This authentic Mexican salsa verde has a fabulous flavor. Use it on chicken enchiladas or as a condiment for any dish that needs a little extra zip!

Steps:
- Place tomatillos, onion, garlic, and chile pepper into a saucepan. Season with cilantro, oregano, cumin, and salt; pour in water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the tomatillos are soft, 10 to 15 minutes.
- Using a blender, carefully puree the tomatillos and water in batches until smooth.

Steps:
- Place all of the ingredients into a saucepan set over medium heat. Let them come to a simmer and stir occasionally, letting them cook until it has thickened and achieved a soft and loose jam consistency, about 35 to 40 minutes.
- Don't wait until it has thickened too much, because it thickens considerably as it cools. Once it has cooled down, pour it into a container, cover tightly and refrigerate.
ROASTED TOMATILLO SALSA VERDE

- Preheat the oven to 400
- Peel, rinse and slice the tomatillos in half
- Arrange the tomatillos on a parchment lined baking sheet and roast them for 15 to 20 minutes until they begin to soften
- While the tomatillos are roasting, rough chop the onions, garlic and cilantro
- Once the tomatillos have been roasted and cooled off, add them to a food processor or high speed blender along with the lime juice, onions, garlic and cilantro and blend.

FRESH TOMATILLO SALSA VERDE RECIPE
If you like your salsa hot and sharp, you will enjoy this recipe for a fresh tomatillo salsa verde (green sauce). It is a very easy to make uncooked salsa. The uncooked tomatillos are quite acidic and when you add 4 serrano chiles, seeds and all, your salsa is gonna pack some punch. The flavor stands up well to grilled beef. We love this salsa with carne asada. It's also a great salsa for grilled chicken.

SALSA VERDE: GREEN TOMATILLO SALSA

- Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
- For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
- For the Roasted version:
- Preheat a broiler.
- Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
TOMATILLO TANGERINE JAM VERDE
The familiar salsa verde becomes a delicious jam or spread with the addition of citrus (tangerines and lemons). Looks very much like salsa but has a spreadable consistency and sweet/tangy taste. Great over a little cream cheese on a cracker or as a dip for various breadstuffs, but I'm sure it will find its way into many more dishes.

- Remove fruity pulp from the tangerines. Boil the skins gently until tender enough to pierce with a fork. Cool, then scrape any white pith from the underside of peels. Chop peels coarsely.
- Zest the lemon, squeeze juice, and strain and save it. Need about 1/8 cup. Remove husks from tomatillos, wash sticky sap off them.
- Cook tomatillos with the salt in the 2 cups water until they are soft.
- Put the tangerine pulp, peels, lemon juice and zest in food processor. Add jalapeno, cilantro and tomatillos. Process until mixture resembles salsa consistency and cilantro and peels are finely chopped.
- Put mixture in heavy kettle. Bring to full boil, add the sugar except for 1/4 cup to mix in with the pectin. Stir well and boil 1 minute. Mix pectin with the reserved sugar, and add, along with the butter. Stir well, bring to boil again, boil 1 minute.
- Fill sterilized jars within 1/8" of rim. Clean rims with damp paper towel then add lids. Process in water bath canner 10 minute (check your elevation chart to see what your processing time is based on your location's elevation) Remove from canner, let sit and cool 24 hours. This will firm up overnight. If any jars do not seal, refrigerate jam and use promptly.
- Recipe assumes basic knowledge about canning. Jam as made tested OK with pH strip for safe acidity.

- If you don't have your green chiles and jalapenos prepped, follow these directions for roasting peppers. Arrange the tomatillos, sliced onions and the garlic cloves on a cooking sheet (or two) and set under the broiler until they are a bit charred.
- Once you have all the vegetables prepped, peel the garlic and put it and everything else into a food processor and pulse to make a rough salsa. You're done if you don't want to can your salsa. Kept in a covered container, it will keep a week in the fridge.
- If you are canning, add 1 teaspoon of the Fruit Fresh (citric acid) to each pint jar; the jars should be sterilized beforehand. Pack the salsa into the jars, and use a knife of chopstick to remove as many air pockets as you can find. Leave about 1/2 inch headspace. Seal the jars and process in a boiling water bath for 15 minutes.
- When the jars are ready, lift out of the boiling water and let them rest until their lids plink. Once they've cooled to room temperature, the salsa will keep in the pantry for more than a year.
