TOMATO-ALFREDO BAKED ZITI



Tomato-Alfredo Baked Ziti image

Tomato and Alfredo sauces make this easy ground beef-and-pasta bake doubly delicious - and it all comes together in just 30 minutes.

12 oz uncooked ziti pasta (about 4 cups)
1 lb lean (at least 80%) ground beef
1 cup chopped onion
4 cloves garlic, finely chopped
1 1/2 teaspoons Italian herb seasoning
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 can (28 oz) Muir Glen™ Organic Crushed Tomatoes with Basil
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese (4 oz)
1 jar (15 oz) creamy Alfredo pasta sauce

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch skillet, cook beef and onion over medium heat 8 to 9 minutes, stirring occasionally, until brown; add garlic, and cook about 1 minute or until fragrant. Drain; return meat mixture to skillet. Over medium-low heat, stir in Italian seasoning, pepper flakes and salt. Add tomatoes, cooked pasta and 1/2 cup of the Parmesan cheese; cook 2 to 3 minutes, stirring constantly, until completely blended and heated through. Spoon mixture into baking dish; sprinkle with mozzarella cheese. Top with Alfredo sauce and remaining 1/2 cup shredded Parmesan cheese.
  • Bake 30 to 35 minutes or until bubbly and cheese is melted.

8 ounces uncooked ziti or small tube pasta
1 can (14-1/2 ounces) Italian stewed tomatoes, undrained
1/2 cup heavy whipping cream
1/4 cup chopped fresh basil or 1-1/2 teaspoons dried basil
1/2 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, bring the tomatoes to a boil. Cook until most of the liquid is evaporated, about 5 minutes. Reduce heat., Stir in the cream and basil; heat through (do not boil). Drain pasta. Add pasta and Parmesan cheese to sauce; toss to coat.

A luscious sauce with a Mediterranean flair. When creating this, I used Smart Balance (for butter), whole milk, and served it with Trader Joe's alphabet pasta.

4 tablespoons butter
3 tablespoons all-purpose flour
1/2 cup milk
1/4 cup cream cheese
1/4 cup sun-dried tomato packed in oil, chopped
10 ounces frozen chopped spinach
1 (14 ounce) can artichoke hearts, quartered
1/4 cup parmesan cheese, grated
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
salt, to taste
pasta, cooked (shells or penne)

Steps:

  • Melt butter in large skillet over medium-low heat, and whisk in flour to form a paste.
  • Gradually stir in milk until well combined and somewhat thickened.
  • Add cream cheese and stir until melted.
  • Increase heat to medium, add sun-dried tomatoes, frozen spinach, artichoke hearts, garlic powder and pepper.
  • Stir frequently for several minutes until hot and thickened. (if it seems too thick, add more milk).
  • Reduce heat to low, stir in parmesan and cook (stirring frequently) for a minute or two more.
  • Salt to taste and stir into individual bowls of pasta.

1 (8 ounce) box fettuccine
1 tablespoon butter
1/2 medium red onion
1 tablespoon garlic, minced
1/4 cup milk
1/4 cup cherry tomatoes, halved
2 tablespoons basil, refrigerated kind
1 1/2 teaspoons cayenne pepper
parmesan cheese, to your personal taste

Steps:

  • Boil the noodles in a pot of water.
  • In a medium-sized saucepan, saute the garlic, onions, and cherry tomatoes in the butter on medium heat.
  • When the ingredients are sauteed, add the milk, basil, cayenne pepper, and Parmesan cheese.
  • Stir the sauce and turn down to low heat. Smash the tomatoes as you stir the sauce to get the juice in the sauce.
  • Keep the sauce on low heat, until the noodles are done boiling. If the noodles are done before the sauce, strain them, add them to the sauce, and stir.
  • Top with more cheese and cayenne pepper if desired.
  • Enjoy!

This is a decadent version of chicken Alfredo. It has three different types of cheese, bacon, and sun-dried tomatoes. It does use a few pots and pans, but the end result is worth it.

½ pound penne pasta
6 ounces bacon, chopped
½ pound boneless chicken thighs, cut into 1-inch pieces
½ teaspoon garlic salt
1 teaspoon cantanzaro herbs (from Savory Spice Shop®)
¼ cup butter
5 tablespoons all-purpose flour
2 cups milk
½ cup grated fontina cheese
¼ cup grated Parmesan cheese
¼ cup provolone cheese
1 ¾ ounces chopped sun-dried tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and desired crispness is reached, 6 to 10 minutes. Drain bacon on paper towels.
  • Add chopped chicken thighs, garlic salt, and cantanzaro herbs to skillet and cook until chicken is no longer pink in the center and the juices run clear, about 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken to a plate.
  • Melt butter in a saucepan over medium heat until a pinch of flour sprinkled into the oil just begins to bubble. Whisk in flour to form a thick paste the consistency of cake frosting. Slowly add in milk, stirring constantly. Allow mixture to thicken, while stirring. Mix in fontina cheese, Parmesan, provolone, and sun-dried tomatoes. Stir to combine. Add drained pasta to sauce and mix well. Stir in cooked chicken and bacon.

  • As the pasta is cooking, prepare the sauce. Melt the butter in a large pan over medium heat, add the grated garlic and chopped basil and cook for 1 minute. Pour in the cream and tomato sauce and stir until blended and combined. Sprinkle in the corn starch and whisk so it dissipates into the sauce and break up any clumps. Add the Parmesan cheese and the seasonings: nutmeg, salt, and pepper. Stir to combine. Simmer until the pasta is done cooking.
  • To serve, sprinkle with additional Parmesan and additional chopped basil leaves. As always with a cream sauce, if it gets too thick as the pasta is cooking add 1/2 ladles of the boiling pasta water to thin it out. If your sauce gets too think and watery, add more corn starch to thicken it it. If your pasta is done cooking before the sauce, reserve some of the pasta water in case you need to add it later.
