This classic chicken enchilada casserole recipe is made with seasoned chicken, black beans, tomatillo salsa and plenty of poblano peppers.

12 ounces chicken
3-4 tablespoons olive oil
1 tablespoon taco seasoning (- I like to use a chili powder blend!)
6 ounces Mexican style beer (- OR! Use some chicken broth instead)
1 small onion (chopped)
2 poblano peppers (chopped)
1-2 jalapeno peppers (chopped (optional for more heat))
4 cloves garlic (minced)
Salt and pepper to taste
1 teaspoon ground cumin
1 teaspoon dried oregano
2-3 cups Tomatillo Salsa
1 can black beans (15 ounces)
8 corn tortillas (You can use flour tortillas as well)
1 cup shredded white cheddar cheese ((or use Monterrey Jack or Pepper Jack))
Fresh chopped cilantro for serving

Steps:

  • For the chicken, drizzle with olive oil and sprinkle with the taco seasonings and salt and pepper.
  • Heat a large oven-safe skillet or pan to medium heat. Add the chicken and sear each side about 2 minutes each. Add beer or chicken broth and reduce heat. Simmer about 15-20 minutes, or until the chicken is cooked through and you can shred it with a fork. Remove from heat and add to a mixing bowl. Shred the chicken up with a couple forks.
  • Add oil to the same skillet and heat.
  • Add onions and peppers. Cook about 5 minutes to soften.
  • Add garlic and stir. Cook 1 more minute.
  • Add salt and pepper to taste, cumin and oregano. Stir.
  • Add the cooked seasoned vegetables to the mixing bowl with the cooked chicken, then add the tomatillo salsa and black beans. Stir to incorporate.
  • In the same pan, spoon some of the chicken mixture onto the bottom of the pan.
  • Layer on half of the tortillas, then half of the remaining chicken mixture and the shredded cheese. Repeat with the remaining tortillas, then remaining chicken mixture, then the remaining cheese.
  • Set oven to broil.
  • Set the skillet in the middle of the oven and broil for about 5 minutes, or until the cheese is nicely melted. You can also bake it at 350 degrees for 15 minutes, if preferred.
  • Sprinkle with chopped cilantro and serve!

Steps:

1 white onion, peeled, sliced, quartered or whole
4 garlic cloves
2 jalapenos
2 teaspoons ground cumin
1 teaspoon salt
1/2 cup chopped cilantro leaves
1/2 lime, juiced
Extra-virgin olive oil
1/2 medium onion, diced
3 garlic cloves, chopped
1 1/2 teaspoon ground cumin
1/4 cup all-purpose flour
2 cups chicken stock, store-bought
Chopped cilantro leaves
1 deli roasted chicken (about 3 pounds), boned, meat shredded
Salt
Freshly ground black pepper
10 large flour tortillas
1/2 pound Monterey Jack cheese, shredded
2 cups sour cream
Chopped tomatoes and cilantro leaves, for garnish
Spicy Black Beans, recipe follows
Yellow Rice, recipe follows
Guacamole, optional
2 cups (about 1 pound) dried black beans, picked over, soaked overnight
3 tablespoons extra-virgin olive oil
1/2 medium onion, diced
1 jalapeno pepper, chopped
2 cloves garlic, chopped
1 bay leaf
Kosher salt
freshly ground black pepper
2 cups long-grain rice
4 cups water
2 cloves garlic, smashed
1 tablespoon turmeric
1 teaspoon kosher salt
1 bay leaf

Steps:

  • Preheat oven to 400 degrees F.
  • For the salsa:
  • On a baking tray, roast tomatillos, onion, garlic and jalapenos for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky.
  • For the enchiladas:
  • Meanwhile heat a 2 count of olive oil in a medium saucepan over medium heat. Add the onion and cook until soft and caramelized - this should take 5 to 7 minutes. Add the garlic and cumin then cook for a further minute. Sprinkle on the flour and stir to ensure the flour doesn't burn then gradually add the chicken stock to make a veloute. Continue stirring over a low simmer until the flour cooks and the liquid thickens. Turn off the heat, add half of the roasted tomatillo chile salsa, some additional fresh chopped cilantro and fold in the shredded chicken meat. Season, to taste, with salt and pepper.
  • Change the temperature of the oven to 350 degrees F and begin assembling the dish. Take a large flameproof baking dish and smear the bottom with some of the reserved tomatillo salsa. Now take the flour tortillas and briefly flash them over the stove-top flame (or put them briefly under the broiler if using an electric stove). Using a shallow bowl, coat each tortilla lightly with the reserved salsa mix. Put a scoop of the shredded chicken-enchilada mix on top of the tortilla followed by a sprinkle of the shredded cheese. Fold the tortilla over the filling and roll like a cigar to enclose it. Using a spatula place the tortillas in the baking dish and continue to do the same with all the tortillas. Finally pour over some more of the salsa and top with the remaining shredded cheese. Bake uncovered for about 30 minutes until bubbly and cracked on top. Garnish, cilantro and tomato.
  • Serve hot with Spicy Black Beans and Yellow Rice, the remaining tomatillo salsa, sour cream and fresh guacamole, if desired.
  • In a large pot, soak beans overnight covered in water by 2 inches. Drain and set aside.
  • In the same pot, heat the olive oil. Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes. Add the beans and cover with water by about 1-inch. Bring to a boil, reduce the heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender. Remove the bay leaf and discard. Taste the beans and season with salt and pepper.
  • Put all the ingredients into a heavy-bottomed pot, stir well, and bring to a boil over medium-high heat. Reduce the heat to a simmer, cover, and cook over low heat until the rice has absorbed the water, about 15 to 20 minutes. Remove from the heat and let sit, covered, for 5 minutes. Discard the garlic and bay leaf, fluff with a fork, and serve.

2 pounds boneless, skinless chicken ((cut into bite size pieces))
salt ((to taste))
pepper ((to taste))
1/2 teaspoon ground cumin
1/2 cup chicken stock
2 cups tomatillo enchilada sauce ((divided, freshly made or store bought salsa verde will work))
18 corn tortillas
2 cups Monterey Jack cheese ((shredded, divided))

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a large skillet over medium-high. Season the chicken with salt, pepper and cumin and add to the pan.
  • Cook until the chicken is done through and no longer pink in the center, about 5-7 minutes.
  • Stir in the chicken stock and 1/2 cup of the tomatillo sauce. Cook over medium for just a minute or two to blend and warm everything through.
  • Place a layer of corn tortillas into the bottom of a 9x13 baking dish. Top with half of the chicken mixture, drizzle 1/4 cup of the tomatillo sauce over the chicken, and top with 1/2 cup of the cheese.
  • Add a second layer and top with the remaining chicken and another 1/4 cup of tomatillo sauce and 1/2 cup of cheese.
  • Add a final layer of tortillas to the top of the casserole. Top with the remaining tomatillo sauce and cheese.
  • Cover with foil and transfer the baking dish bake to the oven. Cook for 15 minutes, then remove the foil and cook an additional 5-10 minutes or until everything is heated through and the cheese on top is hot and melted.
  • Serve topped with fresh cilantro, sour cream, jalapeño pepper slices, and/or avocado, if desired.

1 tablespoon olive oil
1 medium white onion, peeled and diced
1 large poblano or green bell pepper, cored and diced
2 (15 ounce) cans beans, rinsed and drained (I used pinto)
1 (8 ounce) can whole kernel corn, drained
2 handfuls fresh baby spinach
3 cups (about 1.5 pounds) shredded or diced cooked chicken
3 cups green enchilada sauce (or you could substitute salsa verde)
12 corn tortillas, halved
3 cups shredded Monterrey Jack or Mexican blend cheese
toppings: chopped fresh cilantro, diced red onion, thinly-sliced green onion and/or diced avocado

Steps:

  • Heat oven to 375°F. Mist a 9×13-inch baking dish with cooking spray; set aside.
  • Heat oil in a large sauté pan over medium-high heat. Add onion and pepper and sauté for 6-7 minutes, or until softened. Stir in the beans, corn, spinach, chicken, and 2 cups enchilada sauce, and stir until evenly combined. Remove from heat and set aside.
  • Pour about 1/2 cup of the remaining enchilada sauce in the baking dish, and spread until the bottom of the dish is evenly coated. Top with a layer of about 8 tortilla halves, so that the entire dish is covered. Top evenly with 1/3 of the chicken mixture, followed by 1/3 of the cheese. 1 cup Kroger low-fat sour cream
18 small Kroger flour or white corn tortillas
1/2 pound shredded deli chicken meat
2 cups Kroger pre-diced butternut squash
1 16- ounce can Simply Organic black beans (, rinsed and drained)
4 cups shredded cheese (, such as a blend of Monterey Jack and cheddar cheeses)
1 3- ounce can Kroger sliced olives (, drained)
3 green onions (, chopped)
1/3 cup chopped fresh cilantro
Sour cream (, sliced avocado and pickled sweet and hot jalapeño peppers)

Steps:

  • Preheat the oven to 400 degrees F.
  • Spray a 9 X 11 inch baking pan with cooking spray. In a large bowl, mix the tomatillo salsa verde with the sour cream. Spread 1 cup of the sauce on the bottom of the pan. One batch Homemade Green Enchilada Sauce
1 lb. boneless (skinless chicken breasts)
6 taco size corn tortillas (or your favorite)
1 1/2 cups grated Mexican cheese blend
Greek yogurt or sour cream (for garnish)
1 cup cherry tomatoes (coarsely chopped)
1/4 cup red onion (finely chopped)
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
salt and pepper (to taste)

Steps:

  • Season the chicken breasts with salt and pepper, and place them in a slow cooker. Pour the sauce over the chicken, and cook on low 3-4 hours, or until the chicken is no longer pink and shreds very easily. Remove from the slow cooker and shred. Place the chicken back in the slow cooker and mix thoroughly with the verde sauce.
  • Preheat the oven to 350 degrees. Grease an 8x8" square baking dish with cooking spray. Place just enough of the chicken verde mixture on the bottom of the baking dish to cover.   • Bake for 30-35 minutes or until golden brown and bubbly. Let stand for 10 minutes.
  • Place the cherry tomatoes, red onion, lime juice, cilantro, and salt and pepper in a small bowl. Let stand at room temperature to let the flavors marry. Top the enchilada bake with a dollop of Greek yogurt and salsa. Enjoy!

6 -8 tomatillos
1 jalapeno (2 if you prefer spicy)
1 lime
1 garlic clove
1 cup fat-free cottage cheese or 1 cup sour cream
fresh cilantro
1 chicken breast, cooked
9 -12 corn tortillas
1 cup low-fat jalapeno monterey jack cheese
1/4 cup sliced jalapeno (optional)

Steps:

  • Preheat over to 350 degrees.
  • -Unpeel the tomatillos and rinse them in the sink. Cut them into quarters and throw them into a food processor (a blender can also be used).
  • -Add the sliced jalapeno, garlic, as well as the squeezed lime and cilantro.
  • -Add a few pinches of fresh ground salt and pepper and run food processor until all ingredients are blended together.
  • -Pour mixture into a sauce pan over low heat. Let simmer for 10 minutes to bring out the taste in the tomatillos. They should slowly change from a bright green to paler shade.
  • As the verde is simmering, you can start to get the rest of your ingredients ready for the casserole.
  • -Cut up your cooked chicken breast and put it into your food processor. Course a few times until the chicken is shredded. Should yield just over a cup. Put into a bowl and put to the side.
  • -Grate the jalapeno jack. Pending on your taste, a 1/2 cup - cup will do. Put into another bowl and to the side.
  • I prefer a round pie dish, though a rectangular casserole dish can be substituted, as well.
  • -Spray your dish with a non-stick spray and in the bottom, line with 3 corn tortillas and try to cover as much as the dish as possible though there will be overlap, as well as uncovered corners.
  • The Tomatillo Verde sauce should now be a pale shade of green. Add the cottage cheese or sour cream and stir until well-blended. Leave on the heat for another 1-2 min stirring regularly.
  • -With a spoon scoop onto the corn tortillas until covered. Add a handful of chicken and a handful of cheese until covered. Add a few sliced jalapenos for taste.
  • -Repeat 3 more corn tortillas on top of the first layer; sauce, chicken and cheese.
  • -You should finish the dish with 3 tortillas on top and enough sauce to drizzle over so they don't burn. I also like to finish with a sprinkling of cheese and a few jalapenos for garnish.
  • -Put in oven for 30-35 minutes. Garnish with a sprinkling of fresh cilantro and a dollop of sour cream. Cut into pie slices and serve.

  • In 10-inch nonstick skillet, heat the oil over medium-high heat. Cook and stir the onion 3 minutes or until slightly tender; stir in the garlic and jalapenos. Cook and stir 3 to 4 minutes longer or until the vegetables are tender.

  • SAUCE: Preheat the oven to 425 degrees. Place the tomatillos and jalapeño peppers on a baking sheet. Drizzle with a little bit of olive oil. Wrap the garlic cloves up in a small piece of foil, drizzling the with a bit of oil as well before you wrap it up. Place the foil garlic packet on the baking sheet with the tomatillos. Roast for 15 minutes – stir once to prevent burning, and roast for another 15 minutes. Unwrap the foil and transfer the roasted garlic, tomatillos, and jalapeños to a food processor. Add the cilantro and green onions. Pulse until mostly smooth. Transfer to a bowl and stir in the broth, sour cream, and oil.
  • CHICKEN: While the sauce is roasting, bring a large pot of water to boil. Add the chicken, turn heat off, and cover tightly. Let rest for 30 minutes. This will poach the chicken – it should be cooked by the time the sauce is done. When it’s done, shred the chicken and reserve the water.
  • ASSEMBLE: Dip a tortilla in the hot water from step two until it’s very soft. Lay it on the bottom of a greased 9-inch square baking dish.   • If your tortillas are soft and pliable you can skip this step. Heat a skillet (preferably cast iron) over medium high heat. Place a tortilla in the skillet, pressing it against the pan with a spatula, for about 10 seconds per side. Transfer warm tortilla to a clean dish towel and fold towel over it to keep it warm. Repeat with all of the tortillas, continuing to stack them inside the dish towel.
  • Put 1/4 cup of the chicken mixture on one end of a tortilla, roll it up tight and place it seam-side down in the baking dish. Repeat with all of the tortillas. Spoon a cup of salsa over the tops of the enchiladas, using the back of a spoon to spread the salsa over all exposed surfaces. Sprinkle grated cheddar cheese on top. Bake for 15 to 20 minutes, until cheese is melted and enchiladas are heated through.
