and cook until browned, about 1 minute. Remove from the grill. Place 1 patty on the bottom half of each bun.
  • Reheat the bacon grease in the skillet over medium-high heat. Crack eggs into the hot skillet and fry until whites are cooked but yolk is still runny, about 4 minutes. Immediately place 1 egg on top of each patty. Top with lettuce, onion, avocado, and remaining buns.

TZATZIKI SAUCE:
1/2 cup plain yogurt
1/2 medium cucumber, peeled, seeded and finely chopped
1/2 cup sour cream
1 tablespoon crumbled feta cheese
1-1/2 teaspoons olive oil
1 garlic clove, minced
1 teaspoon red wine vinegar
3 fresh mint leaves, chopped
BUNS:
1/4 cup butter, softened
1 teaspoon dried basil
1 garlic clove, minced
6 hamburger buns, split
BURGERS:
1 medium onion, finely chopped
1/4 cup crumbled feta cheese
6 garlic cloves, minced
1 tablespoon dried marjoram
1 tablespoon dried rosemary, crushed
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
2 pounds ground lamb
TOPPINGS:
2 medium ripe avocados, peeled and sliced
Lettuce leaves, red onion slices and/or tomato slices, optional

Steps:

  • Line a strainer with four layers of cheesecloth or one coffee filter and place over a bowl. Place yogurt in strainer; cover yogurt with edges of cheesecloth. Refrigerate for 2 hours., Remove yogurt from cheesecloth and discard liquid from bowl. Pat cucumber dry with paper towels. In a small bowl, combine the yogurt, cucumber and remaining sauce ingredients. Cover and chill until serving. , In a small bowl, combine the butter, basil and garlic. Spread over cut sides of bun; set aside., For burgers, in a large bowl, combine the first seven ingredients. Crumble lamb over mixture and mix well. Shape into six patties., Grill patties, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear., Grill buns, cut sides down, over medium heat for 30-60 seconds or until lightly toasted. Serve burgers on buns with avocado, tzatziki sauce and, if desired, lettuce, onion and tomato.

8 slices bacon
1 pound ground beef chuck or sirloin
1 teaspoon Worcestershire sauce
1 or 2 dashes Tabasco sauce
1/4 teaspoon dried thyme leaves
Salt and freshly ground black pepper, to taste
Vegetable oil, for grilling
4 slices Swiss cheese
4 hamburger buns, toasted, for serving
Thinly sliced ripe tomato, for garnish
Thinly sliced red onion, for garnish
Sliced ripe avocado, for garnish
Boston lettuce leaves, for garnish

Steps:

  • 1. If you will be grilling the burgers, preheat a barbecue grill to medium-high.
  • 2. While the grill is heating up, cook the bacon on the stovetop in a large skillet over medium-low heat until it is just crisp, 6 to 7 minutes. Transfer the bacon to a plate lined with paper towels and set it aside to drain. (If you prefer to panfry the burgers, reserve 2 tablespoons of the bacon fat in the skillet.)
  • 3. Place the beef, Worcestershire, Tabasco, thyme, and salt and pepper in a bowl, and toss lightly with a fork to combine. Form the mixture into 4 patties, each about 3 inches in diameter and 1 inch thick.
  • 4. When you are ready to grill the burgers, oil the grill grate well. Add the burgers and grill for about 3 minutes for rare, 4 minutes for medium-rare meat. Turn them over and grill for another 3 or 4 minutes, topping the burgers with the cheese in the last minute of cooking. (Or panfry the burgers in the hot bacon fat over medium heat for 3 minutes per side for rare meat, adding the cheese as described.)
  • 5. Place the burgers on the toasted buns, and top them with the bacon, tomato, onion, avocado, and lettuce. Cover with the tops of the buns and serve immediately.

4 large tomatoes
1 pound grass fed organic ground beef
1/4 teaspoon ground black pepper
1/2 plus 1/4 teaspoons fine grain sea salt
1 teaspoon chili powder
1 ripe avocado, divided
2 tablespoons Greek yogurt
1 tablespoon mayonnaise
2 teaspoons fresh lime juice
1/4 teaspoon ground cumin
Handful alfalfa sprouts

Steps:

  • Place half of the avocado in a bowl and mash with a fork until almost smooth. Add yogurt, mayo, lime juice and cumin and stir to combine. Dice remaining half of the avocado and add it alongside ¼ teaspoon salt. Stir gently to combine. Set aside. In a bowl season ground beef with ½ teaspoon of salt, black pepper and chili powder and mix well. Preheat grill (or grill pan) to medium-high heat. Grill patties 3 minutes on each side or until desired degree of doneness. In the meantime, lightly grease with olive oil a medium non-stick pan/skillet and heat over medium-high heat. Cook halved tomatoes face down for 2 to 3 minutes, until they begin to brown. To assemble burgers, place a large pinch of sprouts on the bottom part of each tomato, top with a beef patty, about 2 tablespoons of avocado sauce and finish with the other half of each tomato.
